Green Beans with Olives image

This whole dish can be made ahead and packed up to go -- making it perfect for a picnic or potluck.

Coarse salt and ground pepper
1 1/2 pounds green beans, trimmed
1 jar (9 ounces) pimiento-stuffed olives, drained and rinsed
1 cup fresh parsley leaves
2 anchovy fillets
3 tablespoons extra-virgin olive oil
1 tablespoon red-wine vinegar

Steps:

  • In a large pot of boiling salted water, cook green beans until crisp-tender and bright green, about 6 minutes. Drain and return to pot.
  • Meanwhile, in a food processor, pulse olives, parsley, anchovies, oil, and vinegar until olives are finely chopped. Add to beans and stir to combine. Season with pepper. Serve at room temperature.

A salad of freshly picked green beans is a true treat. Whatever the color - green, purple or pale yellow - choose smaller beans, which are naturally more tender.

Salt and pepper
1 1/2 to 2 pounds small green beans, or a mixture of different colors, topped and tailed
2 small garlic cloves, minced
1 small shallot, diced
2 tablespoons red wine vinegar or sherry vinegar
2 teaspoons Dijon mustard
4 tablespoons extra-virgin olive oil
1 cup good-quality pitted green olives, halved
2 tablespoons chopped dill
1 tablespoon chopped chives

Steps:

  • Bring a large saucepan of well-salted water to a boil. Add beans and cook for 2 minutes, until firm-tender. Drain and rinse beans with cool water, then blot with a kitchen towel. Set aside.
  • Make the vinaigrette: Put garlic, shallot and vinegar in a small bowl. Add a good pinch of salt and a smaller pinch of pepper; let macerate for 5 to 10 minutes. Add mustard and whisk to dissolve, then whisk in olive oil.
  • Assemble the salad: Put cooked beans in a serving bowl and season lightly with salt and pepper. Add olives and half the vinaigrette. Toss well, then taste and adjust seasoning. Sprinkle salad with dill and chives and serve.

4 Kalamata or other brine-cured black olives, pitted and chopped
1 tablespoon softened unsalted butter
lemon juice to taste

Steps:

  • In a saucepan of boiling salted water boil the green beans with the orégano for 5 minutes, or until they are crisp-tender. Drain the beans, transfer them to a bowl, and toss them with the olives, the butter, the lemon juice, and salt and pepper to taste.

  • In a bowl stir together the onion, the vinegar, the salt, and the oil and let the mixture stand. In a steamer set over boiling water steam the beans, covered, for 7 to 8 minutes, or until they are just tender, add them to the bowl while they are still hot, and toss them well with the olives.

1 (15 1/2 ounce) can kidney beans, drained
1 (15 1/2 ounce) can garbanzo beans, drained (chickpeas)
1 (15 1/2 ounce) can black-eyed peas, drained
1 cup chopped green bell pepper
1 cup chopped red bell pepper
1 cup sliced pimento stuffed olive
1/2 cup chopped red onion

Steps:

  • Whisk first 4 ingredients in large bowl to blend.
  • Add all remaining ingredients and toss to blend.
  • Season with salt and pepper.
  • Cover and refrigerate at least 3 hours and up to 1 day.

Black Bean and Olive Soup image

This is a good dish to make the day before you need it, as it tastes better the longer it sits. A variation of a typical Cuban dish from the "Caribbean Light" cookbook.

14 ounces dried black beans
7 cups water
1 -2 tablespoon water (if needed)
1 (14 1/2 ounce) can reduced-sodium chicken broth
2 tablespoons red wine vinegar
1 tablespoon olive oil
1 cup green bell pepper, finely chopped
1 cup onion, finely chopped
3/4 cup pimento-stuffed green olives, plus two tablespoons brine (Spanish olives)
1/2 cup carrot, finely chopped
1/4 cup celery, finely chopped
5 garlic cloves, minced
2 teaspoons dried thyme
1/4 teaspoon salt

Steps:

  • Rinse and drain the beans. In an 8-quart saucepan with a lid, bring the beans and 7 cups of water to a boil for 2 minutes. Remove the pan from the heat, cover and let it sit for 1 hour. (The dish may be prepared in advance up to this point.).
  • To continue, add the chicken broth to the pan, cover and bring it to a boil. Reduce the heat and keep at a full simmer for approximately 3 hours, or until the beans are tender.
  • While the beans are cooking, start the sofrito by heating the oil in a large skillet. Add all the remaining ingredients. Cook over low heat, stirring occasionally, for 1 hour, until the mixture is very soft. Don't brown this, but slowly cook it down into a soft mush, adjusting the heat as needed. Add a tablespoon or two of water if the mixture starts to stick.
  • When the beans and sofrito are done, stir the sofrito into the beans. Scoop out 1 cup, and puree in a blender. Return the puree to the pan, cover, and, over low heat, cook an additional 30 minutes.
  • Stir in the vinegar 5 minutes before serving.

Not your usual green beans, but so great and easy. I had these as a side at a restaurant in Atlanta and have re-created this version.

2 lbs fresh green beans, trimmed
8 ounces feta cheese, crumbled
1/4 cup olive oil
2 cloves garlic, minced
1 cup kalamata olive, pitted and halved
1 pint cherry tomatoes, halved
2 tablespoons fresh lemon juice
1 tablespoon fresh oregano, chopped
salt and pepper, to taste

Steps:

  • In a medium bowl, prepare an ice bath for cooling the beans.
  • Cook the beans in salted boiling water, about 6 minutes, until crisp, but tender.
  • Drain the beans, then cool in the ice bath.
  • Drain and put the beans in a serving dish.
  • Add the feta cheese to the cooled beans.
  • Heat the olive oil and add the garlic, about 60 seconds, until fragrant.
  • Remove form heat and add the tomatoes, olives, lemon juice, and oregano.
  • Toss this mixture.
  • Pour over green beans and feta and stir gently to combine.

1 pound green beans, trimmed
1 (3-ounce) can white tuna packed in oil, drained and flaked
1/4 cup extra-virgin olive oil
2 tablespoons water
1 1/2 teaspoons fresh lemon juice
1 teaspoon anchovy paste
2 tablespoons Niçoise or other small brine-cured black olives
2 tablespoons fresh flat-leaf parsley leaves

Steps:

  • Cook beans in a large pot of boiling salted water , uncovered, until crisp-tender, 4 to 5 minutes. Drain in a colander and immediately transfer to a large bowl of ice and cold water to stop cooking. When beans are cold, drain and pat dry with paper towels, then arrange on a platter and season with salt.
  • Purée tuna with olive oil, water, lemon juice, and anchovy paste in a blender, scraping down sides as necessary, until very smooth. Season sauce with salt and pepper and spoon over beans. Scatter olives and parsley leaves on top.
