GREEN BEANS WITH ONIONS, HAM AND TOMATOES
I created this Italian inspired green beans recipe because I was tired of just plain beans. This has a hint of sweetness due to the red onions and balsamic vinegar and is certainly something different than the norm. I like to prepare this with Roast Beef and roasted potatoes.

HAM AND BEAN TOMATO SOUP
Erin Lembke's take on this hearty classic is a thick tomato-based soup loaded with veggies and well-seasoned with herbs. Cayenne pepper gives it some zip. "I always make up a soup recipe as I go along," Erin writes from Bothell, Washington. "My husband, who doesn't usually care much for soup, really likes this one."

Steps:
- In medium saucepan, add all ingredients except the salt and pepper.
- Cook on medium low heat uncovered.
- Stir with a spoon from time to time.
- Gas stoves seem to be hotter than electric ones so watch that the liquid does not evaporate. When the beans are soft, sprinkle with salt and pepper to taste.
- Toss a few times to mix. You may use salt substitute or Mrs. Dash Herb and Spice Mixture.
- I serve with biscuits and mushroom gravy.
- Note: If you use canned green beans, do not drain, add 3/4 cup water. Do not use the 1 1/2 cups of water. Add all of ingredients and cook until onion is soft.
- Do not add salt, just pepper as the juice tends to be salty.

SIMPLE GREEN BEANS WITH HAM
Green beans with amazing flavor are also super easy. This is a very simple side dish that takes its flavor from the ham used and the lengthy cooking time. If Grandma didn't have ham on hand she would substitute bacon.

- Steam green beans in a large pot lined with a steamer basket and filled with water to the bottom of the basket (alternately, you can boil the beans in a large pot filled with about 3 quarts of salted water). In both cases, you'll want to cook just until crisp-tender: bring water to a boil, add beans, and cover and cook on medium for about 5 minutes, depending on size.
- Meanwhile, melt 1 tablespoon butter in a skillet over medium-low heat. Add chopped onions and cook, stirring occasionally, until caramelized, 5-8 minutes. Add garlic variation here if using.
- Add balsamic vinegar and cook a minute before adding the tomatoes, salt, pepper, and dried chili peppers and any optional herbs. Cook another 1-3 minutes, and then remove from heat.
- Drain the beans when they are done and toss with the remaining butter and more salt and pepper as you'd like.
