I am an esthetician and often don't have time to eat in between appointments. Creating this recipe allowed me to combine healthy foods with cacao nibs which I dearly love to use in any recipe as the health benefits are phenomenal!

1 cup old-fashioned rolled oats
½ cup ground flax seed
½ cup almond butter
½ cup ground cocoa nibs
½ cup unsweetened flaked coconut
½ cup agave nectar, or to taste
1 teaspoon vanilla extract
¼ teaspoon sea salt

Steps:

  • Mix oats, ground flax seeds, almond butter, cocoa nibs, coconut, agave nectar, vanilla extract, and salt in a bowl until evenly moistened. Refrigerate for mixture to slightly solidify, about 30 minutes.
  • Roll mixture into 1-inch balls and arrange in 1 layer in a container; top first layer with waxed paper and arrange a second layer of energy bites atop waxed paper. Continue layering as needed; refrigerate.

AKA: Balls of Power (BOP). Agave sweetened energy bites using raw cacao nibs and other high fiber and energy rich foods for a quick pick me up.

Number Of Ingredients 8

1 cup old fashioned oats
1/2 cup ground cocoa nibs
1/2 cup ground flax seed
1/2 cup unsweetened coconut
1/2 cup almond butter
1/2 cup agave nectar
1 teaspoon vanilla
1/4 teaspoon sea salt

Steps:

  • Combine all ingredients in medium-sized bowl. Mix until all ingredients are well distributed and combined. You can lessen or increase the agave nectar to your liking. Refrigerate for 30 minutes. Remove from refrigerator and roll into 1" balls. Place in air-tight container with wax paper or parchment in between layers. Keep refrigerated.

Shape a mix of peanut butter, flaxseeds, pecans, raisins and coconut into balls for a healthy, energy-boosting snack

100g pecan
75g raisin
1 tbsp ground flaxseed (or a mix- we used milled flaxseed, almond, Brazil nut and walnut mix)
1 tbsp cocoa powder
1 tbsp agave syrup
50g desiccated coconut
2 tbsp peanut butter

Steps:

  • Put pecans in a food processor and blitz to crumbs. Add raisins, peanut butter, flaxseeds, cocoa powder and agave syrup, then pulse to combine.
  • Shape mixture into golf ball-sized balls and roll in desiccated coconut to coat. Put in the fridge to firm for 20 mins, then eat whenever you need a quick energy boost.
