Don't let lobster have all the fun! Crab is just as delicious on a buttery toasted bun, especially when amped up with mayonnaise, lemon, Old Bay, and cayenne.

1/4 cup mayonnaise
2 tablespoons fresh lemon juice, plus lemon wedges for serving
Kosher salt
1/4 teaspoon Old Bay seasoning, plus more for serving
1/8 teaspoon cayenne pepper
1 pound jumbo lump crabmeat, drained and picked over
6 tablespoons melted unsalted butter
6 top-split buns
1 head butter lettuce (such as Boston), leaves separated, for serving
Chopped fresh chives and potato chips, for serving

Steps:

  • In a medium bowl, whisk together mayonnaise, lemon juice, 1 teaspoon salt, Old Bay, and cayenne. Gently fold in crabmeat.
  • Heat a large skillet (preferably cast iron) over medium, about 8 minutes. Generously brush top and sides of buns with butter. Place buns, flat-side down, in skillet and toast, flipping halfway through, until crisp and golden on both sides, about 3 minutes. Line inside of buns with 1 to 2 lettuce leaves; divide crabmeat among buns. Drizzle tops with remaining melted butter; sprinkle with chives and more Old Bay. Serve, with lemon wedges and potato chips.

1 pound jumbo lump crabmeat, picked over to remove any shell or cartilage
1 stalk celery, peeled, and cut into 1/8-inch dice
4 teaspoons finely sliced fresh chives
1 teaspoon minced fresh tarragon leaves
1/3 cup prepared mayonnaise
3 tablespoons sour cream
1 teaspoon freshly squeezed lemon juice
1/2 teaspoon Dijon mustard
Kosher salt and freshly ground pepper
Serving suggestions: Toasted hot dog rolls or Boston or Bibb lettuce leaves

Steps:

  • In a medium bowl, lightly toss the crabmeat, celery, chives, and tarragon together.
  • In a small bowl, stir together the mayonnaise, sour cream, lemon juice, and mustard. Add the dressing to the crabmeat mixture and stir until just coated. Season with salt and pepper to taste. If not using right away refrigerate until ready to serve.
  • Serve on toasted rolls or on a bed of lettuce.

If your a fan of egg rolls like I am, give these a try. The asparaus gives them a nice crunch, and the crab meat mixed with the garlic and ginger gives the filling something extra special. The dipping sauces are fun. Beware of the peanut sauce, it's really HOT.

2 cups shredded cabbage
4 carrots, julienned
10 -12 asparagus spears, cut into 1/4 inch pieces
3 -4 scallions, thinly sliced
1 lb lump crabmeat
2 inches ginger, grated
2 cloves garlic, finely minced or grated
2 -4 tablespoons soy sauce
1 tablespoon canola oil
1 teaspoon sesame oil
freshly ground white pepper
20 -25 egg roll wraps
canola oil, for frying
1/4 cup rice wine vinegar
3/4 cup shrimp stock or 3/4 cup vegetable stock (your choice)
1/4 cup dark soy sauce
2 tablespoons minced ginger
2 tablespoons lemons, zest of
2 teaspoons brown sugar, to taste
1 cup apricot preserves
3 -4 tablespoons yellow mustard (can add ½ yellow and ½ Dijon or spicy honey mustard your choice)
1 cup unsalted peanuts
1/4 cup low sodium soy sauce
2 teaspoons red chili paste (I like sambal)
1/2 teaspoon cayenne pepper, to taste
2 tablespoons dark brown sugar
2 limes, juiced
1/2 cup hot water
chopped peanuts, for garnish

Steps:

  • For egg rolls: Heat 1 tbsp canola oil in wok or sauté pan over medium high heat.
  • Add ginger and garlic, toss in oil.
  • Sauté cabbage, carrots and asparagus for 1-2 minutes, to heat through.
  • Add soy sauce, sesame oil and sauté for one minute more.
  • Lower heat to medium and fold in crab meat and scallions.
  • Add white pepper to taste.
  • Keep over heat to warm through.
  • Remove from heat, and let filling cool.
  • Place egg roll wrapper in front of you, point down.
  • Place about 3 tbsp of filling towards the lower half.
  • Roll the bottom up, and the sides in, like an envelope.
  • Fold over and seal the end of the egg roll with a bit of water to keep closed.
  • Repeat until all egg roll wrappers are filled.
  • Heat canola oil in wok or deep frying pan.
  • I fry four egg rolls at a time and use just enough oil to cover the egg rolls about ½ to ¾ of the way over.
  • Heat oil over medium high heat, to about 350 degrees, and fry egg rolls until golden brown on each side.
  • Remove from oil and place on metal wrack or paper towels to drain excess oil.
  • Serve with your choice of dipping sauces.
  • For sweet soy dipping sauce: Combine all ingredients and stir to dissolve sugar.
  • Allow to sit for at least one hour.
  • Can be stored covered in refrigerator for up to 2 weeks.
  • For duck sauce: Combine mustard and apricot preserves.
  • Ready to serve.
  • For peanut sauce: Blend peanuts, soy sauce, chili paste, cayenne pepper, brown sugar, and lime juice until mixed thoroughly, into a paste.
  • Add as much as hot water is needed until sauce is at desired consistency, thinner or thick, depending on taste.
  • Garnish with peanuts.

2 cloves garlic, minced

1 (4 ounce) can sliced black olives
1 head romaine lettuce, separated into individual leaves
½ cup feta cheese, crumbled

Steps:

  • Melt butter in a large nonstick skillet over medium-high heat. Add bell pepper; cook for 2 minutes. Add shrimp and garlic and sprinkle with Greek seasoning. Cook until shrimp are bright pink on the outside and the meat is opaque, 3 to 4 minutes. Remove from the heat and stir in cherry tomatoes, cucumber, and olives.
  • Serve shrimp mixture in romaine leaves and sprinkle with feta cheese.

1/4 cup heavy cream, whipped
2 tablespoons finely grated scallions
2 tablespoons minced parsley

1 lb crabmeat, real or imitation
1/2 lb asparagus, nice thin spears,divided
2 medium fresh scraped carrots, grated
2 medium fresh tomatoes, seeded and diced
1/4 teaspoon dried dill weed
1 teaspoon salt
1/8 teaspoon cayenne pepper
lettuce leaf (iceberg or romaine works well)
100 g pecan halves, divided
kosher salt
cayenne pepper
parmesan cheese, finely grated (optional)
1/2 cup ricotta cheese
2 -3 tablespoons cucumber-dill salad dressing (the thick kind, consistency of mayonnaise)
1 teaspoon sesame oil
1/2 lemon, juice of
1/4 teaspoon dried dill weed
1/8 teaspoon cayenne pepper
1/2 teaspoon salt

Steps:

  • Combine all dressing ingredients in food processor or blender; blend until smooth and the consistency of a mayonnaise based dip.
  • Cover and set aside in the refrigerator.
  • Pour the pecan halves on a tray and toast, 7 or 8 minutes; remove from oven and sprinkle with kosher salt and cayenne pepper to taste.
  • Set aside to cool, when cool, coarse chop 1/4 cup, leave the rest whole.
  • Break tough ends off asparagus; steam for 3 minutes, just until tender crisp, there should be lots of crunch left.
  • Plunge into ice water; slice all but 12 spears into 1/4 inch pieces.
  • Scrape the carrots and grate, seed and dice the tomatoes.
  • Rinse the crabmeat and thourghly dry on paper towel, squeezing out the moisture.
  • (If using imitation, chop into small pieces.) Combine crabmeat, chopped asparagus, grated carrots, diced tomatoes, chopped pecans, dried dill weed, salt and cayenne pepper; mix well.
  • Add 1/2 of the dressing to the crabmeat mixture.
  • Use only enough dressing to hold the mixture together.
  • The mixture should be fairly dry, not runny.
  • Reserve the rest of the dressing to use as a dip for the lettuce rolls.
  • Wash and separate lettuce leaves, dry as much as possible, best dried in a spinner.
  • Place 1 to 2 tablespoons of crabmeat mixture in lettuce cup and roll as tightly as possible appetizer size, use toothpicks if necessary, or leave open if you wish.
  • Repeat until all filling mixture is used.
  • Place on serving platter and sprinkle with grated Parmesan cheese, if using.
  • (I like to grate the Parmesan with my zester grater because it makes nice fine fluffy strings.) Place a pecan half on top of each roll.
  • Garnish the platter with more pecan halves and the 12 reserved asparagus spears.
  • Serve chilled at least one hour.
  • The lettuce rolls can be made larger for luncheon use etc.
  • ,or they can be served with crabmeat mixture in a bowl and the lettuce cups separate for each diner to fill themselves, serve extra asparagus and pecan halves on the side.

This melt-in-the-mouth tart can be served as a main course, or as a brilliant starter for eight served with a green salad

300g ready-made shortcrust pastry
25g butter
25g plain flour
300ml milk
freshly grated nutmeg
2 good pinches chilli powder
200g white crabmeat , fresh or frozen and defrosted
140g asparagus tips
3 eggs , separated
3 tbsp finely grated parmesan

Steps:

  • Heat oven to 200C/180C fan/gas 6. Roll out pastry and line a 25cm tart tin. Line the case with greaseproof paper and fill with baking beans. Bake for 15 mins, then remove paper and beans and cook for 5 mins more. Trim off excess pastry. Reduce oven to 190C/170C fan/gas 5.
  • Melt the butter in a non-stick pan, stir in the flour and cook for 1 min. Gradually add the milk, stirring all the time until the sauce is smooth and glossy. Add nutmeg, chilli and salt and leave to cool slightly.
  • Flake up the crabmeat and add to the sauce. Blanch the asparagus for 3 mins, drain well and cool under cold running water. Pat dry with kitchen paper and scatter over the pastry case.
  • Stir the egg yolks into the sauce. Whisk the whites until stiff, then fold into the sauce in 3 batches. Spoon into the tart case and sprinkle with Parmesan. Bake for 30-35 mins until puffed and golden.
