Watermelon lemonade image

This watermelon lemonade looks amazing but is super-simple to make. It's perfect for a kids party or makes a refreshing summer drink for kids or adults

1 large or 2 small watermelons
250ml lemon juice (from a bottle or squeeze your own)
100g golden caster sugar
1l bottle soda water
1 lime , cut into slices
small handful mint
crushed ice

Steps:

  • Cut the top off the watermelon and hollow it out using a large spoon, fishing out any pips along the way. Mash the flesh through a sieve into a bowl. Put the flesh in a blender (or use a tall jug and hand blender) with the lemon juice and sugar, whizz to a purée, then stir in the soda.
  • Heap some ice into the hollowed-out watermelon and fill it with the lemonade mixture. Serve the rest in a jug with the lime slices and mint. Have a bowl of extra crushed ice on the side so people can help themselves.

1 cup powdered sugar
3/4 cup almond flour
2 egg whites
1/4 cup sugar
1 -5 drop red food coloring
1 -5 drop green food coloring
3 tablespoons poppy seeds
1 cup butter
2 tablespoons heavy cream
3 cups powdered sugar
1 pinch salt
3 drops of watermelon flavoring, or more

Steps:

  • To Make Macaron Shells:.
  • In a bowl, combine sifted powdered sugar and almond flour.
  • Beat egg white (at room temperature) and sugar until you get soft peaks.
  • Then add the powdered sugar and almond mixture.
  • Mix well and then divide into two equal bowls.
  • Make one green by adding several drops of green food coloring; mix well.
  • Make the other bowl pink by adding a few drops of red food coloring; mix well.
  • On a baking sheet lined with parchment paper, pipe each color; making sure the disc shapes are the same size.
  • For the pink discs, sprinkle with poppy seeds.
  • After piping all the cookies, allow the shells to rest for 30 minutes until a thin skin has formed.
  • Bake for 15 minutes at 225 degrees F.
  • To Make the Filling:.
  • Blend butter until it's smooth and creamy.
  • Add powdered sugar, heavy cream, a pinch of salt and several drops of watermelon flavoring.
  • Blend together until well-combined.
  • To Assemble the Macaron:.
  • Pipe the filling on one side of the shell, and top with the other shell (making sure one side is green and one side is pink, so it resembles a watermelon slice).

French Watermelon, Goat Cheese Salad With Balsamic Reduction image

I had this lovely salad at a great restaurant in Traverse City called Phils on Front Street. This is my copy of his recipe!

1/3 cup balsamic vinegar
1 tablespoon honey
1/2 baby watermelon, cut into 6 3-inch by 3-inch planks
1 cup baby arugula
4 ounces goat cheese, sliced into 4 1-inch slices
2 tablespoons olive oil
black pepper

Steps:

  • Make a balsamic sysrup by pouring the vinegar and honey into a small saucepan and simmering over medium heat just long enough for it to reduce and have a thick, running consistency - about 5 minutes. Set aside, as it will thicken further as it cools.
  • Assemble each salad on its plate. First 1/2 cup arugula. Drizzle 1 T. olive oil on arugula. Then place watermelon plank on its side on top of arugula, put a slice of goat cheese on its side, then watermelon slice again, then another goat cheese slice, ending with another slice of watermelon. You will end up with a layered salad on its side.
  • Season with cracked pepper.
  • Drizzle balsamic reduction over watermelon, goat cheese slices.
  • Serve immediatley.
