PEANUT BUTTER NO-BAKE ENERGY COOKIES



Peanut Butter No-Bake Energy Cookies image

This is a chocolatey peanut butter cookie with a hint of banana. I like to use flavored peanut butter to give it some flare. I have used chocolate-peanut butter. You can also use a cinnamon raisin peanut butter or a white chocoalate-macademia PB. They are made by Peanut Butter & Company, and it can be found in the PB aisle at most grocery stores. Usually on the top shelf.

2 bananas, mashed
2/3 cup skim milk
1 1/2 cups Splenda sugar substitute
1/4 cup unsweetened cocoa
1/2 teaspoon vanilla extract
2/3 cup chunky peanut butter, I like to use flavored peanut butter
3 cups oatmeal

Steps:

  • Combine the banana, milk, Splenda and cocoa in a sauce pan over medium heat, bring to a boil. Stir constantly for 1 minute. Add vanilla, then peanut butter and then oatmeal.
  • Remove from heat & mix well. Before the mixture has time to harden, quickly drop onto was paper using a dinner spoon.
  • Allow to cool at room temperature, enjoy.

¾ cup butter
⅔ cup milk
1 (3.9 ounce) package instant chocolate pudding mix
3 ½ cups quick cooking oats
½ teaspoon vanilla extract

Steps:

  • Mix together the sugar, butter or margarine and the milk in a large pot and bring to a boil. Boil for 2 minutes.
  • Turn off heat and add in the pudding, oats and vanilla. Mix well and let stand for 5 minutes.
  • Drop by spoonfuls onto wax paper.

This is a healthy take on the traditional no bake cookies. So good and good for you! I am always asked for this recipe every time I make them. They are a hit with the kids and the adults, and always go quick! I store them in the freezer because I think they taste best frozen, but not necessary.

1/2 teaspoon baking soda
1/2 cup unsalted butter, softened to room temperature
1/2 cup firmly packed brown sugar (dark or light)
1/4 cup sugar
1 large egg
1 teaspoon vanilla
1 teaspoon water
1 1/2 cups rolled oats
1 cup semi-sweet chocolate chips
1/2 cup roasted peanuts
1/2 cup raisins

Steps:

  • Preheat oven to 350°; grease two cookie sheets or line them with Silpat.
  • In a bowl, mix the flour, salt, and baking soda.
  • In a bigger bowl, cream the butter and sugars; beat in the egg.
  • Add in the vanilla and water; mix together until they are just combined.
  • Add in the flour mixture and oatmeal; mix until combined.
  • Add in the chocolate chips, peanuts, and raisins; mix until combined.
  • Drop 1/4 cup dough, 3 inches apart, onto baking sheets; press the cookies down lightly.
  • Bake for 15-17 minutes; remove the cookies and cool them on a wire rack.

  • To a food processor add pitted dates, cocoa or cacao powder, peanut butter (or other nut/seed butter), rolled oats, salt, and vanilla (optional).
  • Note: If you don’t have a food processor you can try using a blender, but dates can be tough for blenders due to their sticky nature, so use a low speed if possible and pulse rather than blending.
  • Pulse until the mixture is well blended and starts to clump together (~30 seconds - 1 minute). If it’s too dry or crumbly and it doesn’t stick together when pressed between two fingers, add more nut butter or pitted dates (just ensure your dates are sticky and fresh, or it will only further dry out the mixture.)
  • Scoop out 1 ½ Tbsp amounts (we love this scoop) and gently roll into balls. As the original recipe is written, ~12 balls.
