A butterflied leg of lamb, which cooks quickly and evenly on the grill, has been split down the center, then unfolded and spread open to resemble a butterfly.

1/3 cup olive oil
1/4 cup fresh lemon juice
2 tablespoons balsamic vinegar
2 tablespoons minced fresh rosemary, or 2 teaspoons dried
4 garlic, minced
Coarse salt and ground pepper
1 butterflied leg of lamb (4 to 5 pounds), trimmed of excess fat

Steps:

  • In a medium bowl, whisk together oil, lemon juice, vinegar, rosemary, garlic, 2 teaspoons salt, and 1/2 teaspoon pepper. Place lamb in a large shallow dish with marinade, and turn to coat. Cover; marinate 1 hour at room temperature or up to overnight in refrigerator, turning occasionally. (Bring to room temperature before grilling.)
  • Heat grill to medium-high. Thread several metal skewers through lamb in both directions to hold meat together during cooking.
  • Grill lamb until an instant-read thermometer inserted into the thickest part of the meat registers 140 degrees for medium rare, 10 to 15 minutes per side. Let the meat rest, covered, about 10 minutes. Remove the skewers. Slice the meat thinly, against the grain where possible.

This is an excellent way to cook lamb. Even friends of ours who've never before liked lamb love this. When feeding children who turn their noses up at lamb we call this steak and they gobble it up. We do eventually tell them they really do like lamb because they just ate it! LOL, love doing that! The measurements are all approximate, use more olive oil if you wish, or more parsley, even sub out oregano for the rosemary. Double the paste recipe if using a large leg. Delicious with wild mushroom risotto and a Greek salad.

3 lbs leg of lamb, butterflied
1 1/2 heads garlic
2 lemons, juice of
3 tablespoons red wine vinegar
1/2 cup fresh parsley, chopped
6 -7 sprigs fresh rosemary
1 1/2 tablespoons dried thyme
kosher salt & fresh ground pepper
1/2 cup olive oil (more or less)

Steps:

  • Make sure your lamb has been butterflied evenly so when it cooks evenly.
  • Place all ingredients except olive oil into blender or food processor.
  • Blend into course goop while slowly adding olive oil until mixture forms a moderately wet paste, somewhat like pesto.
  • Spread paste on lamb, cover and refrigerate. Take lamb out of refrigerator two hours prior to grilling.
  • On a very hot grill sear lamb then cook covered at medium careful not to scorch.
  • Cook until thermometer registers rare.
  • Take off grill and cover with aluminum foil, letting the meat rest about 10-25 minutes before carving.

1 boneless leg of lamb, butterflied
2 tbsp garlic, minced
1 cup Dijon mustard
1/2 cup honey
1 cup white wine
Black pepper, coarsely ground
1/4 cup Italian parsley, minced
1 tsp butter
1 tsp garlic, minced
2-3 medium jalapeno peppers, finely minced
1 16oz jar seedless raspberry preserves
1/4 cup onion, finely minced
1/2 cup dry white wine

Steps:

  • Combine marinade ingredients and place in a one-gallon resealable plastic bag. Unfold the lamb and examine how the butcher butterflied it. You may need to further cut it so the meat is of fairly uniform thickness. You may also have to cut it into 2 to 3 smaller, easier to handle portions. Add lamb to plastic bag and marinate in fridge for at least 2 hours.
  • Place lamb on grill over well-heated coals or low-medium flame gas grill. Turn lamb 2 to 3 times while grilling and remove once degree of doneness is achieved (measure with instant-read thermometer). Allow meat to rest 10 to 15 minutes before serving.
  • Serve with any/all of the following: 1. Reduced marinade (cook down while grilling meat); 2. Fresh garlic aioli; 3. Raspberry jalapeno sauce (recipe below)
  • Serve this to someone who thinks they don't like lamb. It's a huge hit at our annual July 4th barbecue.
  • Sweat the garlic, onions and peppers in the butter. Add preserves, stirring constantly until liquefied. Add wine and reduce to syrupy consistency.

1 (5 to 6 pound) boneless leg of lamb
1/2 cup extra-virgin olive oil
1/4 cup fresh lemon juice
1/4 cup balsamic vinegar
1 tablespoon chopped garlic
1/4 cup chopped scallions
1 tablespoon minced thyme leaves
1 tablespoon herbs de Provence
1/2 teaspoon freshly ground black pepper
Kosher Salt
Fire Roasted Eggplant and Grilled Tomatoes, recipe follows
8 to 10 Asian eggplants, pierced with a fork
6 vine ripe tomatoes, halved
1/4 cup extra-virgin olive oil
1 tablespoon chopped garlic
1/2 cup chopped onion
1 tablespoon toasted ground cumin
1/2 cup tomato concasse
1/2 teaspoon sesame seeds
1/2 teaspoon picked fresh oregano leaves
1/2 cup water
1/4 cup chopped parsley
3 tablespoons balsamic vinegar
Salt and freshly ground black pepper
Olive oil, for drizzling

Steps:

  • Wash the leg of lamb and pat dry. Place in a hotel or lasagna pan.
  • In a bowl, combine the remaining ingredients except the salt. Stir until well blended. Pour over the lamb and turn a few times to make sure that the meat is well coated by the marinade. Refrigerate the marinated leg of lamb at least 2 hours, making sure you turn the meat at least once.
  • Preheat the grill to medium.
  • Season the meat with salt. Transfer to the hot grill and cook for 15 minutes on one side. Turn and continue to cook for another 15 minutes. Move the meat to a colder spot on the grill and cover. Continue to cook to desired doneness; check after meat has cooked for a total of 45 minutes and then again after 1 hour. Time will depend on the thickness of the meat.
  • Allow meat to cool for 15 minutes before carving to keep as much of the meat juice. Slice on a bias and serve with fire roasted eggplant and grilled tomatoes.
  • Preheat the grill to medium.
  • Place the eggplant on the grill for about 30 minutes, turning often. Remove and cool completely.
  • Once cool, scrape out the pulp and discard the skins. Reserve.
  • Rub the halved tomatoes with olive oil and salt and pepper. Place onto the side of the grill and roast until soft.
  • In a large saute pan, over the hot part of the grill, heat the olive oil. Add the garlic, onion, cumin, tomato concasse, sesame seeds, and oregano. Cook until onion is soft. Remove from heat and adjust consistency with water. Add the parsley and vinegar. Season with salt and pepper.

1 tablespoon coriander seeds
1 teaspoon cumin seeds
2 teaspoons sesame seeds
1 tablespoon ground sumac
2 teaspoons salt
1 teaspoon cinnamon
5 cloves garlic, grated
Canola oil, as needed
1 cup whole-milk yogurt
2 tablespoons minced fresh chives
1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh dill fronds
1 tablespoon extra-virgin olive oil
2 teaspoons fresh lemon juice
1/2 teaspoon salt
Dash of cayenne pepper

Steps:

  • For the grilled lamb: Trim the excess fat and any gristle from both sides of the lamb and lay it flat on a cutting board. To make the lamb generally the same thickness, butterfly the thick ends by slicing shallowly on the diagonal into the thickest part and opening it up, like a book. Score the entire roast, both sides, in a shallow 1-inch-wide crosshatch pattern.
  • Heat a small saute pan over medium-low heat and add the coriander and cumin seeds. Toast until fragrant. Combine the toasted seeds with the sesame seeds and grind finely in a spice grinder or a mortar and pestle. Pour the ground spices into a bowl and add the sumac, salt and cinnamon.
  • Combine the garlic with a little bit of canola oil to make a paste, and rub into the meat. Rub the spice mix evenly into the meat and leave to penetrate for at least 1 hour at room temperature, or up to 1 day refrigerated.
  • For the herbed yogurt: Combine the yogurt, chives, cilantro, dill, olive oil, lemon juice, salt and cayenne in a bowl and set aside.
  • Heat a grill to medium-high heat.
  • Grill the lamb over medium-high heat, watching carefully for flare-ups, until dark brown on the underside, about 5 minutes. Flip and cook until dark brown again, about 5 minutes. Continue to cook the lamb, flipping every minute or so, until the lamb feels bouncy when poked and measures 125 degrees F on an internal-read thermometer for medium-rare, about 5 minutes longer. (If you like your lamb medium, bring it to 130 degrees.)
  • Let the meat rest for at least 5 minutes on a platter, flipping it occasionally, before slicing thinly across the grain and serving with the herbed yogurt.

2 pounds (2 pints) plain yogurt (regular or low-fat)
1/2 cup good olive oil, plus more for brushing grill
1 lemon, zested
1/2 cup freshly squeezed lemon juice (3 lemons)
3/4 cup fresh whole rosemary leaves (2 large bunches)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 (5-pound) butterflied leg of lamb (9 pounds bone-in)

Steps:

  • Combine the yogurt, olive oil, lemon zest and juice, rosemary, salt, and pepper in a large non-reactive bowl. Add the lamb, making sure it is covered with marinade. Marinate in the refrigerator, covered, overnight or for up to 3 days.
  • Bring the lamb to room temperature. Prepare a charcoal grill with hot coals. Scrape the marinade off the lamb, wipe the meat with paper towels, and season it generously with salt and pepper. Brush the grill with oil to keep the lamb from sticking, and grill on both sides until the internal temperature is 120 to 125 degrees for rare. This will take 40 minutes to 1 hour, depending on how hot the grill is.

Butterflying a leg of lamb produces a more uniform thickness, furthered by pounding, so the meat cooks evenly from end to end. It also creates more surface area for grilling, so that more of the meat takes on a charred taste. In this recipe, the lamb is marinated to infuse it with herbal flavors, but you could simply season it with no more than salt and pepper before grilling.

3 pounds boneless leg of lamb (about 1/2 half leg), butterflied as directed on page 115
2 recipes fresh herb and garlic marinade (page 173)
Sunflower or neutral-tasting oil, for grill
Coarse salt and freshly ground pepper

Steps:

  • Prepare lamb and marinate Cover lamb with plastic wrap. Pound lamb with a meat mallet until it is slightly thicker than 1 inch all over. Reserve 1/2 cup marinade. Place lamb in a large resealable plastic bag and add remaining marinade, then force out air and seal. Massage the lamb a bit to coat it thoroughly. Set bag on a baking sheet (in case of leaks) in the refrigerator and marinate lamb 8 to 24 hours, turning bag occasionally.
  • Grill Remove lamb from bag and wipe off and discard as much marinade as possible so surface is dry. Let lamb rest at room temperature 1 hour. Meanwhile, heat grill to medium-high (see Grill Temperature Guidelines, page 162). When it is hot, scrub with a grill brush and sweep lightly with oil. Season lamb on both sides with salt and pepper. Grill (press down with tongs initially to make sure the lamb is evenly in contact with grill) until charred in spots, 5 to 6 minutes, rotating the lamb 90 degrees halfway through. Flip the lamb, then brush with some reserved marinade and cook until an instant-read thermometer inserted in the thickest part registers 125°F, again rotating it 90 degrees halfway through. This will take 5 to 6 minutes more. Let lamb rest 5 minutes.
  • Serve Slice lamb and serve with remaining reserved marinade on the side.

1 (4- to 5-pound) butterflied leg of lamb, trimmed of excess fat and sinew (from one 61/2-pound bone-in leg of lamb)
Vinaigrette
1 1/2 teaspoons fennel seeds
1 pound tomatoes, seeded, finely chopped (about 2 cups)
1/2 cup Kalamata or Niçoise olives, pitted, finely chopped
3 tablespoons red wine vinegar
1/3 cup extra-virgin olive oil

  • For lamb:
  • Combine minced garlic, chopped rosemary, minced anchovies, fennel seeds, salt, and freshly cracked black pepper in small bowl or in mortar with pestle. Using sturdy wooden spoon or pestle, mash mixture into paste. Mix in extra-virgin olive oil. Rub paste thoroughly over both sides of lamb. Place lamb in 15x10x2-inch glass baking dish; cover with plastic wrap and refrigerate overnight. Let lamb stand at room temperature 1 hour before grilling.
  • For vinaigrette:
  • Stir fennel seeds in small dry skillet over medium heat until fragrant and slightly darker in color, about 2 minutes. Transfer to medium saucepan. Add tomatoes, olives, and vinegar. Stir in oil; season with salt and ground black pepper. Set aside.
  • Prepare barbecue (medium-high heat). Place lamb on grill rack. Cover barbecue and open vents; grill lamb until instant-read thermometer inserted into meat registers 130°F for medium-rare, turning occasionally, about 25 minutes. Transfer lamb to cutting board; let rest 10 minutes. Place saucepan with vinaigrette on slightly cooler part of barbecue and heat just until warm, about 5 minutes. Stir in thinly sliced basil leaves.
  • Cut lamb crosswise into 1/2-inch-thick slices. Transfer to platter. Spoon vinaigrette over and serve.

Steps:

  • In a bowl whisk together hoisin sauce, vinegar, soy sauce, garlic, minces scallion, honey, and salt.
  • Trim as much remaining fat as possible from lamb and in a shallow dish large enough to hold lamb flat spread marinade over both sides of it. Marinate lamb, covered and chilled, at least 4 hours or overnight.
  • Prepare grill.
  • Bring lamb to room temperature and grill on an oiled rack set 5 to 6 inches over glowing coals 12 to 15 minutes on each side, or until meat thermometer registers 140°F. for medium-rate meat. (Alternatively, lamb may be broiled under preheated broiler about 4 inches from heat for approximately the same time on each side as for grilling.) Transfer lamb to a cutting board and let stand 20 minutes before carving.
  • Holding a sharp knife at a 45° angle, cut lamb across grain into thin slices. (If planning to make lamb salad, reserve one-third unsliced lamb, covered and chilled.)
  • To make scallion brushes:
  • Trim roots and green parts from scallions, leaving about 2 1/2-inch stalks. Make 1/2-inch lengthwise cuts at both ends of stalks and spread fringed ends gently. Put scallions in a bowl of ice and cold water and chill 2 hours, or until fringed ends have curled. Drain scallions well.
  • Garnish lamb with scallion brushes and serve with eggplant.

You may use a gas/ charcoal grill if desired and this can be partially made ahead. The avgolemono sauce is a delicate Greek lemon sauce, delicious with the lamb.Marinating time is not included in prep time;meat must be prepared a day in advance.

8 lbs leg of lamb, boned and butterflied
1/4 cup red wine vinegar
1/2 cup olive oil
6 garlic cloves, minced
1 tablespoon salt
10 peppercorns, crushed
1 tablespoon cornstarch
2 tablespoons lemon juice, strained to remove pulp and seeds (one large lemon)
5 egg yolks, unbeaten
1 teaspoon salt
1/8 teaspoon cayenne pepper
1 teaspoon dried mint, crushed
2 cups chicken broth

Steps:

  • For the Lamb:.
  • Remove all but 1/4 inch of fat from surface of lamb.
  • Combine the vinegar, oil, garlic, salt and pepper in a large non-metal pan large enough to accommodate the meat spread flat.( I like to use a large zip-lock bag).
  • Put the lamb in the marinade, turn over once, cover with plastic wrap, then with aluminum foil, and refrigerate at least 24 hours before cooking, turning occasionally.
  • Remove from the refrigerator and let lamb come to room temperature before broiling.
  • Preheat broiler 15 to 20 minutes, with broiler rack in place, about 4 inches below the source of heat.
  • Remove lamb from marinade, drain and place on hot broiler rack, fat side down.
  • Broil 15 minutes, turn and broil 15 to 20 minutes longer for medium-rare lamb.
  • Test with a knife in the thickest part, and if not done sufficiently, broil for a few minutes longer.
  • The lamb should be charred in places; however, watch carefully so it does not catch on fire.
  • To serve, carve across the grain into 1/4 inch thick slices, and arrange overlapping on a hot serving platter.
  • Spoon a little warm avgolemono sauce over middle of sliced lamb and pass the remainder.
  • For the Avgolemono Sauce:.
  • In a 1 quart heavy saucepan, dissolve the cornstarch in the lemon juice.
  • Add the egg yolks, salt, cayenne, and dried mint leaves; stir with a whisk to blend, then stir in chicken broth.
  • Stirring constantly, cook over medium heat until the mixture begins to thicken and coats a spoon( it should not approach a boil).
  • Remove from heat and use immediately or keep warm over hot, but not boiling, water until ready to serve.
  • To prepare in advance, complete sauce, cool, and cover with plastic wrap and refrigerate. When ready to serve, reheat slowly until warm (do not let boil).

1 tablespoon dried oregano (preferably Greek), crumbled
2 teaspoons salt
1 teaspoon black pepper
1 (4 1/2- to 5-lb) butterflied boneless leg of lamb, trimmed of fat
3 10- to 12-inch metal skewers
Special Equipment
a large (2-gallon) heavy-duty sealable plastic bag; 3 or 4 (10- to 12-inch) metal skewers

Steps:

  • Combine oil, lemon juice, garlic, oregano, salt, and pepper in sealable plastic bag. Add lamb and seal bag, pressing out air. Turn bag to coat lamb, then put bag in a shallow baking pan and marinate, chilled, turning bag over occasionally, at least 8 hours.
  • Bring lamb to room temperature, about 1 hour, before grilling.
  • Prepare grill for cooking over direct heat with medium-hot charcoal (moderate heat for gas); see Grilling Procedure.
  • Remove lamb from marinade (discard marinade) and run 3 or 4 skewers lengthwise through lamb about 2 inches apart. Grill on a lightly oiled grill rack, covered only if using gas grill, turning over occasionally and, if necessary, moving around on grill to avoid flare-ups, until thermometer registers 125 to 128°F, 8 to 14 minutes total for medium-rare.
  • Transfer lamb to a cutting board and remove skewers. Let lamb stand, loosely covered with foil, 20 minutes. (Internal temperature will rise to 135°F while meat stands.) Cut across the grain into slices.

I went to a cookout last weekend and this was the main dish. This lamb was perhaps the best I've ever tasted. Juicy, succulent, and full of flavor thanks to the herbs garlic and lemon. I begged the host for the recipe, and here it is for you. Note: I would cook this a little longer for medium meat...just my preference. Also, you might want to secure the meat lengthwise with 2 skewers and widthwise with 2 skewers so it doesn't fall apart on the grill.

2 tablespoons chopped fresh rosemary leaves

3 tablespoons olive oil
7 -8 lbs leg of lamb, trimmed of all fat,boned,and butterflied by butcher (4 to 4 3/4 pounds boneless)

Steps:

  • Make herb rub: Finely chop garlic and in a small bowl stir together with remaining herb-rub ingredients.
  • Put lamb in a large dish and with tip of a sharp knife held at a 45=degree angle cut 1/2-inch-deep slits all over lamb, rubbing herb mixture into slits and all over lamb.
  • Marinate lamb at room temperature for 1 hour.
  • Prepare grill.
  • Lightly pat lamb dry.
  • On a lightly oiled rack set 5 to 6 inches over glowing coals grill lamb about 10 minutes on each side, or until an instant-read thermometer inserted into thickest part of meat registers 125 for medium-rare.
  • (Alternately, roast lamb in a roasting pan in middle of a 425 oven about 25 minutes, or until an instant-read thermometer horizontally inserted into meat registers 125 for medium-rare.) Transfer lamb to a cutting board.
  • Halve and seed lemon.
  • Squeeze juice over lamb and let stand, loosely covered with foil 15 minutes.
  • Cut lamb into slices and serve with any juices that have accumulated on cutting board.

Sear the lamb first, on both sides, grilling on high heat for a short amount of time. Then cook the lamb on lower heat until it is cooked through. In my opinion, the only way to eat lamb is medium rare or rare. There is nothing more depressing than dried-out, over-cooked lamb! For this reason it is essential that you use a meat thermometer to test the internal temperature of the roast. Preparation time DOES NOT include the 2 hour marinating time in the refrigerator!

1/2 onion
4 garlic cloves, peeled
2 tablespoons fresh rosemary leaves or 1 tablespoon dried rosemary
1 lemon, zest of
1 tablespoon apple cider vinegar
2 tablespoons olive oil
kosher salt, to taste
fresh ground black pepper, to taste
1 (5 -6 lb) boneless leg of lamb, butterflied

Steps:

  • Put onion, garlic, rosemary, lemon zest, apple cider vinegar, and olive oil into a food processor and pulse to combine. (If you don't have a food processor, just chop the onions, garlic, and rosemary very well and combine with the rest.).
  • Sprinkle a generous amount of salt and pepper over the lamb.
  • Place marinade and lamb into a 1-gallon freezer bag. Spread marinade over all sides of the meat.
  • Seal the bag and refrigerate for 1- 2 hours.
  • Remove lamb from refrigerator, and let come to room temperature (about 20 minutes).
  • When ready to put on grill, remove from marinade bag. To help make the lamb easier to turn on the grill you can insert a couple of skewers through the lamb, crosswise.
  • Prepare grill:
  • If you are using a charcoal grill, prepare the coals so that they are double layered on one side of the grill, and sparsely single layered on the other side of the grill (this is called "banked" grilling).
  • If you are using a gas grill, heat the grill on high on all burners to start. After the initial browning you will reduce the heat.
  • Place the lamb, fat side down, on the grill on the hot side (double layer charcoals). You will likely get flareups, so be prepared with a squirt bottle of water or a couple of cups of water (if using a charcoal grill) to control the flames if needed.
  • Sear one side for 4 minutes, then flip the lamb over to sear the other side for another 4 minutes.
  • If you are using a charcoal grill, move the roast to the less hot side of the grill.
  • If you are using a gas grill, lower the heat to low. You will want to maintain a temperature of 300-350°F
  • Cover the grill and let cook for an additional 35-45 minutes (depending on how thick, and how many pounds the roast is), until a meat thermometer inserted into the thickest part of the roast registers 130°F (for medium rare).
  • Transfer to a cutting board with a well to catch the juices. Cover with aluminum foil and let rest for 5-10 minutes.
  • Remove the skewers if you are using any.
  • Cut across the grain, 1/4 -1/2" thick slices.
  • Serve slices on a warm platter; pour meat juices over the slices.
  • Serve with mint jelly or horseradish.
