GRILLED CORN ON THE COB

Grilled Corn On The Cob image

There are so many methods for cooking corn, but this grilled corn on the cob comes out delicious every time. It's an easy side dish for summer!

Categories     grilled     side dish

Time 35m

Yield 8 servings

Number Of Ingredients 7

8 ears yellow corn, in the husk
Kosher salt, for serving
6 tbsp. salted butter, softened
1 garlic clove, chopped
2 tbsp. chopped chives
1/4 tsp. ground paprika
1/4 tsp. ground black pepper

Steps:

  • Heat a grill pan or outdoor grill over high heat (about 450˚ to 500˚).
  • For the grilled corn: Pull off all of the layers of the green husk, except for the two layers closest to the kernels. Pull those two layers back without detaching them. Remove all of the thin threads of silk from around the kernels of the corn. Fold the reserved pieces of husk back over the corn kernels, leaving a couple of gaps of open space.
  • Place the corn on the grill over direct heat, cover and cook for 5 minutes. Rotate each ear with a ¼ turn, cover and continue to cook 5 more minutes. Repeat 1 to 2 more times to cook all sides of the corn, 15 to 20 minutes total. Corn will become bright yellow and caramelized in spots when cooked through. Remove from the heat.
  • For the garlic-chive butter: In a small bowl, combine the butter, garlic, chives, paprika, and black pepper. Mash and stir with a fork to combine.
  • Remove the charred husks from the corn. Spread all over with garlic-chive butter, sprinkle with salt, and serve immediately.

GRILLED CORN ON THE COB WITH LIME BUTTER

Grilled Corn on the Cob with Lime Butter image

Provided by Tyler Florence

Categories     side-dish

Time 2h10m

Yield 12 servings

Number Of Ingredients 15

12 ears fresh corn, unshucked
1/2 pound (2 sticks) unsalted butter, room temperature
3 limes, zest finely grated
1 bunch fresh chervil, chopped
Salt and freshly ground black pepper
1/2 pound queso fresco, finely grated
1/4 cup Ancho Chile Rub, recipe follows, or cayenne pepper
3 ancho chiles, seeded and hand-torn into pieces
1/4 cup chili powder
2 tablespoons ground coriander
1 tablespoon ground cumin
2 teaspoons sweet paprika
1 tablespoon dried oregano
1 tablespoon garlic powder
1/4 teaspoon ground cinnamon

Steps:

  • Soak the corn in a large container of water for 1 hour. Prepare the grill. Put the soaked cobs on the hot grill and cook for 30 to 40 minutes, turning frequently. The corn is done when it feels soft when you press on it.
  • While the corn is grilling make the lime butter: In a small bowl add the butter, lime zest, chervil, and salt and pepper, to taste. Mix well and spread onto a large plate. Spread the queso fresco onto another plate.
  • Take the corn off the grill and carefully peel back the husks (it will be hot). Remove the corn silk and tie the husks in a knot so you can hold on to it like a handle. Roll in the lime butter and then roll in the queso fresco; sprinkle with the Ancho Chile Rub. Place on a large platter and serve immediately.
  • For the spice rub: Toast the ancho chile pieces over low heat in a dry skillet until fragrant, shaking the pan so they don't scorch. Put the chiles in spice grinder and pulse to a powder. Add the remaining ingredients and buzz again to combine.

ROASTED CORN ON A STICK

Roasted Corn on a Stick image

Corn on a stick? Did somebody say big-kid treat? Don't forget the mayo: you'll need to make the chile powder and cayenne stick. No grill? No worries, you can go the old-school route with a hot cast-iron skillet.

Yield serves 8

Number Of Ingredients 8

8 ears corn, husks removed
Olive oil, for rubbing corn
Seasoned salt to taste
8 heavy wooden skewers
1/2 cup mayonnaise
1 teaspoon chile powder
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper

Steps:

  • Heat a large cast-iron skillet or griddle over medium-high heat. Rub the corn generously with olive oil, and season with seasoned salt to taste. Cook the corn, in batches, until it's cooked through and lightly charred on all sides, rotating, for about 6 to 8 minutes. When it's cool enough to handle, push a wooden skewer into the cob of each ear of corn to make a handle.
  • Meanwhile, mix the mayonnaise, chile powder, cayenne, and salt and pepper to taste in a small bowl. Brush the hot corn with the mayonnaise mixture.
