1 head of kale
1/2 a lemon juiced, or about 2 Tbsp
1 Tbsp olive oil
1/2 tsp sea salt

Steps:

  • Preheat oven to 350F.
  • Pull kale away from stem, wash and pat dry with a clean towel.
  • In a large mixing bowl using your hands, mix the kale, lemon juice, olive oil and sea salt together.
  • Lay kale out in a single layer on a parchment-lined cookie sheet and bake for 15 minutes. Check to see how they're doing. If they're still soft, continue baking, checking every 5 minutes until crispy.
  • Allow to cool and then watch out! You've never eaten a head of kale so fast in all your life.

Steps:

  • Heat oven to 350°F. Move 2 oven racks evenly between top and bottom of oven. Spray 2 cookie sheets with cooking spray.
  • Wash and thoroughly dry kale. In large bowl, beat remaining ingredients with whisk. Add kale; massage with your hands until kale is evenly coated with oil mixture. Place in single layer on cookie sheets.
  • Bake both cookie sheets at the same time 6 minutes. Trade positions of cookie sheets in oven. Bake 6 to 9 minutes longer or until crisp and just beginning to brown. Cool on cookie sheets. Serve warm or completely cooled.

1 tablespoon low-sodium soy sauce
8 ounces kale leaves

Steps:

  • Preheat the oven to 300 degrees F. Line two baking sheets with parchment paper.
  • Whisk the sesame oil and soy sauce together in a large bowl until the mixture looks creamy. Add the kale and toss to coat.
  • Lay about half of the kale out on both baking sheets in a single layer, leaving a little room between leaves. You will need to bake them in batches. Bake in the middle of the oven 6 for 7 minutes, then rotate the sheets and bake until the kale is crispy, another 6 to 7 minutes. Gently transfer it to a platter to cool. Repeat for the remaining kale. Serve once cooled.

1 tablespoon extra-virgin olive oil, divided
1 tablespoon sherry vinegar
1 pinch sea salt, to taste

Steps:

  • Preheat an oven to 300 degrees F (150 degrees C).
  • Cut away inner ribs from each kale leaf and discard; tear the leaves into pieces of uniform size. (I made my pieces about the size of a small potato chip.) Wash torn kale pieces and spin dry in a salad spinner or dry with paper towels until they're very dry.
  • Put the kale pieces into a large resealable bag (or use a bowl if you don't mind getting your hands oily). Add about half the olive oil; seal and squeeze the bag so the oil gets distributed evenly on the kale pieces. Add the remaining oil and squeeze the bag more, until all kale pieces are evenly coated with oil and slightly 'massaged.' Sprinkle the vinegar over the kale leaves, reseal the bag, and shake to spread the vinegar evenly over the leaves. Spread the leaves evenly onto a baking sheet.
  • Roast in the preheated oven until mostly crisp, about 35 minutes. Season with salt and serve immediately.

I am obsessed with kale chips! I found this recipe on Meghan Telper's website. I've made them in the oven and also in the dehydrator and these are soooo yummy and healthy too! 1 bunch makes 4 small servings or 2 large depending on the kale lover involved.. I can eat a whole bunch myself, easily!

1 bunch kale
1/4 cup unsalted almonds (or almond butter)
1 tablespoon fresh lemon juice
2 teaspoons honey (recipe calls for raw but I use regular)
1 tablespoon tamari
1 inch fresh ginger, grated
1 dash cayenne

Steps:

  • 1. Place all marinade ingredients in blender or food processor and process until smooth. Add water as needed just in order to blend. Remember: you will be drying this out again later.
  • 2. With your hands, mix together the kale and marinade, massaging gently.
  • 3. Transfer to dehydrator rack or parchment lined baking sheet.
  • 4. Stick in your dehydrator on medium-high setting (I use 130 degrees) or in your oven on its lowest temp with the oven door left slightly open.
  • 5. In the dehydrator it will take about 4-5 hours for them to reach the perfect crunchiness. Drying times will vary in oven.

2 bunches kale
1/4 cup coconut oil or 1/4 cup flax oil
1 teaspoon celtic sea salt
1/2 a lemon (juice)
1 tablespoon raw honey or 1 tablespoon raw Agave

Steps:

  • Wash and dry your kale. If you prefer, you can cut out the large central stem (these can get kind of "sticklike" when dry) I usually do this with the regular kale, with Dino Kale I might leave it inches For kids, I destem. Try to keep the pieces no larger than 2".
  • Mix together the sea salt, lemon juice and olive oil.
  • Put your kale in a large mixing bowl, then pour the salt, lemon and oil mix over it and massage the kale for several minutes (until it feels like the kale is coated pretty evenly).
  • Drizzle the honey over it and massage for several more minutes until it feels like the kale is coated with honey.
  • Place the kale carefully in the dehydrator (if its bunched up, try and get it to lay flat) and set it at 115 degrees for 8 hours. If you make this the night before it works out really well as they are done when you wake up.
  • If you don't have a dehydrator, or you are in a hurry, you can also make these in the oven, though they won't be "raw" anymore- I set my oven at the lowest setting (in my case 190 degrees) and put the kale on two cookie sheets, and then check them and turn them every 20 minutes until done. In my case it takes somewhere around an hour. However I prefer them in the dehydrator :).
