Blackberry Puree
4 c. Fresh Blackberries
1/2 c. Sugar
1 whole Lime, Juiced
LIME SUGAR
1 c. Sugar
Zest Of 3 Limes
MARGARITAS
2 c. Tequila
1/2 c. Triple Sec
2 whole Limes, Juiced
1/4 c. Sugar (optional)

Steps:

  • Put the blackberries, 1/2 cup sugar, and juice of 1 lime in a saucepan. Bring it to a boil, stirring constantly, then reduce the heat and simmer for 20 to 25 minutes until thick. Strain through a fine mesh strainer, pressing to get all the liquid out, then place the liquid in the fridge and chill until cold.To make the lime sugar, zest the 3 limes and lay out on a paper towel to dry for 30 minutes. Add the zest to 1 cup of sugar and mix together. Rub a lime wedge around the rims of margarita glasses and dip in the sugar to coat.To make the margaritas, fill a blender with ice. Add half the tequila, half the triple sec, the lime juice, and half the blackberry puree. Add a little more sugar if desired. Blend until totally combined and serve. Repeat with another blender full of ice, the rest of the tequila, triple sec, and blackberry puree!These are utterly delicious!

2 pints fresh blackberries
1/4 cup sugar
Juice of 1/2 lime
2 cups sugar
Zest of 3 limes
1 lime wedge
2 cups tequila
1/2 cup triple sec
1/2 cup sugar
2 limes
Ice

Steps:

  • For the puree: Add the blackberries to a medium saucepan with the sugar and lime juice. Cook over low heat, covered, 20 to 25 minutes. Strain using a fine mesh strainer, pressing the berries to extract as much juice/puree as possible. Place in the fridge to cool completely.
  • For the lime sugar: Mix together the sugar and lime zest. Use a piece of lime to moisten the rim of each margarita glass, and then dip in the lime sugar.
  • For the margaritas: In a blender, add 1 cup of the tequila, 1/4 cup of the triple sec, 1/4 cup of the sugar, and the juice of 1 lime. Fill the blender with ice and blend until smooth. Then add as much blackberry puree as desired, 1/3 to 1/2 cup. Pour into 4 rimmed glasses and serve immediately. Repeat with the rest of the ingredients for the other 4 glasses.

1 lime, zested and juiced
Orange Simple Syrup, recipe follows
1/2 cup granulated sugar
1 lime, cut into 4 wedges, plus additional lime wedges, for garnish
8 ounces silver tequila
Blackberries, for garnish
1/2 cup granulated sugar
1 orange, zested and juiced

Steps:

  • For the blackberry-lime ice cubes: Add the frozen blackberries, lime zest and juice and Orange Simple Syrup to a blender and puree until smooth. Pour into an ice cube tray with sixteen 1-ounce wells, put on a baking sheet and freeze until solid, at least 2 hours.
  • For the blackberry-lime margaritas: Put 2 tablespoons sugar onto a small plate. Run a lime wedge around the rim of a rocks glass and dip the rim into the sugar to coat. Repeat with the remaining lime wedges and sugar with 3 more rocks glasses.
  • For each drink, put 4 blackberry-lime ice cubes in a blender with 2 ounces silver tequila and 1 cup regular ice and blend until smooth. Pour the margarita into one of the prepared glasses. Repeat with the remaining ingredients. Garnish each glass with fresh blackberries and a lime wedge.
  • Special equipment: an ice cube tray with sixteen 1-ounce wells
  • Make the simple syrup by combining the sugar, orange zest and juice and 1/2 cup water in a small saucepot. Heat over medium-low heat, stirring, until the sugar has completely dissolved, 3 to 4 minutes. Set aside to cool.

1/3 cup honey
1 cup tequila
1/4 cup orange liqueur (I prefer Cointreau)
1/4 cup freshly squeezed lime juice
2 cups ice
Kosher salt (lime wedges, and frozen blackberries for garnish)

Steps:

  • Place the blackberries, honey, tequila, orange liqueur, lime juice, and ice in a blender. Blend on high speed until very smooth.
  • Rim the edge of six glasses with a lime wedge. Then dip each into kosher salt. Pour the margarita into the prepared glasses. Garnish with a lime wedge and frozen blackberries. Serve immediately.

12 ounces limeade, frozen juice concentrate
8 ounces tequila
4 ounces triple sec
6 ounces mixed berries, partially frozen
36 ounces ice

Steps:

  • Put frozen juice concentrate into a blender.
  • Pour tequila into the empty juice concentrate can filling it 1/2 to 3/4 of the way depending on how strong you want them; pour into the blender.
  • Pour Triple Sec into the empty juice can filling 1/4-1/3 of the way; pour into the blender.
  • Add the partially thawed berries to the blender.
  • Blend until smooth.
  • Fill the juice concentrate can with ice; add to the blender and pulse blend.
  • Repeat the ice step two more times for a total of 3 cans of ice.
  • Blend to perfection -- place a drink in your hand and your toes in the sand.
