- Preheat oven to 350 degrees. Bring a large pot of salted water to a boil. Add green beans; cook until bright green and tender, 6 to 8 minutes. Drain in a colander; rinse under cold water, and pat dry.
- Meanwhile, spread nuts in a single layer on a baking sheet; toast in oven until golden brown and fragrant, about 7 minutes. Transfer to a plate to cool.
- In a large bowl, toss green beans with oil; season with salt and pepper. Transfer to a serving dish. Garnish with toasted almonds.

- Preheat oven to 275 degrees F (135 degrees C). Spread almonds on a baking sheet.
- Toast almonds in the preheated oven until golden, stirring halfway through, about 13 minutes total. Remove from oven and set aside.
- Increase oven temperature to 350 degrees F (175 degrees C). Grease one 9x13-inch casserole dish.
- Place bacon and onion in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, 8 to 10 minutes. Remove bacon and onion with a slotted spoon; set aside. Drain excess bacon fat from the skillet; add olive oil. Add mushrooms and cook, stirring, until soft, about 5 minutes.
- Place 1 quart water in a saucepan and bring to a boil. Add green beans and blanch for 2 minutes. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process and preserve the bright green color. Drain.
- Pour mushroom soup into a large bowl and whisk until smooth, adding up to 1/2 cup water, until soup is the consistency of thick gravy. Stir in almonds, 3/4 of the bacon-onion mixture (reserving the rest for topping), mushrooms, green beans, 1 cup French-fried onions, and water chestnuts. Mix thoroughly to combine and season with salt and black pepper.
- Pour green bean mixture into casserole dish. Top with remaining bacon-onion mixture and 1 cup French-fried onions.
- Bake in the preheated oven until bubbling and crispy on top, 30 to 45 minutes. Serve hot.

- 1. Place 1" of water and beans in a 3 quart saucepan. Bring to boil on medium-high heat then reduce to medium. Cover, cook until beans are crisp-tender. Around 6-10 minutes. Drain

- In a small bowl whisk together mustard, vinegar, shallot and oil.
- Prepare a bowl with ice water.
- In a saucepan with a small amount of water, blanch/steam the beans until JUST firm-tender (about 3-4 minutes); drain through a colander, then immediately transfer to the bowl of ice water just for a couple of minutes to cool and keep the colour.
- Remove the beans to a bowl and dry well patting with paper towels.

- Rinse and drain the green beans and snap off one end, removing the tough string if it is present (some will have them, some won't).
- Bring a large pot of water to a boil. Add green beans and allow to cook for 3 to 4 minutes, just till slightly softened. Remove from heat and transfer to a colander to drain. Rinse with very cold water to stop the cooking process and lock in the bright green color. Drain well.
- In a 12-inch skillet, melt the butter with olive oil over medium heat. Add the almonds and cook for about 2 to 3 minutes or until lightly golden brown, stirring often. - Cut the tail ends off the green beans, wash and set aside.
- Preheat a large, deep frying pan to medium-high heat and melt the butter (or another cooking fat of choice). Add the bacon and cook for 1 minute until it starts to brown slightly. Add the mushrooms, stir and cook for 1-2 minutes. Add a splash of olive oil as the cooking fat starts to absorb into the mushrooms. Cook for 2 more minutes or until the mushrooms start to brown up a little.
- Add chopped bacon, cranberries, garlic and sage and cook, stirring a few times, for 3-4 minutes until everything starts to brown slightly. Finish by adding a tablespoon of Balsamic vinegar, stir through and transfer to a bowl.
- Return the empty frying pan on the stove over medium-high heat. Add a tablespoon of olive oil and green beans; spread them around evenly. Cover with a lid and cook for 2 minutes. Uncover, stir and pop the lid back on for another 1-2 minutes. This method allows you to steam the green beans as well as browning them slightly on the bottom.
- Uncover again and now season with salt and pepper and add the orange juice. Stir and cover with a lid again for 2 more minutes. The green beans will continue to saute and steam with the orange juice reducing slightly.
- Finish the dish by removing the lid and stirring in the pre-cooked bacon and mushroom mixture. Season with another pinch of salt and pepper (taste to see if you need more). Serve with fried shallots and toasted almonds on top. You can serve as is as well.
