1 3/4 pounds green beans, stem end trimmed
1/2 cup sliced unblanched almonds
1 tablespoon olive oil

Steps:

  • Preheat oven to 350 degrees. Bring a large pot of salted water to a boil. Add green beans; cook until bright green and tender, 6 to 8 minutes. Drain in a colander; rinse under cold water, and pat dry.
  • Meanwhile, spread nuts in a single layer on a baking sheet; toast in oven until golden brown and fragrant, about 7 minutes. Transfer to a plate to cool.
  • In a large bowl, toss green beans with oil; season with salt and pepper. Transfer to a serving dish. Garnish with toasted almonds.

  • Preheat the oven to 425 degrees F.
  • Put the beans on 1 or 2 baking sheets. Sprinkle over the bacon and onions, and add the olive oil, salt and pepper. Toss around to mix and coat everything in oil.
  • Bake until the bacon is sizzling and the beans are starting to brown, 18 to 20 minutes.

Steps:

  • Remove both ends of beans, break in half, and wash thoroughly.
  • Place in a large pot and add water 3 to 4 inches from the top. Add bacon and cook until tender.
  • Remove bacon from cooking water and discard. Remove beans and place in a large bowl, add almonds and toss. Serve Hot.

¼ cup slivered almonds
½ pound bacon
1 large onion, chopped
2 tablespoons olive oil
¾ cup chopped mushrooms
1 quart water
1 pound fresh green beans, trimmed and cut into 2-inch pieces
2 (10.75 ounce) cans condensed cream of mushroom soup (such as Campbell's®)
½ cup water, or as needed
2 cups French-fried onions (such as French's®), divided
1 (8 ounce) can sliced water chestnuts, drained
salt and ground black pepper to taste

Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Spread almonds on a baking sheet.
  • Toast almonds in the preheated oven until golden, stirring halfway through, about 13 minutes total. Remove from oven and set aside.
  • Increase oven temperature to 350 degrees F (175 degrees C). Grease one 9x13-inch casserole dish.
  • Place bacon and onion in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, 8 to 10 minutes. Remove bacon and onion with a slotted spoon; set aside. Drain excess bacon fat from the skillet; add olive oil. Add mushrooms and cook, stirring, until soft, about 5 minutes.
  • Place 1 quart water in a saucepan and bring to a boil. Add green beans and blanch for 2 minutes. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process and preserve the bright green color. Drain.
  • Pour mushroom soup into a large bowl and whisk until smooth, adding up to 1/2 cup water, until soup is the consistency of thick gravy. Stir in almonds, 3/4 of the bacon-onion mixture (reserving the rest for topping), mushrooms, green beans, 1 cup French-fried onions, and water chestnuts. Mix thoroughly to combine and season with salt and black pepper.
  • Pour green bean mixture into casserole dish. Top with remaining bacon-onion mixture and 1 cup French-fried onions.
  • Bake in the preheated oven until bubbling and crispy on top, 30 to 45 minutes. Serve hot.

1/2 lemon, juiced

  • In a medium pan, toast almonds over medium heat. Remove from pan and add 1/2 inch water. Bring water to a boil, add beans and cover pan. Reduce heat. Cook beans 4 or 5 minutes until just tender yet still green. Drain beans and return pan to stovetop. Melt butter over moderate heat.   • 1. Place 1" of water and beans in a 3 quart saucepan. Bring to boil on medium-high heat then reduce to medium. Cover, cook until beans are crisp-tender. Around 6-10 minutes. Drain
  • 2. Melt butter in heavy skillet over medium-high heat. Add almonds and cook and stir until almonds are golden brown around one to two minutes.

The amounts I have listed are only estimated as I really do not measure any thing when I make this dish, you can adjust all ingredients to taste. You can really use just about any kind of nuts for this recipe, I have even made this with toasted walnuts. The amounts in this recipe serve 4 but you can double or even triple the recipe to serve at a dinner party. This green bean dish is good enough to be served a fancy restaurant, it is that good!

2 teaspoons cider vinegar
1 -2 tablespoon finely chopped shallot (or to taste)
2 -3 tablespoons olive oil

2 lbs fresh green beans, ends trimmed
1/2-3/4 cup blue cheese, crumbled (or to taste)
salt and black pepper

Steps:

  • In a small bowl whisk together mustard, vinegar, shallot and oil.
  • Prepare a bowl with ice water.
  • In a saucepan with a small amount of water, blanch/steam the beans until JUST firm-tender (about 3-4 minutes); drain through a colander, then immediately transfer to the bowl of ice water just for a couple of minutes to cool and keep the colour.
  • Remove the beans to a bowl and dry well patting with paper towels.
  • Drizzle the dressing over the beans; toss to combine.
  • Season with black pepper and a pinch of salt.

1 tablespoon olive oil

1/3 cup sliced almonds
1/2 lemon (juiced)
1/2 teaspoon salt (or to taste)
2 to 3 slices bacon (cooked and crumbled)

Steps:

  • Rinse and drain the green beans and snap off one end, removing the tough string if it is present (some will have them, some won't).
  • Bring a large pot of water to a boil. Add green beans and allow to cook for 3 to 4 minutes, just till slightly softened. Remove from heat and transfer to a colander to drain. Rinse with very cold water to stop the cooking process and lock in the bright green color. Drain well.
  • In a 12-inch skillet, melt the butter with olive oil over medium heat. Add the almonds and cook for about 2 to 3 minutes or until lightly golden brown, stirring often. 450 -500 g / 1 lb green beans, tails cut off
1 tablespoon butter or ghee (olive oil is also fine)
120 g / about 4 ounces bacon rashers, diced into cubes
200 g / 7 oz crimini or Swiss brown mushrooms, sliced
4-5 sage leaves, chopped (about 5 g, you could use dried herbs)
1/3 cup almonds, chopped
1/3 cup dried cranberries, chopped
3 cloves garlic, finely chopped
1 tablespoon Balsamic vinegar
1-2 tablespoons olive oil
Juice of 1/2 orange
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cut the tail ends off the green beans, wash and set aside.
  • Preheat a large, deep frying pan to medium-high heat and melt the butter (or another cooking fat of choice). Add the bacon and cook for 1 minute until it starts to brown slightly. Add the mushrooms, stir and cook for 1-2 minutes. Add a splash of olive oil as the cooking fat starts to absorb into the mushrooms. Cook for 2 more minutes or until the mushrooms start to brown up a little.
  • Add chopped bacon, cranberries, garlic and sage and cook, stirring a few times, for 3-4 minutes until everything starts to brown slightly. Finish by adding a tablespoon of Balsamic vinegar, stir through and transfer to a bowl.
  • Return the empty frying pan on the stove over medium-high heat. Add a tablespoon of olive oil and green beans; spread them around evenly. Cover with a lid and cook for 2 minutes. Uncover, stir and pop the lid back on for another 1-2 minutes. This method allows you to steam the green beans as well as browning them slightly on the bottom.
  • Uncover again and now season with salt and pepper and add the orange juice. Stir and cover with a lid again for 2 more minutes. The green beans will continue to saute and steam with the orange juice reducing slightly.
  • Finish the dish by removing the lid and stirring in the pre-cooked bacon and mushroom mixture. Season with another pinch of salt and pepper (taste to see if you need more). Serve with fried shallots and toasted almonds on top. You can serve as is as well.

1 Tablespoon olive oil

Steps:

  • Heat a large dry skillet over medium heat, add almond slices and cook until toasted, about 5-6 minutes or until almonds are golden. Remove almonds from skillet and set aside.
  • In the same skillet, add olive oil and heat over high heat until melted. Add in shallot slices, turn heat down to medium-low. Cover the skillet with a lid and cook shallots until caramelized, stirring frequently throughout the cooking process.   • Meanwhile, cook the green beans by bringing a saucepan of water with a pinch of sea salt to a boil. Once water is boiling, add in green beans and cook for about 3-4 minutes or until the beans are bight green in color and tender crisp.

  • Reduce heat to low. Add the butter to the pan and heat until melted.
  • Add the sliced almonds. Cook for 2-4 minutes, until the almonds are golden.
  • Add the garlic. Saute for 1-2 minutes, until fragrant. Stir in the lemon juice.
  • Return the green beans to the pan and toss to coat in garlic lemon butter. Cook for 1-2 more minutes, until hot.
