BEANS AND GREENS BRUSCHETTA WITH BROILED GOAT CHEESE

- Preheat the oven to 350 degrees F.
- Arrange the bread slices in a single layer on a baking sheet and drizzle with the olive oil. Transfer to the oven and toast until just crisp, about 10 minutes. Set aside.
- Preheat the broiler; position a rack in top third of the oven.
- Bring a large pot of water to a boil. Add the broccoli rabe and cook until al dente, 4 to 5 minutes. Drain and rinse with cool water.
- Transfer the broccoli rabe to a food processor and add cannellini beans, garlic, shallot, oregano, and salt and pepper to taste. Pulse to roughly chop. Transfer to a bowl, add 2 to 4 tablespoons of the goat cheese, and bind together with hands.
- Top each piece of toast with a heaping tablespoon of the beans-and-greens mixture and then with about 2 tablespoons of the remaining goat cheese. Broil until the cheese is golden, about 2 minutes. Serve warm.

- Adjust oven rack to lowest position and heat oven to 475 degrees. Combine green beans, 1 1/2 tablespoons oil, sugar, 3/4 teaspoon salt, and 1/2 teaspoon pepper in bowl. Evenly distribute green beans on rimmed baking sheet. 2. Cover sheet tightly with aluminum foil and roast for 10 minutes. Remove foil and continue to roast until green beans are spotty brown, about 10 minutes longer, stirring halfway through roasting. 3. Meanwhile, combine garlic, orange zest, and remaining 1/4 cup oil in medium bowl and microwave until bubbling, about 1 minute; let steep for 1 minute. Whisk orange juice, lemon juice, mustard, 1/4 teaspoon salt, and 1/4 teaspoon pepper into garlic mixture. 4. Transfer green beans to bowl with dressing, add chives, and toss to combine. - Heat vegetable oil in large non stick skillet or wok. Add frozen beans.
- Pour on chicken broth and mix. Cover and cook at medium-high heat for 5 to 7 minutes or until desired tenderness. Transfer beans to a large bowl and set aside.
- Stir fry onions and peppers for 5 minutes. Add to beans and toss.
- In a separate bowl whisk together olive oil, lemon juice and peel,oregano, garlic and mustard. Season with salt and pepper. Pour over beans and toss to coat.
- Just before serving sprinkle with crumbled goat cheese.

GREEN BEANS WITH GOAT CHEESE AND ROASTED PEPPERS

- Wash and cut the ends off the green beans. Set aside. Wash and seed the red bell pepper. Cut into 1" wide strips. Place on grilling grid, skin side up, under low broiler. Broil until skins begin to blacken unevenly. Remove from heat. Set aside. Heat olive oil in a small sauté pan. Toast pine nuts until golden brown, over low heat. Cool on paper towel. Set aside. Steam the green beans until cooked but still bright green. Drain off all water, and return beans to the hot pan. Add the goat cheese and toss until cheese melts and coats green beans. Cut pepper strips into bite-sized pieces, and toss with green beans. Add Pine nuts, toss lightly. Serve hot.

- Start by washing and breaking the green beans into bite size pieces. Since everything will be cooked in a grill pan, it's important to keep everything in large enough pieces that they don't fall through the pan and into the bottom of the grill.
- Cut the red pepper lengthwise into bite-sized pieces, slice the shallot into long thin pieces, and thinly slice the garlic. Put the green beans, pepper, shallots and garlic into a large bowl.
- In a small bowl mix 1 tbsp of the lemon juice, the olive oil, 1/2 tsp of salt, ground pepper, and smoked paprika together. Pour the lemon juice mixture in with the green beans and mix thoroughly. Let everything sit together for 5 to 10 minutes for the flavors to come together.
- Coat a grill pan lightly with oil and place it on a medium grill. Let the pan warm up for few minutes before adding the beans to the pan. Once you add the beans to the pan, you'll want to mix everything up with tongs every five minutes or so until everything is cooked through. This helps to even the char out among the beans.
