SALSA VERDE: GREEN TOMATILLO SALSA

Salsa Verde: Green Tomatillo Salsa image

Provided by Food Network

Categories     condiment

Time 25m

Yield about 1 cup

Number Of Ingredients 5

8 ounces (5 to 6 medium) tomatillos, husked and rinsed
Fresh hot green chiles, to taste (roughly 2 serranos or 1 jalapeno), stemmed
5 or 6 sprigs fresh cilantro (thick stems removed), roughly chopped
Scant 1/4 cup finely chopped onion
Salt

Steps:

  • Whether you choose the verdant, slushy, herby freshness of the all-raw tomatillo salsa or the oil-colored, voluptuous, sweet-sour richness of the roasted version, tomatillos are about brightening tang. The buzz of the fresh hot green chile adds thrill, all of which adds up to a condiment most of us simply don't want to live without.
  • For the All-Raw version: Roughly chop the tomatillos and the chiles. In a blender or food processor, combine the tomatillos, chiles, cilantro and 1/4 cup water. Process to a coarse puree, then scrape into a serving dish. Rinse the onion under cold water, then shake to remove excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.
  • For the Roasted version:
  • Preheat a broiler.
  • Roast the tomatillos and chiles on a baking sheet 4 inches below a very hot broiler until darkly roasted, even blackened in spots, about 5 minutes. Flip them over and roast the other side, 4 to 5 minutes more will give you splotchy-black and blistered tomatillos and chiles. In a blender or food processor, combine the tomatillos and chiles, including all the delicious juice that has run onto the baking sheet. Add the cilantro and 1/4 cup water, blend to a coarse puree, and scrape into a serving dish. Rinse the onion under cold water, then shake to remove the excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.

GREEN (UN-RIPE) TOMATO SALSA FOR CANNING

Green (Un-Ripe) Tomato Salsa for Canning image

Summer heat came late and left a bit early this year...leaving lots of green tomatoes! This "throw together" green tomato salsa was declared "the best salsa I've ever had" by my brother-in-law. Cooking time includes canning process.

Provided by yogiclarebear

Categories     Peppers

Time 1h30m

Yield 8 pints

Number Of Ingredients 14

5 lbs green tomatoes, chopped small (as you prefer for salsa)
6 yellow onions, chopped (4 cups)
3 jalapenos, chopped with seeds (1/2 cup)
4 large red bell peppers, chopped (2 cups)
6 garlic cloves, minced
1 cup fresh cilantro, chopped
1 cup lime juice
1/2 cup vinegar
1 tablespoon salt
1/2 tablespoon cumin
1 tablespoon dried oregano leaves
2 teaspoons pepper
1/4 teaspoon cayenne (optional, to taste)
1 -2 teaspoon sugar

Steps:

  • Combine everything in a large pot, mixing well. Bring to a boil, reduce heat to simmer, and cook for 30-40 minutes, stirring occasionally.
  • To continue canning, bring salsa to a boil.
  • Ladle salsa into hot sterile jars, leaving 1/2 inch headspace. Wipe lids and jar edges clean before finger tightening lids and placing them back in the boiling canning pot.
  • Process (boil) jars for 15 minutes.
  • Remove carefully and let sit for 24 hours. Check lids for seal, and refrigerate any unsealed jars.

EL POLLO LOCO GREEN SALSA RECIPE

El Pollo Loco Green Salsa Recipe image

You are not limited to use this Ell Pollo Loco green salsa on tacos and burritos. Many people use this el pollo loco green salsa recipe to create a dip for parties and get-togethers. However, you can also use this salsa for family gatherings and in your cooking! The fresh flavors are unique and can make a dish pop. For example, you can sprinkle some of this el pollo loco green salsa recipe on top of authentic Mexican yellow rice to bring color and flavor. The salsa is usually not spicy or hot, but you can add peppers and other seasonings to intensify the flavor.

Provided by Just Mexican Food

Categories     Side Dish

Time 10m

Number Of Ingredients 7

3 Large Hass Avocados (without the peel)
2 1/2 Cups of Water
3 Jalapenos (finely Chopped)
1 Cup of Fresh Cilantro
2 tbsp. of Salt
2 tsp. of Olive Oil
1 Yellow Onion

Steps:

  • The first step in this el pollo loco green salsa recipe is to cut the vegetables. You can save the seeds and add them to the salsa if you want more of a kick. However, discard the jalapeno pit. Add the vegetables to the food processor first and blend until smooth, but without the texture of liquid.
  • After the vegetable mixture is blended/processed, add the rest of the ingredients and process them. This step should take less then five minutes. Make sure that the salsa mixture is thick and like liquid. It should not be smooth or sticky like a paste.
  • Since the ingredients do use perishable items like vegetables, it is important to properly store the salsa. You should choose containers that have a tight lid. If your containers do not have a tight lid, air can get inside the container and spoil the salsa fast.
  • For this step, you can use a spoon or a funnel to pour the salsa into containers. You can also use the salsa immediately in a dish or as a side with chips/tortillas.

  • OPTIONAL FOR CHARRED SALSA: Preheat a grill or grill pan over medium-high heat (see note if using oven). Lightly oil the grates to prevent sticking. In a large bowl, toss the tomatillos, poblanos and jalapeno and with oil. Place the vegetables on the hot grill. Grill vegetables, turning often, until the skin is charred and the vegetables are tender, about 8-10 minutes. Remove vegetables from the grill and transfer to a plate. Set aside to allow to cool slightly. (Optional – If you don’t like a strong smoky flavor, use your hands or the back of a paring knife to scrape off some of the charred skin and discard.)
  • Prep peppers and onions: Cut off the stems off the peppers and discard. Cut peppers in half lengthwise and remove seeds if you want a mild salsa. Roughly chop the peppers. Set the tomatillos aside.
  • Blend Salsa: Place the onion, peppers and garlic in the bowl of a food processor. Pulse until roughly chopped (about 10 pulses). Add in the tomatillos and pulse again to roughly chop (about 8-10 pulses). Add in the cilantro, lime juice, agave and cumin. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Pulse again until vegetables are broken down, but salsa is still chunky. Taste and adjust for seasoning with more lime juice, cilantro, salt and pepper if desired. Continue to pulse if a thinner salsa is desired.
  • Refrigerate: For best results, cover salsa, transfer to the refrigerator and allow the flavors to marry for at least 30 minutes.

Taste, and if you’d like it hotter add the other 1/2 of the jalapeño and/or some seeds. You may want to refrigerate until serving since the salsa will be warm from the roasting; or leave it at room temperature until serving.
