1/2 pkg herbed grilling marinade (powder form), 1 oz package
1 Tbsp olive oil
1 Tbsp balsamic vinegar
2 Tbsp water
1 pkg mixed cheese tortellini (refrigerated type), 20 oz.
1 jar(s) pesto basil sauce (8 oz)
4-6 oz sun-dried tomatoes, julienned
1 lb boneless, skinless chicken breasts (approx. 3)
4-6 oz zesty Italian salad dressing
1 c shaved or shredded Parmesan chees
1 c toasted pine nuts
3 fresh basil leaves
salt and pepper, to taste

Steps:

  • 1. Marinade chicken in herb mix in a Ziploc bag. Add the olive oil, balsamic vinegar, and water. Marinate for at least 1 hour.
  • 2. Grill chicken, turning every 2 minutes for a total of 12 minutes.
  • 3. Boil tortellini pasta per instructions, add a small amount of olive oil to water and boil approx 7 minutes - drain well.
  • 4. Toss a small amount of olive oil in pasta to prevent sticking.
  • 5. Cut julienned strips of sun-dried tomatoes into smaller pieces.
  • 6. Toast the pine nuts. Place pine nuts in a pan in a single layer over medium heat. Constantly stir until fragrant and golden brown (about 7-8 minutes). Quickly transfer to a plate so they don't burn.
  • 7. Add pesto, sun-dried tomatoes, and toasted pine nuts to the tortellini.
  • 8. And add zesty Italian salad dressing.
  • 9. Add shaved Parmesan cheese.
  • 10. You can also season salt and pepper to taste. Stir together.
  • 11. Cut grilled chicken into bite-size strips.
  • 12. Add grilled chicken to the pasta salad prior to serving.
  • 13. Cut basil leaves into ribbons. First, roll the basil.
  • 14. Then cut into ribbons. Basil is for garnish and adds additional flavor.

6 boneless skinless chicken breasts
1 (8 ounce) bottle Italian dressing
12 ounces fresh cheese tortellini or 12 ounces frozen cheese tortellini
1/2 cup mayonnaise
3 hard-boiled eggs, chopped
1/2 cup chopped sweet red pepper
12 sun-dried tomatoes, cut into slivers
salt and pepper

Steps:

  • Place chicken in a ziplock bag, pour entire bottle of Italian dressing over the chicken and marinate in the refrigerator overnight. Turn the bag several times.
  • Drain the chicken and discard marinade. Grill for 15 to 20 minutes or until chicken is thoroughly cooked and no pink remains. Remove from grill and cut into bite-size pieces.
  • While chicken is grilling, heat water and cook tortellini until tender but still firm ~ about 8 to 10 minutes. If using frozen, cook according to package directions.
  • Drain. Rinse with cold water and drain thoroughly.
  • In a large salad bowl, combine mayo, eggs, red pepper, tomatoes, salt and pepper, chicken, and tortellini and mix until well combined. Add additional mayo if necessary to reach desired consistency.

3 roma (plum) tomatoes
1 tablespoon tomato paste
1 clove garlic, minced
3 tablespoons red wine vinegar

1 teaspoon honey
⅓ cup olive oil
⅓ cup vegetable oil

Steps:

  • In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.

  • Place the tomatoes in a food processor and add the tomato paste, garlic, red wine vinegar, balsamic vinegar, mustard and honey. Blend until smooth. With the processor running, add the olive oil and vegetable oil in a thin steady stream. Season with salt and pepper.

2 (330 ml) envelopes four cheese pasta sauce
1 kg fresh four- cheese tortellini
3 boneless skinless chicken breasts
1/2 lb bacon
1/2 cup green onion
1 cup diced mushroom
salt and pepper

Steps:

  • Fry the bacon till crunchy so it can be crumbled into bacon bits.
  • Drain of the bacon fat and cook the boneless skinless chicken breasts in the same pan, add seasonings to taste. I like to add a bit of garlic powder and paprika.
  • When cool, crumble the bacon and cut the chicken into bite size pieces.
  • You can put this in the fridge till later in the day or use right away.
  • Put on a large pot of water to boil when it has reached the boiling point add the tortellini, while cooking chop up the green onion and fresh mushrooms.
  • Once tortellini is cooked drain off the water, add 2 packages 4 cheese pasta sauce, the cooked chicken, bacon bits, green onion and mushrooms, simmer on low heat for approx 20 min or until the sauce is warmed through. You will need to stir often so the pasta does not stick to the bottom.

1 tablespoon honey
1 tablespoon mustard
1/2 tablespoon olive oil

1 head lettuce
1 red pepper (cut into thin strips)
1 yellow pepper (cut into thin strips)

Steps:

2 tablespoons olive oil
1 ½ pounds chicken breast, cubed
salt and ground black pepper to taste
½ cup chicken broth
½ cup prepared pesto
½ cup heavy cream
1 cup Parmesan cheese, divided
1 cup baby spinach
½ cup cherry tomatoes, halved
1 (16 ounce) package refrigerated cheese tortellini

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Add chicken to the skillet and season with salt and pepper. Saute until chicken is cooked through and has browned, 5 to 10 minutes. Remove from skillet and transfer to a bowl; cover to keep warm. Set aside.
  • Deglaze pan with chicken broth over medium heat, scraping up any browned bits. Stir in pesto and heavy cream. Cook until thickened, 3 to 5 minutes. Mix in 1/2 cup Parmesan cheese and stir until melted. Add in spinach and tomatoes. Cook until spinach begins to wilt, 3 to 5 minutes.
  • Add tortellini and cooked chicken and continue cooking until bubbly and hot, 5 to 10 minutes. Sprinkle with remaining 1/2 cup of Parmesan cheese and serve.

1 pound boneless skinless chicken breasts, cut into 1-1/2-inch pieces
1/3 cup finely chopped onion
1 tablespoon olive oil
2 garlic cloves, minced
3/4 teaspoon salt
1/4 teaspoon pepper
1 package (10 ounces) hearts of romaine salad mix
1-1/2 cups grape tomatoes
1 can (6-1/2 ounces) sliced ripe olives, drained
3/4 cup creamy Caesar salad dressing
3/4 cup shredded Parmesan cheese
6 bacon strips, cooked and crumbled

Steps:

  • Cook tortellini according to package directions. Drain; rinse with cold water., Meanwhile, in a small bowl, combine chicken, onion, oil, garlic, salt and pepper; toss to coat. Heat a large skillet over medium-high heat. Add chicken mixture; cook and stir 4-6 minutes or until chicken is no longer pink. Remove from heat., In a large bowl, combine salad mix, tomatoes, olives, tortellini and chicken mixture. Drizzle with dressing; toss to coat. Sprinkle with cheese and bacon. Serve immediately.

1 tablespoon olive oil
1 tablespoon butter
1 (8 ounce) cont. fresh sliced mushrooms
1 teaspoon minced garlic
1 small red bell pepper, julienned
1 (20 ounce) package cheese-filled tortellini, fresh or frozen, cooked
1 (1 lb) jar alfredo sauce, or homemade
1/4 cup prepared basil pesto
1 (6 ounce) jar artichoke hearts, drained and coarsely chopped
1 (2 1/4 ounce) can sliced black olives
1 tomatoes, drained and chopped
fresh grated parmesan cheese
chopped fresh basil or parsley

Steps:

  • Grill chicken breasts til done, julienne, cover and set aside.
  • In saute pan, melt butter with olive oil and cook garlic, mushrooms and bell pepper til tender.
  • Meanwhile, cook tortellini til done, drain.
  • Stir in alfredo sauce, pesto sauce, chicken, tortellini, artichoke hearts, chopped tomato and black olives into mushroom mixture gently til mixed.
  • Heat over low heat til heated through.
  • Pour onto serving platter.
  • Top with fresh grated parmesan cheese.
  • Garnish top with fresh chopped basil or parsley.

5 tablespoons olive oil
3 tablespoons fresh lemon juice
½ teaspoon hot sauce (such as Tabasco®)
salt and ground black pepper to taste
½ teaspoon dried thyme
2 skinless, boneless chicken breasts
4 slices red onion, 1/3-inch thick
4 cups torn romaine lettuce
½ cup feta cheese, crumbled

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Whisk oil, lemon juice, hot sauce, and thyme in a small saucepan. Season with salt and pepper. Arrange chicken and onion slices on a plate. Spoon 2 tablespoons of the dressing over the chicken and onions; turn to coat. Let stand for 5 minutes.
  • Grill chicken and onion slices on the preheated grill, turning once, until chicken is cooked through and the juices run clear, about 8 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Set the saucepan with the remaining dressing at the edge of the grill to warm.
  • Transfer chicken and onion slices to a place. Cut chicken crosswise into thin slices. Separate onion slices into rings.

1 (6-oz.) pkg. refrigerated grilled chicken breast strips
2 tablespoons diced roasted red bell peppers (from a jar)
2 tablespoons butter, melted
1/4 cup Progresso™ Italian Style Bread Crumbs

Steps:

  • Cook tortellini and broccoli as directed on tortellini package. Drain; return tortellini and broccoli to saucepan.
  • Meanwhile, puree 1/3 cup roasted peppers in blender. Add Alfredo sauce; blend until mixed.
  • Add Alfredo sauce mixture, chicken and 2 tablespoons roasted peppers to tortellini and broccoli in saucepan; mix well. Cook and stir over medium heat for 2 to 3 minutes or until thoroughly heated, stirring occasionally. Spoon into ungreased shallow 1 to 1 1/2-quart casserole.
