ROASTED GREEN BEANS WITH GARLIC, LEMON, PINE NUTS & PARMESAN

Roasted Green Beans with Garlic, Lemon, Pine Nuts & Parmesan image

Roasted green beans are a revelation, especially when tossed with chunks of garlic, lemon, pine nuts, and cheese.

Time 40m

Yield 6-8

Number Of Ingredients 10

⅓ cup pine nuts
2 pounds fresh green beans, stem ends trimmed
¼ cup thinly sliced garlic, from 7 to 10 cloves, (a medium clove should yield 4 slices)
6 tablespoons extra virgin olive oil
1½ tablespoons lemon zest
1½ teaspoons kosher salt
½ teaspoon ground black pepper
¼ teaspoon sugar
1½ tablespoons freshly squeezed lemon juice
6 tablespoons coarsely shredded Parmigiano-Reggiano

Steps:

  • Set an oven rack in the middle position and preheat the oven to 450°F. Line a rimmed baking sheet with heavy-duty aluminum foil.
  • In a small dry skillet over medium heat, toast the pine nuts until golden. Watch carefully and stir frequently as they can burn quickly. Immediately transfer the nuts to a small bowl (don't leave them in hot pan as they will continue to cook). Set aside.
  • Put the green beans in a large bowl. Add the sliced garlic, olive oil, 1 tablespoon of the lemon zest, kosher salt, pepper, and sugar; toss well. Transfer the mixture to the prepared baking sheet (don't leave any flavor behind: use a rubber spatula to scrape all of the oil and seasoning out of the bowl and onto the beans).
  • Roast the beans and garlic for 15 minutes. Stir with a spatula to promote even cooking, then continue roasting until the beans are tender throughout, about 10 minutes more. The beans should be fully cooked, with some lightly browned but not overly shriveled.
  • Add the lemon juice, Parmigiano-Reggiano, remaining ½ tablespoon lemon zest, and pine nuts to the beans and toss well. Taste and adjust seasoning with salt, pepper and lemon juice if necessary. Transfer to a serving platter and serve hot or room temperature.

BONNIE'S GREEN BEANS WITH PINE NUTS AND BACON

BONNIE'S GREEN BEANS WITH PINE NUTS AND BACON image

I have been making this recipe more years than I can remember. It is an old standby company worthy recipe, and a perfect substitution for that green bean casserole for the holidays. It is a beautiful dish, so fresh and tasty, and once you try it, you will be hooked! Enjoy!

Provided by BonniE ! @ReikiHealsTheSoul

Categories     Vegetables

Number Of Ingredients 8

12 ounces green beans, blanched
1/4 cup pine nuts, toasted
5 slices bacon, crisp and crumbled
1 tbs lemon zest
1 tbs lemon juice
1 large clove garlic minced
Season with salt and pepper
1 tbs bacon grease

Steps:

  • PREPARE I use the 12 ounce package of Birds Eye frozen tiny green beans which are just perfect for this recipe. Cook them in boiling water until crisp tender and drain. Don't overcook. You may use fresh green beans. If you do use fresh, blanch them about 3 minutes in boiling water, remove and plunge into ice water. Drain. Set aside. Toast the pine nuts in a a large dry skillet over medium heat about 3 minutes or until a light golden brown. Remove and set aside. Wash a lemon for 1 Tbs of zest and 1 Tbs lemon juice, and mince the garlic. Set aside. Fry 5 pieces of bacon crisp and drain on paper towels, then crumble and set aside. Leave one tablespoon of bacon grease in the skillet.
  • YOU ARE ALMOST THERE once the prep is done. Over medium heat, add the minced garlic to the hot skillet in the bacon grease. Stir it around for a minute until it releases its flavor, then add the green beans and just toss the beans a couple of minutes to warm them through. (don't overcook) Remove beans from heat. Add lemon juice and zest and 1/4 cup toasted pine nuts . Season with salt and pepper, and add the crumbled bacon. Toss again and serve immediately. Enjoy!

THE MOST DELICIOUS GREEN BEANS

The Most Delicious Green Beans image

A different twist to the usual green bean casserole. Given to me years ago by my ex-mother-in-law, this is a tasty, fresh, sweet and tangy new way to serve green beans and it's sure to become a family favorite! Prepare the night before and marinate overnight for the best results. Enjoy!

Categories     Side Dish     Vegetables     Green Beans

Time 2h45m

Yield 8

Number Of Ingredients 6

12 slices bacon, cut in half
2 pounds fresh green beans, trimmed and snapped
1 ½ medium onions, chopped
6 tablespoons apple cider vinegar
6 tablespoons white sugar
½ cup blanched slivered almonds

Steps:

  • In a large deep skillet, cook bacon over medium-high heat until evenly browned. Remove bacon to paper towels, and reserve drippings in the skillet.
  • Place fresh green beans in a large saucepan, and add enough water to cover the bottom by 1 inch. Cover, and bring to a boil over medium-high heat. Cook for 8 to 10 minutes, until bright green and tender. Drain.
  • Place the green beans into a 2 quart casserole dish. Spread the onions in a layer over the green beans. Place bacon strips in a layer over the onions. Sprinkle almonds over the top. Heat the reserved drippings in the skillet over medium heat. Stir in vinegar and sugar, heating just until sugar is dissolved; drizzle over everything in the dish. Cover, and chill for at least one hour, but overnight is best.
  • Preheat the oven to 350 degrees F (175 degrees C). Bake uncovered, for 45 minutes, until the onions are tender, and the almonds are toasted. Check after 30 minutes, and cover if necessary.
