Juice of 3 limes
2 tablespoons fish sauce
1 tablespoon sugar
1/4 cup peanut oil
2 fresh Thai bird chiles, minced with seeds
4 scallions, sliced 1/8-inch, white and green separated
1/4 cup chopped roasted peanuts
4 cups green papaya julienne (2 papayas) peeled and seeded
Salt and black pepper to taste
12 large shrimp, peeled and de-veined, tail on
1 tablespoon sambal oelek
Juice of 1 lime
1/4 cup canola oil
Salt and black pepper to taste

Steps:

  • In a large bowl, mix the juice, fish sauce and sugar. Whisk in the oil and season. Add the chiles, scallion whites and peanuts. Toss in the papaya and check for seasoning. Let stand 20 minutes before serving.
  • SPICY GRILLED SHRIMP: Mix everything together and let marinate for 15 minutes. Season shrimp and place on a hot, oiled grill. Turn frequently and cook for about 8 minutes. PLATING Place a small mound of salad and top with 3 shrimp. Garnish with sliced scallion greens.

Shredded green papaya is paired with Vietnamese coriander and a garlicky lime-and-chile dressing in this refreshing salad.

1 fresh red Thai chile, finely chopped
2 tablespoons Asian fish sauce
2 tablespoons sugar
Juice of 1 lime
2 pounds green (unripe) papaya, peeled and seeded
12 sprigs fresh Vietnamese coriander, leaves and stems separated and stems coarsely chopped, plus sprig for garnish

Steps:

  • Make the dressing: Stir together chile, fish sauce, sugar, lime juice, and 3 tablespoons water in a medium bowl.
  • Make the salad: Thickly shred papaya with a mandoline or box grater. Transfer to a large bowl. Stir in coriander leaves and chopped stems. To serve, drizzle salad with dressing, and toss to combine. Garnish with a sprig of coriander.

3 cloves garlic, peeled
3 Thai green chiles
6 green beans, cut into 1 inch pieces
1 large unripe papaya, peeled and cut into thin strips
1 tomato, halved and seeded
2 tablespoons fish sauce
2 tablespoons lime juice
1 teaspoon palm sugar
2 tablespoons finely chopped unsalted, dry-roasted peanuts

Steps:

  • Combine garlic, chiles, and green beans into a mortar and pound roughly. Add the papaya and pound again, to bruise the ingredients. Stir in fish sauce, lime juice, and sugar and pound again. Ad the tomato and pound to combine. Stir in the chopped peanuts and serve.
  • If you don't have a mortar and pestle, you can make a version of this in your blender or food processor: coarsely chop the garlic, chile peppers, and green beans. Mix in the papaya, and pulse a few times. Mix in the tomato, fish sauce, lime juice, and sugar. Pulse to combine; salad should still have texture. Transfer to a serving dish and stir in the peanuts.

1 large or 2 medium green papaya (see Cook's Note)
1/2 pound green string beans
4 tablespoons freshly squeezed lime juice
4 tablespoons Thai fish sauce, nam pla
4 tablespoons palm sugar, available in most Mexican, Latin or Asian supermarkets, or substitute brown sugar, or white sugar
2 large carrots (peeled and shredded to the same strip-size as papaya)
1/4 cup loosely chopped cilantro leaves
1/4 cup loosely chopped mint
4 tablespoons dried Thai shrimp, optional
2 to 4 Thai chiles also called prik chiles, minced
1/4 cup unsalted peanuts, toasted and lightly crushed
Jeff's Thai Grilled Shrimp, recipe follows
Jasmine sticky rice, or steamed vermicelli rice noodles, optional, as an accompaniment
1/2 cup Thai sweet chili and garlic sauce (recommended: Mae Ploy now available in most grocery stores)
1/4 cup hoisin sauce
2 cloves garlic, finely minced
1/4 cup ponzu sauce, or substitute the juice of 1 lime
1 1/2 teaspoons soy sauce
Splash Thai fish sauce, nam pla
1 teaspoon sriracha sauce
1 teaspoon curry powder
1 teaspoon ground ginger
4 or 5 sprigs mint, leaves removed and finely chopped, or substitute Thai basil
Handful cilantro leaves, finely chopped
3 pounds large shrimp

Steps:

  • Peel the papaya (I use a standard vegetable peeler), then slice papaya in half and scoop out black, slippery round seeds and some of the stringy flesh, but be careful not to scoop into good, firm flesh for the salad. Shred the papaya on a mandoline or a box grater. Set aside. Snip off the tips of the green beans. Bring a large pot of water to a boil over medium heat and add the beans. Cook until crisp tender, about 3 to 4 minutes. Drain and quickly add the beans to ice water. Cut the beans in half, about 2-inches in length and add them to a large bowl. In a large mixing bowl whisk the lime juice, fish sauce, and sugar, until the sugar is dissolved. Mix in the shredded papaya, green beans and carrots until well coated (I like to use tongs for this). Toss in the cilantro, mint, and dried shrimp. Then mix in the hot chiles, to taste. Let salad stand for 20 minutes or up to 2 hours, covered in the refrigerator.
  • Before serving, mix in most of the crushed peanuts, reserving a few tablespoons for garnish. When serving, mound the salad in center of a plate and sprinkle the remaining peanuts on top. The dish can be served on its own, or with Thai Grilled Shrimp and Thai jasmine or sticky rice, or with steamed vermicelli-rice noodles.
  • Preheat grill to medium heat. In a large bowl whisk all the marinade ingredients together. Add the shrimp and let marinate for up to 1 hour. Grill the shrimp 4 to 6 minutes each side until they begin to curl, get pink in color and firm up. Do not over cook or they will get rubbery. Brush the shrimp with the marinade during grilling. Put the remaining marinade in a small saucepan and bring to boil over high heat. Cook the marinade for at least 2 minutes and serve it as a sauce on the side. Serve the shrimp with the papaya salad. Cook's Note: This marinade/sauce is great with chicken thighs and pork tenderloin. If using chicken or pork then double the marinade recipe, marinate for 4 hours, and grill accordingly.

16 whole large shrimp deveined and shelled
Olive oil
Salt and freshly ground pepper
1 pound arugula
2 ripe papayas, peeled, pitted and thinly sliced
4 green onions, finely sliced
Grilled shrimp (above)
2 tablespoons fresh lemon juice
2 tablespoons fresh lime juice
1 tablespoon soy sauce
1 small jalapeno pepper, finely diced
1/4 cup olive oil
1/2 cup peanuts, coarsely chopped
2 tablespoons finely chopped cilantro

Steps:

  • Preheat grill. Brush the shrimp with olive oil and season with salt and pepper, to taste. Grill the shrimp until just cooked, about 2 to 3 minutes. Remove and let sit.
  • Arrange the arugula on a large platter. Top with the papaya and green onion. Whisk together the lemon and lime juice, soy sauce, jalapeno and olive oil until combined. Mound all of the shrimp in the center of the platter. Drizzle with the vinaigrette and sprinkle with peanuts and cilantro.

3 tablespoons soy sauce
1/4 cup sesame oil
1/8 cup rice wine vinegar
1 tablespoon ground white pepper
1/4 teaspoon cayenne pepper
Juice of 1 fresh lime
3 tablespoons sesame seeds, toasted
2 small green papayas , julienned on mandoline or regular papaya diced small
1 small red onion, small dice
1 red pepper, small dice
4 scallions, finely chopped
1/4 bunch of cilantro, finely chopped

Steps:

  • In a small bowl, whisk together all the dressing ingredients. Place salad ingredients in bowl, pour dressing over top and mix well. Season to taste. The salad will hold up in the refrigerator up to 24 hours. Serve at room temperature.

1 large or 2 small cloves garlic, peeled
1/4 teaspoon salt
1 tablespoon dry-roasted salted peanuts, more for garnish
2 fresh bird chilies or serrano chilies, sliced
1/2 teaspoon raw sugar or white sugar
1 tablespoon dried shrimp (optional)
2 tablespoons fresh lime juice
1 to 2 tablespoons fish sauce (nam pla), to taste
2 plum tomatoes, 1 large round tomato, or 8 grape tomatoes, coarsely chopped
1/2 pound long beans, trimmed and cut into 1 1/2-inch lengths (optional)
1 small to medium green (unripe) papaya (see Note)
Lettuce for serving (optional)

Steps:

  • In a blender or mortar, blend or pound garlic, salt, peanuts, chilies, sugar and shrimp (if using) into a paste. Transfer to a large bowl and mix in lime juice and fish sauce. Use a spoon (or the mortar) to lightly crush tomatoes and beans (if using), then add to bowl and mix lightly.
  • Peel and coarsely grate or shred papaya, discarding seeds and inner membrane. There should be 4 to 6 cups.
  • Add papaya to bowl and lightly but thoroughly toss together. Taste for seasoning. Mound in a bowl (if desired, line bowl with lettuce leaves beforehand). Sprinkle with peanuts and serve.

1 large garlic clove, forced through a garlic press
3 tablespoons fresh lime juice
1 1/2 tablespoons Asian fish sauce (preferably nuoc mam)
1 tablespoon sugar
1 small thin fresh red or green Asian chili (1 to 2 inches long) or serrano chili, or to taste, seeded and chopped fine (wear rubber gloves)
3/4 pound green papaya, peeled, seeded, and coarsely shredded, preferably in a food processor (about 3 cups)
1 carrot, shredded fine
1/3 cup fresh coriander leaves, washed well and spun dry
2 tablespoons roasted peanuts, crushed

Steps:

  • In a small saucepan of boiling salted water cook shrimp 45 seconds to 1 minute, or until cooked through. In a colander drain shrimp and rinse under cold water to stop cooking. Halve shrimp horizontally and devein.
  • Make dressing:
  • In a large bowl whisk together dressing ingredients until sugar is dissolved.
  • Add shrimp, papaya, carrot, and coriander to dressing, tossing well. Salad may be made 2 hours ahead and chilled, covered. Bring salad to room temperature before serving.
  • Serve salad sprinkled with peanuts.
