Green Beans with Cheese and Bacon image

I found this among some recipes my husband's aunt sent me. I tried it once, and it became a family favorite immediately. I save it and use it in the summer when beans are freshest. Then we always have something to look forward to each summer. I often double this recipe just to have enough for my children to have leftovers! You can prepare this ahead of time, but make sure that the casserole is at room temperature before baking. I often use a mixture of both green beans and wax beans in the casserole.

3 cups trimmed green beans, snapped in half
3 slices bacon, diced
6 green onions, chopped
½ cup shredded sharp Cheddar cheese
¼ cup sour cream
¼ cup mayonnaise
1 pinch salt and pepper to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 2 1/2-quart baking dish with a lid.
  • Place the green beans in a large pan with water to cover; bring to a boil and cook only until the beans are hot and bright green, about 1 minute. Drain. Transfer to a large bowl.
  • Cook the bacon in a large, deep skillet over medium-high heat, stirring occasionally, until evenly browned and crisp, about 10 minutes. Pour off all but 1 tablespoon of the drippings. Return to the heat and add the green onions; cook until the onions have softened, about 2 minutes.
  • Add the bacon mixture, Cheddar cheese, sour cream, mayonnaise, salt, and pepper to the green beans; stir. Spread the mixture into the prepared baking dish; cover with the lid.
  • Bake in the preheated oven until the casserole is bubbling and the beans are tender, about 20 minutes.

3 pounds fresh green beans, trimmed
4 slices bacon
1 cup butter
4 cloves garlic, minced
½ teaspoon lemon zest

Steps:

  • Place green beans in a pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until beans start to soften, about 10 minutes. Drain water, leaving beans in the pot.
  • Place bacon strips on a microwave-safe plate and cook in the microwave until crisp, about 2 minutes. Cool and crumble bacon.
  • Stir butter and bacon into beans in the pot and return to medium heat; cook and stir until butter melts, 2 to 3 minutes. Add garlic; cook and stir until fragrant, 3 to 4 minutes. Top with lemon zest and stir.

3 teaspoons olive oil
1 teaspoon minced garlic
2 ½ cups fresh green beans, trimmed
1 tablespoon brown sugar
sea salt to taste
3 slices smoked bacon, cut into small strips, or to taste
4 tablespoons chicken broth, or more as needed

Steps:

  • Heat oil in a skillet over low heat. Add garlic and cook for 30 seconds. Stir in green beans and brown sugar, and season with sea salt. Add bacon, increase heat to medium, and stir.
  • Pour chicken broth into the pan, cover, and let simmer for 10 minutes. Stir, adding more broth if needed. Cover and cook for another 10 minutes. Stir, uncover, and simmer over low heat until liquid evaporates, about 10 minutes more. Serve.

1 1/2 pounds green beans, trimmed
1/4 pound smoked bacon, chopped (about 3 slices)
1/4 cup chopped shallots (about 2 shallots)
1 garlic clove, chopped
2 tablespoons sherry wine vinegar
1 1/2 tablespoons Dijon mustard
1/2 teaspoon dry mustard
1/4 cup extra-virgin olive oil
Kosher salt
1/2 cup crumbled soft fresh goat cheese
1/4 cup dried sweetened cranberries

Steps:

  • Cook the beans in a large pot of boiling water until tender-crisp, about 5 minutes. Drain. Pat dry. Place the beans in a large bowl.
  • Cook the bacon in a skillet, and transfer to drain, reserving the drippings in the skillet. Add the shallots and garlic to the drippings. Saute over medium, 1 minute or just until soft. Add the vinegar, Dijon and dry mustard. Whisk, stirring to loosen the browned bits in the bottom of the skillet. Remove from the heat and slowly whisk in the olive oil.
  • Toss the beans with the warm dressing. Season with salt. Arrange on a serving platter. Sprinkle with the reserved bacon, goat cheese and dried cranberries. Serve immediately.

  • In a large deep skillet, cook the bacon over moderate heat, stirring, until golden. Transfer the bacon with a slotted spoon to a plate.   • In a large skillet over medium-high heat, cook the bacon until done but not crisp. Remove the bacon to drain on paper towels. Reserve 2 teaspoons of the bacon fat in the pan and discard the rest. Chop or break bacon into small pieces.
  • While the bacon is cooking, steam the prepared green beans using a steamer or steamer basket, until almost fully cooked 3-4 minutes (taste to test). Note: they will complete cooking when sautéed and to retain firmness they should not steam until fully done. Remove beans from the steamer.

4 slices bacon, chopped (uncooked, reserve 1 Tbsp. of fat after cooking)
1/2 cup chopped onion
1 medium tomatoes, seeded and chopped (roma is great)
1 garlic clove, minced
1/2 teaspoon dried oregano (or 1 teaspoon fresh oregano, chopped)
1/4 teaspoon salt
2 tablespoons lemon juice (or omit juice and pepper and use 1/4-1/2 tsp. lemon- pepper) or 2 tablespoons lime juice (or omit juice and pepper and use 1/4-1/2 tsp. lemon- pepper)

  • In a 2 quart saucepan, add green beans in enough water just to cover them, and bring to a boil, reduce heat and simmer, uncovered about 15 minutes or until crisp tender.

Steps:

  • Place the bacon in a large, deep skillet.
  • Cook over medium-high heat until evenly browned but only slightly crisp.
  • Drain grease, leaving a small amount in the skillet for later use.

4 cups fresh green beans, ends snipped and cut into small pieces
1 pound bacon, cut into small pieces
1 medium onion, chopped
4 medium sized potatoes, peeled and cut into 8 pieces
1 pint heavy cream
2 cups 2% milk
Salt and pepper
Snipped chives (optional) for garnish

Steps:

  • In a large pot or Dutch oven, cook bacon pieces until slightly crispy. Remove bacon with a slotted spoon and drain excess fat, but don't wipe the bottom clean.
  • Add onion to the pot and sauté in bacon drippings until soft.
  • While the bacon and onions are cooking, boil the potatoes until tender. Drain water and slightly mash. Set aside.
  • Steam green beans until slightly tender. Set aside.
  • When the beans and potatoes are done, add the bacon back in the pot, add green beans and mashed potatoes, and cover with the milk and cream. Stir to combine.
  • Warm for a bit until heated through, taking care not to boil.
  • Add salt and pepper to taste.
  • Serve hot, garnishing each bowl with snipped chives, if desired.

Grandma's Green Beans image

5 slices thick-cut bacon
1 red onion, sliced thin
1 jalapeño, seeded and diced small
1 1/2 pounds green beans, trimmed
1 cup chicken stock
1 teaspoon garlic powder
Kosher salt and freshly ground black pepper
1/4 cup fried onions

Steps:

  • Place the bacon in a large cast-iron skillet over medium heat and cook until crisp, 8 to 10 minutes. Remove the bacon and all but 2 to 3 tablespoons of the bacon grease.
  • Add the onion and jalapeño and cook for a minute or two, then add the green beans. Cook until the green beans are bright green, an additional minute. Add the chicken stock, garlic powder and a good pinch of both salt and pepper. Bring to a simmer and lightly cover, allowing the some of the steam to escape. Cook until the liquid is evaporated and the beans are starting to soften, but still have a bite, 10 to 12 minutes.
  • Transfer the beans to a serving vessel. Crumble the bacon and sprinkle it over the top of the beans, along with the fried onions.

1/2 lb bacon, diced
1 small onion, sliced
1/2 cup red wine vinegar
1 -2 teaspoon seasoning salt
1 lb green beans (frequently 1 16 ounce package of frozen, French-cut green beans)

Steps:

  • Fry bacon in a skillet over medium-high heat until partially cooked.
  • Drain off most (but not all) of the fat.
  • Add onion and continue to cook until bacon is brown and onion is clear.
  • Add vinegar and 1 t of the seasoned salt.
  • Cook until most of the vinegar has cooked down and remove from heat.
  • In a large saucepan, cook beans in water, covered, until done (5-7 minutes).
  • Do not drain.
  • Add bacon mixture and cook uncovered for another five minutes' or so.
  • Add additional seasoned salt to taste.
  • There should be little liquid left at serving time.

1 small yellow onion, finely chopped
3 cloves garlic, minced
1 teaspoon red pepper flakes
1/2 cup chopped toasted pecans
Juice of 1/2 lemon
Freshly ground pepper

Steps:

  • Toss the green beans into a large pot of boiling salted water and cook until bright green in color and crisp-tender, about 5 minutes. Drain the beans and shock in a large bowl of ice water to stop the cooking. Drain the beans again and pat dry.
  • Cook the bacon in a large, heavy saute pan until crisp, about 5 minutes. Remove the bacon to a paper towel-lined plate to drain. Spoon off the excess bacon grease, leaving 2 tablespoons in the pan. Add the onion to the pan and saute until soft and very tender, 4 to 5 minutes. 24 ounces green beans, washed and ends trimmed
10 ounces bacon, chopped
2 Tablespoons bacon grease, reserved from cooking the bacon
1 cup shallots (2-3 large bulbs), thinly sliced
2 cloves garlic, minced
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 teaspoons apple cider vinegar

Steps:

  • Fill a large pot with water and bring to a rolling boil over high heat. Once boiling add the green beans, cover, and cook for 3-4 minutes. Remove the green beans from the boiling water and put into a bowl of ice water to stop the cooking process. Remove the beans from the ice water and set aside. Heat a large saute pan over medium high heat and cook the chopped bacon until crispy (around 8-10 min). Put the cooked bacon on a paper towel-lined plate. Set aside. Remove most of the bacon grease from the saute pan, leaving around 2 Tablespoons of grease (enough to coat the bottom of the pan). Put the pan over medium low heat, then add the shallots and garlic to the pan and cook, stirring and cooking for 3-4 minutes, until they start to caramelize. Add the green beans, raise heat to medium high. Add the salt, pepper, and apple cider vinegar. Stir everything together, cooking for 3-4 minutes. Put the green beans into a serving dish. Sprinkle the bacon on top, stir together, and serve immediately.
