Steps:
- Cook pasta in a large pot of boiling salted water until al dente.
- Crumble goat cheese into a large serving bowl. Add arugula, cherry tomatoes, olive oil, garlic, and salt and pepper.
- Drain pasta, and toss with goat cheese mixture.

- For caramelized onions:
- Heat oil in heavy large skillet over medium-high heat. Add onions. Sauté until golden, about 18 minutes. Remove from heat. Sprinkle with vinegar; stir to blend. Season with salt and pepper.
- For candied walnuts:
- Combine first 4 ingredients in another heavy large skillet. Bring to boil, whisking. Boil 1 minute. Add walnuts; stir. Toss until syrup forms glaze on nuts, about 3 minutes. Transfer nuts to sheet of foil and quickly separate nuts with forks. Cool. DO AHEAD: Can be made 2 hours ahead. Let stand at room temperature.
- For croutons:
- Preheat oven to 350°F. Place bread cubes in large bowl. Drizzle with oil, tossing constantly to coat evenly. Scatter cubes in single layer on rimmed baking sheet. Sprinkle with salt and pepper. Bake croutons until crisp, stirring occasionally, about 15 minutes. DO AHEAD: Can be made 2 hours ahead. Let stand on sheet at room temperature.
- For salad:
- Whisk oil and vinegar in small bowl. Season dressing with salt and pepper.
- Place arugula in very large bowl. Drop in onions, tossing to distribute evenly. Add nuts, croutons, and goat cheese. Toss with enough dressing to coat lightly.
GRILLED BREAD TOPPED WITH ARUGULA, GOAT CHEESE, OLIVES AND ONIONS

- Mix cheese and 4 teaspoons peel in small bowl. Season with salt and pepper. (Can be made 1 day ahead. Cover and chill.)
- Prepare barbecue (medium-high heat). Whisk 6 tablespoons oil, orange juice and 2 teaspoons orange peel in 13 x 9 x 2-inch glass dish. Season dressing with salt and pepper. Add onions; turn to coat. Using metal spatula, transfer onions to grill and cook until tender and golden, turning occasionally and keeping onions intact, about 10 minutes. Return onions to dressing in dish; turn to coat. Set aside.
- Brush remaining 3 tablespoons oil over bread. Grill until bread is golden, about 2 minutes per side. Spread cheese mixture over warm bread.
- Add arugula to dressing; toss to coat. Top cheese bread with arugula, onions and olives.
ARUGULA, CARAMELIZED ONION AND GOAT CHEESE PIZZA

- Preheat the oven to 400 degrees F.
- Put the oil and onions in a medium skillet and cook over very low heat, stirring occasionally, until onions are soft and caramelized, about 15 minutes. Turn the heat up to medium and add the arugula. Cook until the arugula is wilted, about 1 minute. Season with salt and pepper.
- Place the tortillas on a baking sheet and top each with some of the arugula/onion mixture. Crumble some goat cheese on top of each, and bake for 10 minutes. Allow to cool for a few minutes and cut each pizza into 4 triangles.

- Heat grill to high; lightly oil grates. Season steaks with salt and pepper; grill 4 to 5 minutes per side for medium-rare. Transfer to a plate; let rest 10 minutes.
- Meanwhile, grill onion until tender and charred, 4 to 5 minutes per side. Transfer to a plate; separate into rings. (To store, refrigerate steaks and onion, up to 1 day.)
- Assemble sandwiches: Thinly slice steaks against the grain. Dividing evenly, spread top halves of bread with cheese, and bottom halves with mustard. Pile steak, onion, and arugula on bottom halves; close sandwiches. Cut each sandwich into quarters, and serve.

- 1. Cover hands in flour and spread out store-bought pizza dough into desired shape and thickness (thinner tends to be better).
- 2. Prepare other ingredients: Chop garlic, slice sun-dried tomatoes, slice onion, slice olives, and shred mozzarella.
- 3. Grill dough over a medium flame, until crispy on bottom.
- 4. Flip dough over.
- 5. While grilling the other side, cover with mozzarella cheese and then top with toppings (Arugula, sun-dried tomatoes, onions, garlic, olives and pine nuts.)
- 6. Grill until bottom is crispy and cheese is melted.
- 7. Sprinkle with olive oil and crushed red pepper.
- 8. If dough cooks too quickly, place under the broiler for 5 minutes to melt cheeses.

This appetizer was inspired by a lunch I had with Gone Fishin at The Spa at Lake Austin. The flat bread I used was Croccantini, large, thin crackers I found at Whole Foods. We served this one night for appetizers to good friends while sipping wonderful wine!

- In a pan saute onions in oil till a caramel color, set aside to cool completely.
- Preheat oven to 450 degrees.
- Roll out dough on a floured surface to 1 inch thick. You can make it round or square all a matter of taste.
- Place on a pan that is dusted with corn meal.
- Spread a thin coat of olive oil on dough.
- Arrange goat cheese, figs cut side up, cooled onions around on crust.
- Top with mozzarella cheese and sprinkle with rosemary.
- Place in oven and bake for 15-20 minutes.
- ALTERNATE method:.
- If grilling preheat grill to medium high.
- Oil one side and place on a clean oiled grill and grill for 4-5 minutes.
- Flip and then lightly spread olive oil on dough.
- Arrange goat cheese, figs cut side up, cooled onions around on crust.
- Top with mozzarella cheese and sprinkle with rosemary.
- Cook a couple more minutes.

- Preheat your grill to 350 degrees creating direct and indirect grilling zones (on a charcoal grill, this means pushing the coals to one side so, on a gas grill this means one burner on high/two off). By using the indirect heat side of the grill, it will simulate a “pizza oven”.
- While the grill is heating, slice the onions in medium thick rings. Next, oil the grill grates with canola oil so the onions and pizza will not stick.
- Grill the onions on direct (on top of the coals or burner with gas on) heat for 4-5 minutes per side, or until they being to develop nice deep char marks. Baste the onions with balsamic vinegar as they grill to help them caramelize on the grill.
- Once the onions are done, pull them off and put them on a cutting board where they can cool. Once they cool, cut them into smaller pieces.. Meanwhile, roll out your pizza dough on a well-floured cutting board.

- Add the yeast, salt, sugar, olive oil and water to the bowl of a food processor fitted with a metal blade. Add all the flour at once, and run the processor until the dough comes together.
- Transfer the dough to a large food container with a lid (not airtight). Cover and allow to rest at room temperature for approximately two hours. Dough is now ready to be used, although is much easier to handle when chilled. Refrigerate in a lidded container and use over the next 12 days.
- Heat a grill on high. Spray grates with cooking spray. You will need to roll the dough out on some sort of flat sheet without an edge on it, like a cookie sheet without a lip. Flour the cookie sheet, and pull off about 1/3 of your dough. Sprinkle dough with flour. Initially flatten using hands, then use a rolling pin to roll out to about 1/3" thickness. Shake your cookie sheet to make sure that the dough can easily slide around. If not, loosen, and add a bit more more flour under dough.
- Turn the grill down to low heat. Use your cookie sheet to transfer the dough to your grill using a back-and-forth motion. Spray the surface of the dough with cooking spray. Allow dough to cook for 5 minutes, then flip using tongs, and continue grilling for 3-5 minutes, until slightly puffed up and cooked through. Slide cookie sheet underneath to remove.
