GRILLED CORN WITH DILL
I like to peel the husks back and rub ears of sweet corn with delicious dill butter before putting them on the grill. The butter melts over the golden kernels as the corn steams inside the husk. -Jeannie Klugh, Lancaster, Pennsylvania

- Place corn in a stockpot; cover with cold water. Soak 20 minutes; drain. Meanwhile, in a small bowl, beat remaining ingredients until blended., Carefully peel back corn husks to within 1 in. of bottoms; remove silk. Spread corn with butter mixture. Rewrap corn in husks; secure with kitchen string., Grill corn, covered, over medium heat 25-30 minutes or until tender, turning often. Cut string and peel back husks.

GRILLED CORN IN FOIL

Steps:
- Cream 4 Tbsp butter with a fork in a medium bowl.
- Stir in 1/4 tsp salt, pinch of pepper and 1 Tbsp fresh lemon juice and mix until smooth. The lemon juice will seem like it isn't blending, but keep mixing for a couple minutes and it will happen.
- Stir in fresh chopped dill until well incorporated. Keep the prepared butter at room temp until ready to serve corn.
- Preheat Grill to Med/High. Shuck corn. Leave the corn whole or break corn into halves or thirds if serving a large crowd. Wrap each ear of corn with a generous sheet of heavy duty foil making sure all sides are covered. If using regular kitchen-standard foil, double wrap the corn so it doesn't scorch.
- Grill foil-wrapped corn with the lid closed over medium/high heat, rotating the corn every 2 -3 minutes to keep from scorching. Grill for 15-20 minutes. Ours was done at 18 minutes. Once corn is finished grilling, remove foil and brush generously with lemon dill butter while warm.

GRILLED CORN ON THE COB WITH GARLIC WHIP, DILL AND FETA CHEESE
Steps:
- Heat a grill to medium. Remove the corn from the soaking water, shake it dry a few times and place on the grill. Grill, covered, until the kernels are tender, turning a few times, 20 to 30 minutes.
- Meanwhile, combine the garlic, lemon juice and salt in a blender and blend until smooth (add a splash of water if necessary). With the motor running, slowly add the canola oil and the olive oil. Blend until the mixture is emulsified and thickened; then continue blending until a thick, buttery consistency is reached.
- Remove the corn from the grill; pull back the husks, brush with the garlic whip, and sprinkle with feta and dill. Serve immediately.

Steps:
- Carefully pull back each piece of corn husk one by one without detaching it from base.
- Remove corn silk and replace husks one piece at a time over corn kernels.
- Tie string around center of each cob and trim string close to knot.
- Soak corn in sink of cold water for 30 minutes.
- Remove from water and pat dry.
- Grill over medium heat turning occasionally until tender- about 15 minutes.
- Combine spread ingredients and serve with corn.

- Heat up grill.
- Take each sheet of foil and butter with one tbs where corn will be touching.
- Roll it and pinch the ends.
- Put on grill with medium low flame and turn after five minutes to other side.
- Listen for crackling, whereas it might be burning!

GRILLED CORN WITH GARLIC DILL BUTTER
I found this recipe on a card in my local grocery store. I can't eat corn right now, so I haven't tried it yet, but it looks delicious! I thought I'd post it here so I can live vicariously through my Zaar friends. Prep time does not include time to chill herbed butter.

- Stir together first 3 ingredients; cover and chill 8 hours.
- Remove husks from corn.
- Grill corn, uncovered, on a lightly greased grill rack over medium heat about 10 minutes or until corn is tender, turning occasionally.
- Serve with herbed butter.
- Note: If you use soy margarine this is dairy-free!
GRILLED CORN WITH CHILI LIME BUTTER
Chili lime butter adds a delicious finishing touch to grilled corn on the cob. Perfect to accompany any barbecue gathering, large or small. The butter can be flavored one day ahead and then brought to room temperature before serving.

- Place the butter in a small bowl, add the chili powder, lime peel, lime juice, jalapeño and salt and mix well.
- Shape the butter into any form you like, cover and place in the refrigerator until shortly before ready to serve, at which time allow butter to soften.
- Heat grill to medium-high.
- Place corn (in husk) on the grill, rotating the corn so you cook on all sides, for approximately 15 minutes total.
- Remove from grill and cool slightly (so you are able to peel the husk) and peel. Place corn back on grill over the same flame for about 4 minutes, once again rotating the corn for even grill marks.
- Serve the corn immediately with the chili lime butter.
- Cooking option: Place the corn (in the husk) on a plate and microwave for 5 minutes (21/2 minutes per side); when ready to grill, remove the husks and grill over a medium-high flame for about 2 minutes per side.
