PAT'S CHORIZO AND COLLARD GREEN DRESSING

4 tablespoons butter
8 ounces Spanish-style chorizo, chopped
1 small bunch collard greens, washed well, ribs removed and sliced into very thin ribbons
1 large onion, finely chopped
1 large carrot, finely chopped
1 rib celery, finely chopped
3 cloves garlic, chopped
8 cups cubed and toasted cornbread (day old yellow cornbread preferred)
4 cups chicken stock
2 eggs, beaten
Kosher salt and freshly ground black pepper
3 tablespoons chopped fresh parsley leaves

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt the butter in a large heavy skillet over medium-high heat. Once the butter foams, add the chorizo and cook for 5 minutes. Add the vegetables and saute until tender, about 5 to 8 minutes more. Set aside to cool slightly.
  • Add the cornbread to a very large mixing bowl. Pour in the stock, and the beaten eggs. Season the mixture with salt and pepper, to taste. Add the cooled vegetables and the parsley and toss everything together. Pour the mixture into a large 4-quart buttered casserole dish and cover with foil. Bake for 30 minutes, then uncover and continue baking for 15 minutes more.

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place sausage, celery and onions in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • In a large bowl combine sausage mixture with cornbread, bread crumbs, chicken broth, poultry seasoning and sage. Mix well and transfer to a 9x12 inch baking dish.
  • Bake, covered, for 45 minutes or until well set and cooked through.

54 ounces Mixed greens (do NOT drain; (I use Glory brand seasoned mixed greens (canned))
15 ounces condensed soup (I use chicken; you can use cream of mushroom or celery )
1 pan prepared cornbread (day-old and crumbled)
1 cup chopped sweet yellow onion
1 lb. ground sausage (cooked and drained)
1 tablespoon pepper sauce (Trappey's Louisiana peppers in vinegar)
½ teaspoon salt
1 teaspoon black pepper
1 teaspoon red pepper flakes (optional)

Steps:

  • Preheat oven to 350 degrees
  • Prepare a pan of cornbread (best if the cornbread is made a day or two ahead); crumble into small pieces
  • In a large skillet, cook the onion and sausage; drain if there's excess oil
  • In a large bowl, combine greens with their juice and the condensed soup
  • Fold in cooked sausage and onions, crumbled cornbread; season with Trappey's pepper sauce, salt and pepper; sprinkle in red pepper flakes (optional)
  • Transfer to ungreased baking dish and bake uncovered for 30 minutes, or until most of the liquid is absorbed

To save some time you can make the cornbread well in advance, bake the cubes and freeze them until ready to use in the stuffing. Use this cornbread recipe as it is the perfect amount to make this stuffing and will gaurantee perfect results every time! For the cornbread a cast-iron 10-inch skillet is the best, but if you do not have one, the cornbread can be baked in a 9-inch baking dish with good results. I added in a can of sliced drained mushrooms to the casserole when I made it, but that is optional, also I have even made this using small breakfast pork sausages, instead of Italian sausages and it was still wonderful! Prep time does not include making the cornbread.

3/4 cup flour
1 tablespoon sugar
2 1/2 teaspoons baking powder

1 lb uncooked medium shrimp (peeled and deveined)
4 tablespoons butter
1 small onion, finely chopped
2 tablespoons fresh minced garlic (or to taste)
1 jalapeno pepper, seeded and chopped
1 large celery rib, diced
2 teaspoons cumin
1/2 lb dry smoked sausage, chopped
2 green onions, chopped
2 cups frozen corn kernels, thawed (or use fresh corn)
3 tablespoons fresh cilantro
1 1/2 cups milk
3 large eggs, lightly beaten
2 teaspoons seasoning salt (or to taste, or use white salt to taste)

Steps:

  • To make the cornbread: Heat a well-greased 10-inch cast-iron skillet in a 450 degree oven for 6 minutes.
  • Meanwhile in a large bowl mix together cornmeal, flour, sugar, baking powder and salt; stir in the eggs with melted butter and buttermilk; mix JUST until moistened.
  • Pour the batter into the hot skillet.
  • Bake at 450 degrees for 20 minutes or until golden.
  • Cool the cornbread completely, then cut into 1-inch cubes.
  • Arrange the cubes in a single layer on a large baking sheet.
  • Bake in a 350 degree oven for 10-15 minutes until lightly browned; set aside or freeze until ready to use.
  • For the stuffing casserole; butter a 13 x 9-inch baking dish and set oven to 350 degrees.
  • Melt butter in a large skillet over medium heat; add in the chopped yellow onion, jalapeno pepper, garlic, celery and cumin; saute until the onions are tender.
  • Add in uncooked shrimp and chopped smoked sausage, green onions and corn; cook stirring constantly until the shrimp begins to turn pink.
  • Remove from heat (the shrimp will still be slightly raw!) add in cilantro, milk and eggs, then season with seasoned salt and black pepper.
  • Fold in the cornbread cubes; toss lightly to combine.
  • Spoon into prepared baking dish.
  • Bake for about 30 minutes.
  • Delicious!

2 lb homemade or purchased cornbread, cut into 1/2-inch cubes (11 cups)
1/2 cup butter
1 lb bulk pork sausage
1 cup coarsely chopped onion
1 red bell pepper, coarsely chopped
1 stalk celery, thinly sliced
1 to 2 serrano chiles, seeded, finely chopped (1 to 2 tablespoons)
1 bunch collard greens, ribs removed, coarsely chopped (6 cups)
2 cups Progresso™ chicken broth (from 32-oz carton)
2 eggs, slightly beaten
1/4 cup chopped fresh Italian (flat-leaf) parsley
2 tablespoons chopped fresh thyme leaves

Steps:

  • Heat oven to 325°F. Grease or spray 2 cookie sheets. Place cubed cornbread on cookie sheets. Bake 20 to 25 minutes or until dry and crispy. Cool completely on cookie sheet.
  • Meanwhile, in 6-quart Dutch oven, melt butter over medium-high heat. Cook sausage in butter 8 to 10 minutes, stirring frequently, until no longer pink. With slotted spoon, transfer sausage to large bowl; set aside. Add onion, bell pepper, celery and serrano chiles to Dutch oven. Cook 4 to 6 minutes, stirring occasionally, until tender and lightly browned on edges.
  • Add greens; cook 1 to 2 minutes or until wilted. Add broth; heat to simmering. Cook 1 to 3 minutes, stirring frequently, using spoon to release browned bits from bottom of pan. Remove from heat. Cool 5 minutes.
  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray; set aside. Add eggs, parsley and thyme to bowl with sausage. Stir in cornbread. Pour broth mixture over stuffing ingredients in bowl. Pour into baking dish. Cover with foil; bake 30 minutes. Uncover; bake 15 to 20 minutes longer or until browned and crisp on top. Cool 5 minutes before serving.

  • In a large deep skillet, saute 1/2 pound diced andouille sausage in 6 tablespoons butter for 3 minutes. Season with salt and pepper and add 1 chopped onion, 3 chopped celery stalks and 1 tablespoon each chopped thyme and sage; cook 5 minutes, then add 4 cups sliced collard greens and let wilt. Pour in 3 cups chicken broth. Simmer until step 5. In a large bowl, mix 2 large eggs. Add to the bowl 8 cups toasted white bread cubes, 6 cups crumbled cornbread and the hot broth mixture. Gently toss the stuffing, then spread in a buttered 9-by-13-inch baking dish. Dot the top with butter or turkey pan drippings, cover and bake 30 minutes at 350 degrees F. Gina: Pat and I love, absolutely love, Cornish hens. One year we took a family vacation to Florida's Gulf Shore for Thanksgiving. When we got there, we had a beach view as well as the beach to ourselves. It was going to be a special Thanksgiving. Here's what happened: Before we left for our vacation, Pat begged me not to go overboard packing the foodstuffs. He said, "I don't want to smell collard greens up the road." Well, I said, "Too bad," because I knew stores might not be open, and I needed my ingredients for cooking the birds. See, ladies, this is why we are so special, because we know. Well, guess what, when we got to the coast, we couldn't find any stores that were open. So it was lucky for us that a smart momma had packed all her ingredients, and we were able to cook our entire Thanksgiving dinner. Long story short: It was a wonderful meal. We enjoyed our dinner overlooking a beautiful beach, and the meal remains one of our most cherished memories. Lesson here, ladies: Never let a man tell you what to pack! As for the birds, they are surprisingly easy to prepare. After the hens are rubbed with spices, the fragrant cornbread stuffing can be assembled in minutes in one skillet. The real appeal is the flavor and the stylish presentation. This recipe promises to be a holiday staple for years to come, with or without the view!

2 teaspoon ground cumin
1 teaspoon pure ground chile powder
1 teaspoon freshly ground black pepper
1/2 teaspoon ground allspice
4 Cornish game hens, halved lengthwise
2 teaspoons Dijon mustard
12 ounces ground pork sausage
2 tablespoons vegetable or olive oil, plus more for greasing
1 medium onion, chopped
1/3 cup chopped celery
1 jalapeño, seeded and minced
1 teaspoon chopped fresh thyme leaves (or 1/2 teaspoon dried thyme)
4 cups crumbled cornbread
1/2 cup Chicken Stock (page 28) or low-sodium canned broth

Steps:

  • Whisk together the dry ingredients the salt, cumin, chile powder, black pepper, and allspice in a small bowl. Season both sides of the hens with this mix, and set them aside to marinate for 30 minutes at room temperature or for up to 8 hours in the refrigerator. Meanwhile, prepare the stuffing.
  • Cook the sausage in a large, heavy skillet over medium heat until no pink remains, about 8 minutes. Using a slotted spoon, transfer the sausage to a plate lined with paper towels; drain all but 1 tablespoon of fat from the skillet. Return the skillet to the heat, and add the oil. Add the onion, celery, and jalapeño, and cook, stirring, until the vegetables have softened, about 6 minutes. Stir in the thyme, crumbled cornbread, sausage, chicken stock, parsley, and cilantro, if desired. Remove the skillet from the heat; taste the stuffing for seasoning, and add salt and pepper as desired.
  • Preheat the oven to 375°F. Grease two 13 × 9 × 2-inch baking dishes with oil.
  • Place the hens skin side down on a work surface. Pack one fourth of the stuffing into each cavity. Arrange the hens stuffing side down in the prepared dish. Brush the tops of the hens with the mustard. Roast the hens until they are golden brown and juices run clear when thighs are pierced, 50 to 55 minutes. Transfer the hens to a platter, and serve.
