Quick and Easy Black Beans and Rice image

This Black Beans and Rice recipe uses canned beans as a shortcut and is SO quick and easy, vegan, healthy, and protein-packed, with phenomenal fresh flavor and texture. The whole family will love it!

1 cup short grain white rice
2 cups water
1/2 teaspoon kosher salt
juice of one lime
2 tablespoons fresh cilantro (roughly chopped)
1 tablespoon extra-virgin olive oil
1 small onion (finely diced)
28 oz. can black beans (drained and rinsed)
1 teaspoon cumin
1/2 teaspoon kosher salt
1 cup water
juice of one lime
2 tablespoons fresh cilantro (roughly chopped)

Steps:

  • To make the rice, bring water to a boil, add rice (1 cup) and kosher salt (1/2 teaspoon), stir, and simmer until cooked (about 15-20 minutes). When done, fluff with a fork, stir in the cilantro and lime juice, and adjust seasonings if necessary.
  • While the rice is cooking, make the beans. Sauté the diced onion in the olive oil (1 tablespoon) over medium-high heat in a medium pot until softened and beginning to brown (about 2-3 minutes).
  • Add drained and rinsed black beans, cumin (1 teaspoon), kosher salt (1/2 teaspoon), and water (1 cup). Stir, bring to a boil, and simmer uncovered for about 10 minutes.
  • Turn off the heat. Use a potato masher to mash the beans a few times, thickening the mixture, but leaving most of the beans intact. If you don't have a potato masher, you can use a fork on the side of the pot.
  • Stir in the lime juice and fresh chopped cilantro (2 tablespoons) and season with more salt if necessary.
  • Serve the beans on top of the rice as a side or meal.

This is a recipe I use in lieu of kidney beans and rice because I just happen to love the flavor of black beans. We never have leftovers of this side dish!

2 tablespoons olive oil
1 small onion, chopped
3 cloves garlic, minced
2 cups water
1 (15.5 ounce) can black beans
1 teaspoon ground cumin
1 beef bouillon cube
1 cup rice
½ teaspoon Creole seasoning, or to taste
½ teaspoon dried cilantro

Steps:

  • Heat olive oil in a saucepan over medium heat. Cook and stir onion and garlic in hot oil until softened, 5 to 7 minutes.
  • Stir water, black beans, cumin, and beef bouillon cube into the onion and garlic mixture; bring to a boil, add rice, cover, and simmer until the rice is tender and the moisture is absorbed, about 20 minutes.
  • Gently stir Creole seasoning and cilantro into the beans and rice.

My favorite version. The rum and orange juice tweak the flavor just right. I prefer it with brown rather than white rice.

cooking spray
1 medium onion, chopped
2 sweet green peppers or 2 sweet red peppers, seeded & diced
2 garlic cloves, minced
3 cups cooked black beans, drained
1 tablespoon lemon juice
1 tablespoon frozen orange juice concentrate
2 medium tomatoes, chopped
salt and pepper, to taste
2 teaspoons ground cumin
1 teaspoon dried oregano
2 tablespoons dark rum or 2 tablespoons dry sherry
3 cups cooked rice
chopped onion
chopped celery
chopped tomato
chopped hot green chili peppers or chopped jalapeno pepper
lemon wedge
orange wedge
banana, sliced
chopped fresh cilantro
sour cream or yogurt

Steps:

  • Spray and heat large heavy saucepan over medium low heat.
  • Add onion and sauté, stirring occasionally, about 3 minutes.
  • Add pepper and garlic and sauté 3 more minutes.
  • Add beans through oregano and simmer 8 minutes, adding water if it gets too dry and starts to stick.
  • Mix 1 cup of bean mixture with rum and mash to a paste with a fork or in the blender or food processor.
  • Add paste back into the pot, cover and simmer over low heat 20 minutes.
  • Serve over rice.
  • Offer onion through sour cream, each served in its own small dish, as condiments.

½ cup chopped celery
4 cloves garlic, minced

¼ cup dark rum
1 teaspoon chopped fresh parsley for garnish

  • Meanwhile, heat the olive oil in a large skillet over medium heat. Stir in the black beans, salt, pepper, 1/4 cup of parsley, and dark rum. Continue cooking until heated through. Serve over a bed of rice and garnish with 1 teaspoon of parsley.

1 red pepper, diced
3 cloves garlic, minced
3/4 cup uncooked white rice
1 1/2 cups vegetable broth, see my recipe posted or use store bought
1 teaspoon ground cumin
1 teaspoon curry powder
1/2 teaspoon cayenne pepper
4 cups canned black beans, drained

Steps:

  • In a stockpot over medium-high heat, heat the oil.
  • Add the onion,pepper and garlic and saute for 4 minutes.
  • Add the rice and saute for 2 minutes.
  • Add the vegetable broth, bring to a boil, cover and lower the heat and cook for 20 minutes.
  • Add the spices and black beans.

Caribbean-Style Black Beans With Rum image

This is still really good even without the rum, but better with it! you can reduce the rum to 1/4 cup or increase it to 1/2 cup if desired! Use a dry smoked sausage for this, chorizo would work fine, although I have only made this using smoked sausage, I imagine that thick-sliced bacon could replace the smoked sausage. Adjust the Tabasco sauce to suit taste.

6 ounces dry smoked sausage (chopped or sliced)
1 medium onion, chopped
2 tablespoons fresh minced garlic (or to taste)
2 large jalapeno peppers, seeded and finely chopped
1/2 cup ketchup
1/2 cup molasses
1/3 cup dark rum
1/4 cup prepared yellow mustard
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
Tabasco sauce
1/2 teaspoon ground ginger
3 (15 ounce) cans black beans, drained
salt and black pepper

Steps:

  • In a large saucepan cook the sausage over medium heat until browned; drain fat but leave a small amount in the saucepan.
  • Crumble the cooked sausage into pieces; set aside.
  • Add in the onion, garlic and jalapenos; saute for about 4-5 minutes or until tender.
  • Add in ketchup with all remaining ingredients (except the black beans, salt and pepper) bring to a boil, reduce heat and simmer for 10 minutes stirring occasionally.
  • Add in the cooked sausage and the drained black beans; stir to combine, then simmer over low heat for about 1 hour or a little more.
  • Season with salt and pepper to taste.
