ANCHO CHILE-MEXICAN CHOCOLATE COOKIES
Steps:
- Preheat oven to 350 degrees F. Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, chile powder, baking soda and salt. Set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, beat the butter on medium-high speed until light and creamy, about 1 minute. Add the brown and granulated sugar and beat until slightly fluffy, about 2 minutes, scraping down the sides of the bowl with a rubber spatula as needed. Add the egg and vanilla and beat until well combined.
- Reduce the mixer speed to medium-low, add half the flour mixture, and beat until just combined, then add the remaining flour mixture and beat until the mixture just comes together, 1 to 2 minutes, being careful not to overmix. Add the chocolate chunks and pepitas and beat on low until just combined.
- Use a 2-ounce ice cream scoop or a 1/4 cup measuring cup to scoop the cookie dough onto the prepared baking sheets, making about 14 cookies total and leaving at least 2 inches between each cookie.
- Bake until the edges of the cookies are crisp but the centers are still tender, about 15 minutes, rotating the baking sheets top to bottom and front to back halfway through the baking time. Remove from the oven, set the baking sheets on wire racks, and let the cookies cool completely on the pans. They should keep up to 5 days in an airtight container.
ANCHO CHILE MAYONNAISE

- In a small bowl, combine the chiles julienne and the vinegar and leave to soak for 1 hour. Meanwhile, in a small heavy skillet heat the oil over medium heat. Add the onion and saute, stirring occasionally, for 6 to 7 minutes, or until translucent. Add the garlic and the cumin and cook for about 2 minutes more, until the garlic has released its aroma. Remove from the heat and cool to room temperature. In a large bowl, combine the vinegar and chile mixture, the salt, pepper, and egg yolks. With a balloon whisk, whisk together until completely smooth, then continue whisking as you drizzle in the olive oil, very slowly at first, whisking until all the oil is absorbed and the mayonnaise is emulsified. Transfer to a bowl and stir in the onion-garlic mixture. Cover and refrigerate if not using right away, for up to 1 week.
ANCHO CHILE CHOCOLATE BROWNIE

- Preheat oven to 375 degrees. Melt chocolate and butter in double boiler, add sugar, brown sugar, eggs and vanilla. Place chocolate mixture in a mixing bowl and fold in flour, salt and baking powder. Add pecans and chile powder. Pour mixture into a deep 9 by 13 greased pan and bake in oven for 1 hour or until toothpick inserted in center comes out clean. Cut into 3-inch squares. Serve with Cajeta Sauce, cinnamon ice cream, and sifted cocoa powder.
- Stir together the milk, sugar, corn syrup, and cinnamon stick in medium size heavy pot or Dutch oven. Bring to a boil. Dissolve the baking soda in 1 tablespoon water, remove the milk from the heat, and stir in the soda mixture, having a spoon ready to stir the mixture down if it bubbles up. Cook, stirring frequently, over medium heat, until the mixture thickens into a pale-gold syrup, about 25 minutes. At this point, begin stirring very frequently as the mixture thickens into a caramel-brown syrup that's the consistency of maple syrup, about 10 minutes more. Strain the cajeta sauce through a fine mesh strainer set over a large measuring cup. Let cool for a few minutes, then stir in the sherry, rum or brandy (plus a little water, if necessary, to bring it to 1 1/2 cups). Refrigerate covered. When cold, the cajeta sauce should have the consistency of thin corn syrup.

- Preheat the oven to 350°F.
- Lightly grease a 8 x 8 pan.
- Using a spoon, stir eggs with 3/4-cup sugar and 1 teaspoon vanilla; add melted butter.
- Sift ground chocolate with flour, baking powder, and salt.
- Stir into egg mixture; add nuts.
- Stir in chips. Spread into greased pan.
- Bake 20 to 30 minutes.
- For chewy brownies, use 8" pan and shorter baking time.
- For cake-like brownies, use 9" pan and longer baking time.
- Cut into squares.

Ancho Chiles The word ancho means "wide" in Spanish. It is the dried form of the poblano chile. In the dried form it is very dark in color and has a deep rich but sweet taste and is not a very hot chile. In the States many markets called the Ancho chili a Pasilla but that is not correct. The ancho is part of the "holy trinity" of chiles used to make traditional "mole" sauces. Ancho Paste You can use this chile paste as a soup starter, meat rub or add to stir-fry, potatoes, sauces or try making an ancho compound butter.

- Cover ancho peppers with boiling water and let sit for 15 minutes.
- Cook the bacon in a stock pot on medium heat until crisp. Remove with slotted spoon and reserve.
- Add carrot, onion, peppers, cumin and garlic to pot. Stir and let brown. While browning drain the ancho peppers and seed and chop them. Add the ancho peppers to the pot with the carrot melange and continue browning.
- Pour the chicken broth into the pot and deglaze the pan. Add the potatoes and salt, bring to a boil, cover and simmer 15 minutes or until potatoes are tender. Add the chicken, bring back to simmer, cover and cook 10 minutes more.
- Combine the flour and the milk with a whisk. Add to the pot and stir until soup thickens, about 10 more minutes. Remove from heat.
- Stir in the cheeses until melted. Taste to adjust the seasonings. To serve, sprinkle with chopped green onion.
- Store in freezer. Store onion in refrigerator.
- Reheating instructions: Thaw overnight in refrigerator. Heat on the stove in a pot very slowly. Don't let it come to a complete boil. Or heat in the microwave until warmed through.
- Serve with fresh tortilla chips or crusty bread.

ANCHO CHILE PORK CHOPS
Spicy broiled or grilled marinated pork chops. I came across this recipe when I wanted to use up some ancho chilies and this fit the bill perfectly. If you want it spicier you may want to add another chili to the marinade mixture. Recipe adapted from Cooking Light (March, 2003). Prep time does not include marinating time (8 hours). Cook time is grilling or broiling time.

- Remove stems and seeds from chilies.
- Tear chilies into pieces.
- Spray a skillet with Pam and heat over medium heat.
- Add chili pieces and cook for 15 seconds, stirring so chilies do not burn.
- Add garlic and cook 2 minutes.
- Add broth- allspice to chili/garlic mixture in skillet.
- Stir in 1 tablespoon vinegar.
- Bring to a boil and reduce heat to low.
- Let mixture simmer for 5 minutes.
- Remove from heat.
- Place (cooled) mixture in blender or food processor and process until smooth using on/off turns.
- Heat skillet over medium-high heat and add chili/spice mixture and cook 5 minutes, stirring constantly.
- Remove from heat.
- Stir in sugar, salt, remaining 1 tablespoon vinegar and lemon juice.
- Put pork chops in marinating dish or zip-lock bag.
- Pour chili sauce over chops.
- Refrigerate marinated chops for up to 8 hours.
- Spray broiler rack with Pam or prepare grill (spray grill with Pam for easier clean up) for grilling chops.
- Remove pork chops from dish and prepare grill or preheat broiler.
- Spray broiler rack or grill with Pam.
- If grilling, grill for 5-10 minutes each side, basting with marinade.
- Time depends on degree of doneness desired and thickness of chops.
- If broiling, brush chops well with marinade.
- Broiler rack should be 6-inches below heat.
- Broil for 5-10 minutes per side (brush with marinade when turning chops) depending on degree of doneness and thickness of chops.
