- In a nonstick skillet, brown turkey in oil; transfer to a 3-qt. slow cooker. Stir in the chili, tomatoes, peppers, onion, salsa, garlic, chili powder, cumin and salt., Cover and cook on low for 5-6 hours, until turkey is no longer pink and vegetables are tender. Garnish with cilantro if desired.

HEARTY TURKEY STEW WITH VEGETABLES
Turkey breast meat and fresh vegetables are cooked up into a hearty stew that may be enjoyed any time of year.

Steps:
- Melt the butter in a pot over medium heat. Place onions in the pot and cook until tender. Stir in celery and carrots, and cook until tender. Stir in the potatoes and flour. Pour in the chicken stock, and season soup with marjoram. Place turkey in the pot, and bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.
- Mix the green bell pepper into the soup, and continue cooking 10 minutes, until pepper is tender.

SOUTHWEST TURKEY TENDERLOIN STEW
This is a wonderfully satisfying stew. You can make it as spicy as you want. We used no-salt tomatoes, and didn't miss the sodium at all. As a side note, this can also be done on the stove top by pan-frying the turkey in a dutch oven and then adding the ingredients and simmering for at least 30 minutes. Both methods work great. We serve this over brown rice. Also, if you have frozen pepper and onions, those work great!

- Place turkey in slow cooker. Sprinkle chili powder, cumin and salt over turkey; toss to coat.
- Add beans, tomatoes, chilies, bell peppers, onion, salsa and garlic. Mix well.
- Cover and cool on Low 5-8 hours or until turkey is no longer pink in center and vegetables are crisp-tender.
- Ladle into bowls. Garnish with cilantro, if desired.
- Makes 8 servings.

- In a soup pot or dutch oven, saute carrots, celery and onion in butter for 10 minutes. Add consomme, water, salt and pepper. Cover and cook over low heat for 15 minutes or until vegetables are tender.
- Add turkey and beans. Cook for five minutes.
- In a small bowl, combine flour, Worcestershire sauce and remaining water until smooth.
- Stir into turkey mixture; bring to a boil. Reduce heat and cover, simmering for an additional five minutes, stirring occasionally.
- For dumplings, combine flour, baking powder and salt into flour mixture just until moistened. Drop by tablespoons onto simmering stew. Cover and simmer for ten minutes. Uncover and simmer ten minutes longer.

- In a large skillet, cook turkey over medium heat until no longer pink; drain. Stir in the beans, water, olives, taco seasoning and juice from jalapenos. Bring to a boil. Reduce heat; simmer, uncovered, for 6-7 minutes or until thickened. , Stir in tortilla pieces. Sprinkle with cheese and jalapeno. Remove from the heat and cover for 1-2 minutes or until cheese is melted. Serve with sour cream.
