1 cup all-purpose flour
1 cup granulated sugar
1/2 cup packed light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Dash nutmeg
1 1/2 sticks cold butter
1/2 cup slivered almonds
Four 12-ounce bags frozen tart cherries
1/4 cup cornstarch
2 teaspoons almond extract
2 cups heavy cream
2 tablespoons granulated sugar
Vanilla ice cream, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • Start with the crumb mixture. In a medium bowl, combine the flour, brown sugar, 1/2 cup granulated sugar, cinnamon, salt and nutmeg.
  • Cut the cold butter into pieces. Add the butter to the bowl and use a fork or pastry blender to cut it into the flour mixture. The mixture should resemble a moist, coarse meal. Add the slivered almonds and combine thoroughly.
  • Place the still-frozen cherries in a bowl, add the remaining 1/2 cup granulated sugar, cornstarch and almond extract and gently stir the cherries to combine.
  • Divide the cherries between 8 ramekins (about 1/2 cup each). Top with the crumb mixture, evening out the surface.
  • Bake until the topping is crisp and golden brown, about 45 minutes. If the topping appears underdone, continue baking in 10 minute increments until it's done.
  • To serve: Add the heavy cream and granulated sugar to the bowl of an electric mixer fitted with the whisk attachment and whip. Keep in the fridge until ready to serve.
  • Serve the individual crisps warm or at room temperature with a dollop of freshly whipped cream or vanilla ice cream.

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-inch-square baking dish.
  • Toss the cherries in a large bowl with 1/2 cup sugar, the rum, vanilla, cinnamon, salt and 2 tablespoons flour. Transfer to the prepared baking dish.
  • Whisk the remaining 1/4 cup flour, the oats, almonds and the remaining 1/4 cup sugar in a medium bowl. Stir in the melted butter until combined, then sprinkle the mixture over the cherries. Bake until the filling is bubbling and the topping is golden brown, 50 minutes to 1 hour. Let cool slightly before serving.

Steps:

  • Preheat oven to 375 degrees. In a large bowl, gently toss first 5 ingredients together. Place in a greased casserole dish or 8 inch square pan.
  • In another bowl, mix the rest of the ingredients, using a pastry blender or fork. The mixture should resemble course crumbs. Spread mixture over pie filling. Bake for 30 minutes or until brown.
  • Serve warm with vanilla ice cream. You can substitute canned cherry pie for the homemade cherry filling if you want to, but why?

1 c oats (not instant)

  • Preheat oven to 375. Pit cherries and put into a bowl with sugar, 4 tbsp of flour and vanilla extract. Gently stir together so cherries are coated. Let this set while you're preparing the rest.
  • In another bowl combine your 1.5 c of all purpose flour with brown sugar, and old fashioned oats. Stir together.
  • Add softened butter and shortening. Use a fork to cut this into the dry mixture so it becomes softened (like wet sand).
  • Spray the inside of a 2 quart baking dish with non stick spray. (could use 9x13 pan but cobbler will be thinner, I like thick)
  • Spread cherries on bottom of pan evenly. Then sprinkle oat mixture on top of that evenly. Cover with foil.
  • Bake for 35 minutes, then remove foil and bake for an additional 10-15 minutes or until top crisp is lightly brown.
  • Take out and allow to sit for 5-10 minutes so it can thicken. Scoop out and serve alone or with vanilla ice cream.

¾ cup of oat flour (can sub for all-purpose flour if desired)
1 cup of brown sugar, loosely packed
⅓ cup of vegan butter, melted
½ teaspoon of salt

He is an ice cream lover-but he passed up the scoops of vanilla that he tops most desserts with so he could taste the cherries better! Wheat, soybeans and milo are the main crops on our farm. We also have three small cherry trees. I apportion all of that harvest for this recipe. My husband's is the manager of a coop.
