EASY FRESH PEAR CAKE



Easy Fresh Pear Cake image

This easy cake is a family favorite. It takes very little to prepare and is delicious!

2 cups chopped or diced and peeled fresh pears
3/4 cup white granulated sugar
2 eggs
1/3 cup cooking oil
1 teaspoon vanilla extract
2 tablespoons butter (melted)
1 1/2 cups all-purpose flour
1/4 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 cup chopped walnuts or pecans

Steps:

  • In a bowl combine sugar with diced pears and mix together with a spoon. Add the eggs, cooking oil, vanilla and melted butter. Mix all with a spoon. In a large bowl whisk together the flour, salt, baking powder, ground ginger, cinnamon and cloves. Combine the flour mixture with the pear mixture and stir all ingredients together with a spoon until all ingredients are wet.
  • Spray an 8 x 8 baking dish with cooking oil. Pour in cake batter and sprinkle nuts on top. Bake in a preheated 350 degree oven for 35 to 40 minutes or until center tests done. We don't think this cake needs frosting but we do sprinkle on some powdered sugar before serving.

2 cups shredded peeled tart apples
2 cups shredded peeled pears
2 cups sugar
1-1/4 cups canola oil
1 cup raisins
1 cup chopped pecans
2 large eggs, room temperature, lightly beaten
1 teaspoon vanilla extract
3 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
CREAM CHEESE FROSTING:
3 ounces cream cheese, softened
3 cups confectioners' sugar
1/4 cup butter, softened
2 tablespoons 2% milk
1/2 teaspoon vanilla extract

Steps:

  • In a large bowl, combine the first 8 ingredients. Combine dry ingredients; stir into the fruit mixture. , Pour into a greased 13x9-in. baking pan. Bake at 325° until a toothpick inserted in the center comes out clean, about 1 hour. Cool on a wire rack. , For frosting, in a large bowl, beat the cream cheese, confectioners' sugar and butter until smooth. Beat in the milk and vanilla; frost cake. Store in the refrigerator.

2 pears - peeled, cored and shredded
1 pear - peeled, cored and mashed
1 egg, lightly beaten
1 egg white, lightly beaten
2 tablespoons water
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 cup white sugar
¼ cup instant vanilla pudding mix
1 ½ teaspoons cinnamon
½ teaspoon baking soda
¼ teaspoon salt
⅛ teaspoon baking powder

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 5x9 inch loaf pan.
  • In a bowl, mix the shredded pears, mashed pear, egg, egg white, water, and vanilla. In a separate bowl, mix the flour, sugar, pudding mix, cinnamon, baking soda, salt, and baking powder. Stir the pear mixture into the flour mixture just until moistened. Transfer to the prepared loaf pan.
  • Bake 1 hour in the preheated oven, or until a knife inserted in the center comes out clean.

6 to 8 tablespoons unsalted butter, at room temperature
1 cup sugar
1 teaspoon vanilla
1 1/3 cups all-purpose flour
Pinch of salt
1 teaspoon baking powder
Pinch of ground nutmeg
1 large egg
1/2 cup buttermilk
2 small pears, peeled, cored, and coarsely chopped
1/4 cup coarsely chopped pecans

Steps:

  • Preheat the oven to 350 degrees. Butter an 8 x 5inch loaf pan. In a mixing bowl, cream 6 tablespoons of the butter with the sugar and the vanilla until light and smooth. Sift together the flour, salt, baking powder, and nutmeg and toss together until evenly mixed. Add half of the flour mixture and the egg to the butter mixture and mix well. Add the rest of the flour mixture and the buttermilk, beating them in well. Fold in the pears and the pecans. Scoop the batter into the prepared pan and bake for about 45 minutes, or until the center is firm and golden and a skewer inserted into the center comes out clean. Cool on a rack for 10 minutes, then turn out of the pan and finish cooling. When cool, invert onto a serving plate and cut into slices.

1 cup brown sugar

1 cup oil
2 teaspoons vanilla

1/2 cup brown sugar
1/4 cup milk
1/4 lb butter

Steps:

  • Cake:.
  • Mix all cake ingredients by hand in order given.
  • Pour in a greased 9 x 13 inch pan or springform pan.
  • Bake at 350 degrees for 45 minutes and remove.
  • Topping:.
  • In saucepan mix all ingredients and bring to a slow boil for 3 minutes.
  • Pour over cake and return to oven for 4 minutes.

1/2 teaspoon salt
1 1/2 cups butter, softened
3 cups light brown sugar, packed
1 tablespoon vanilla
5 eggs
3/4 cup milk
1/4 cup pear liqueur or 1/4 cup orange juice
2 1/4 cups firm ripe pears, peeled, cored, and cut into 1/4-inch pieces
2 -3 teaspoons orange peel, finely shredded
1/3 cup granulated sugar
1/3 cup pear liqueur or 1/3 cup orange juice
4 large bartlett pears, peeled, cored, and thinly sliced
1 1/2 teaspoons lemon juice
1/3 cup pear nectar or 1/3 cup pear juice
1/4 cup sugar
1/4 teaspoon vanilla

Steps:

  • Butter a 10-inch fluted tube pan.
  • Coat lightly with flour, shaking out excess; set pan aside.
  • In a medium bowl stir together flour, baking powder, and salt; set aside.
  • In a very large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds.
  • Add brown sugar and vanilla; beat on high speed until mixture is smooth and light, about 3 minutes.
  • Add eggs, 1 at a time, beating just until combined.
  • Alternately add milk and the 1/4 cup brandy to flour mixture, beating just until combined after each addition and stopping occasionally to scrape the bowl.
  • Fold in pears and orange peel.
  • Pour batter into prepared pan, spreading evenly.
  • Bake in a 350 degree F oven about 1 hour 10 minutes or until golden brown and a long wooden skewer inserted near the center comes out clean.
  • Cool cake in pan on a wire rack for 10 minutes.
  • For glaze, combine granulated sugar and the 1/3 cup brandy in a small saucepan.
  • Cook and stir over medium heat until mixture just boils and sugar is dissolved.
  • Remove cake from pan and place on wire rack.
  • Place a piece of waxed paper under the wire rack.
  • With a pastry brush, brush the warm glaze over the entire surface of the cake.
  • Cool cake completely.
  • Serve with Pear Sauce.
  • To make Pear Sauce: In a medium saucepan combine pears, lemon juice, pear nectar, sugar, and vitamin C tablet.
  • Bring to boiling over medium heat; reduce heat.
  • Simmer, covered, about 15 minutes or until pears are soft.
  • If mixture seems dry and in danger of scorching, add a bit more nectar to pan.
  • Remove from heat.
  • Cool slightly.
  • Puree mixture in a food processor or blender; strain through a fine-mesh sieve.
  • Stir in vanilla.
  • Taste sauce and adjust sugar if necessary.
  • Cool and refrigerate in an airtight container for up to 72 hours.
  • Makes about 2 cups.
  • Make-Ahead Tip: Store cooled cake tightly wrapped at room temperature up to 2 days.

1 cup grated peeled Bosc pears (about 2 medium)

Steps:

  • Preheat oven to 350°F. Melt butter in heavy 10-inch-diameter ovenproof skillet over low heat. Remove from heat. Sprinkle with brown sugar. Arrange quartered pears in flower design atop sugar, cutting some pieces to fit center if necessary.
  • Whisk flour, 2/3 cup sugar, crystallized ginger, cinnamon, baking soda, ground ginger and salt in medium bowl to blend. Whisk eggs, oil, vanilla and orange peel in large bowl to blend. Mix in grated pears. Mix dry ingredients into egg mixture.
  • Carefully pour batter over pears in skillet. Bake cake until tester inserted into center comes out clean, about 40 minutes. Cool cake in skillet on rack 20 minutes. Run knife around skillet sides to loosen. Place plate on skillet over cake. Invert cake onto plate. Serve warm.
