This is a nice change from your usual grilled cheese. It's made with mayo on the outside in place of butter and pepperjack cheese. It's a grilled cheese with a kick. Feel free to use your favorite cheese combination. To make it kid friendly leave out the pepperjack cheese.

- Spread 1/2 the mayonnaise onto one side of a slice of bread and place, mayonnaise-side down, in a skillet. Place American cheese and pepperjack cheese on top of the bread. Spread remaining mayonnaise onto one side of the remaining bread and place, mayonnaise-side up, on top of the cheese.
- Cook sandwich in the skillet over medium heat until cheese melts and the bread is golden brown, about 2 1/2 minutes per side.

GRILLED CHEDDAR CHEESE SANDWICH

- Preheat a skillet over medium heat. Mix the butter, mayo and smoked paprika in a small bowl until well combined. Sprinkle with salt and pepper.
- Lightly butter one side of each of the bread slices with the mayo mixture. Add the cream cheese to the remaining mayo mixture and mix well to combine. Spread some of the cream cheese mixture on the other side of each of the bread slices.
- Distribute the Cheddar on the cream cheese-side of 4 of the bread slices. Place the remaining 4 bread slices on top. Place the sandwiches in the skillet and cook until golden on the bottom, about 3 minutes. Flip the sandwiches and place a heavy-bottomed skillet on top of the sandwiches and cook until golden brown and the cheese is melted, about 4 minutes.
GRILLED CHEESE RECIPE BY TASTY
The secret to a perfect grilled cheese recipe? Mayonnaise! (No, really, it makes the outside crispier and tangier.) Spread butter on one side of each bread slice and mayo on the other. - On a cutting board, butter each piece of bread with butter on one side.
- Flip the bread over and spread each piece of bread with mayonnaise.
- Place the cheese on the buttered side of one piece of bread. Top it with the second piece of bread, mayonnaise side out.
- Heat a nonstick pan over medium low heat.
- Place the sandwich on the pan, mayonnaise side down.
- Cook for 3-4 minutes, until golden brown.
- Using a spatula, flip the sandwich over and continue cooking until golden brown, about 2-3 minutes.

GRILLED CHEESE SANDWICH
The trick to great grilled cheese sandwiches isn't in the ingredients, but on the stove. Achieving a golden, crusty outside and oozy inside takes a little patience: if the heat is too high, the outside will scorch before the cheese melts. Cooking the slices separately at first gives the cheese a good head start. There's no need to search out artisanal loaves or local cheese (though they won't hurt), but definitely do not use homemade mayonnaise. Mustard, chutney or even strawberry jam (believe it) can be dabbed on the cheese as it melts, or add ham, prosciutto or slices of apple or tomato (drain on paper towels first). You can use any melting cheese, such as American, Muenster or Swiss, but not too much: part of the perfection here is in the proportion of bread to cheese.

- Heat a heavy pan over medium-low heat.
- Thinly spread one side of each bread slice with butter. Spread the other side of each slice with mayonnaise and place the bread, mayonnaise-side-down, in the pan. Divide the cheese evenly on top of the buttered slices. Adjust the heat so the bread sizzles gently.

- Spread both slices of bread with a light layer of mayo.
- Put slice of cheese on one piece of bread.
- Add tomato slices.
- Sprinkle with salt, pepper& Italian Seasoning.

- In the meantime, heat griddle or pan with butter and garlic power or minced garlic.

- Slice tomatoes as thin as possible (a serrated knife works great) and place on a wire rack set inside a rimmed baking sheet; season with salt and pepper. Let sit, turning once, until they have released some of their liquid, 20-30 minutes.
- Heat 2 dry large skillets over low (or use 1 skillet and work in 2 batches). Spread 1 side of 4 slices with half of mayonnaise. Set slices, mayo side down, on a cutting board. Mound cheese on slices, pressing down gently to pack onto bread. Top with shallot and close sandwiches. - Prepare a charcoal or gas grill for medium heat. (Medium is 325 degrees to 375 degrees. You should be able to hold your hand 4 to 5 inches above the grates for 6 to 7 seconds.)
- Thinly spread mayonnaise on one side of each piece of bread. When you're ready to grill, take the bread, cheese, salt and a spatula to the grill. Clean the grates with a grill brush.
