GREEN BEANS WITH DICED HAM, ONIONS & RED PIMENTOS

Green Beans With Diced Ham, Onions & Red Pimentos image

You can use fresh or canned green beans, drained. Dressed up with the title ingredients or add slivers of water chestnuts right before serving.

Provided by Montana Heart Song

Categories     One Dish Meal

Time 25m

Yield 4-6 serving(s)

Number Of Ingredients 9

4 -6 cups fresh green beans, ends snapped 2 inch lengths
1 -2 cup diced ham, fresh or 1 -2 cup cooked diced ham
1 tablespoon margarine or 1 tablespoon butter
3/4 cup chopped white onion
2 teaspoons diced pimentos
1 1/2 cups water
1/8 teaspoon celery seed
salt and pepper
1/2 cup slivered water chestnut (optional)

Steps:

  • In medium saucepan, add all ingredients except the salt and pepper.
  • Cook on medium low heat uncovered.
  • Stir with a spoon from time to time.
  • Gas stoves seem to be hotter than electric ones so watch that the liquid does not evaporate. When the beans are soft, sprinkle with salt and pepper to taste.
  • Toss a few times to mix. You may use salt substitute or Mrs. Dash Herb and Spice Mixture.
  • I serve with biscuits and mushroom gravy.
  • Note: If you use canned green beans, do not drain, add 3/4 cup water. Do not use the 1 1/2 cups of water. Add all of ingredients and cook until onion is soft.
  • Do not add salt, just pepper as the juice tends to be salty.

SIMPLE GREEN BEANS WITH HAM

Simple Green Beans with Ham image

Green beans with amazing flavor are also super easy. This is a very simple side dish that takes its flavor from the ham used and the lengthy cooking time. If Grandma didn't have ham on hand she would substitute bacon.

Provided by Kathie Carr

Categories     Vegetables

Time 10m

Number Of Ingredients 7

2 lb fresh green beans
1/4 lb cooked ham, cubed or in strips (or cooked bacon)
1 onion, chopped
1 tsp sugar
3 1/2 c water
black pepper to taste
you might need salt but check as ham can be very salty

Steps:

  • 1. Rinse beans, snip off ends and and slice to desired length. Place beans in pot with ham, onion, sugar, pepper, and water. Bring to a boil and then turn down heat to a simmer, cover pot, and cook for 1 hour on low.
  • 2. Remove cover from pot. Turn heat up to medium and cook for about 20 minutes more or until liquid is reduced to a thick sauce you will serve with beans. Grandma often served these with a slice of ham and corn bread.

  • Steam green beans in a large pot lined with a steamer basket and filled with water to the bottom of the basket (alternately, you can boil the beans in a large pot filled with about 3 quarts of salted water). In both cases, you'll want to cook just until crisp-tender: bring water to a boil, add beans, and cover and cook on medium for about 5 minutes, depending on size.
  • Meanwhile, melt 1 tablespoon butter in a skillet over medium-low heat. Add chopped onions and cook, stirring occasionally, until caramelized, 5-8 minutes. Add garlic variation here if using.
  • Add balsamic vinegar and cook a minute before adding the tomatoes, salt, pepper, and dried chili peppers and any optional herbs. Cook another 1-3 minutes, and then remove from heat.
  • Drain the beans when they are done and toss with the remaining butter and more salt and pepper as you'd like.
