This recipe has been in our family for ages. We take it to just about every get-together...folks always rave about it. I like that it's so simple to prepare.-Eileen Jahn, Detroit, Michigan

1 pound ground beef
1 medium onion, chopped
3/4 teaspoon salt
Dash pepper
1 can (14-1/2 ounces) cut or French-style green beans, drained
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 can (4 ounces) mushroom stems and pieces, drained
2 cups mashed potatoes (without added milk and butter)
1 egg
1/4 cup milk
1/4 cup shredded cheddar cheese

Steps:

  • In a skillet, cook the beef, onion, salt and pepper over medium heat until meat is no longer pink; drain. Add the beans, soup and mushrooms; mix well. Transfer to a greased 8-in. square baking dish., In a bowl, combine the mashed potatoes, egg and milk; beat until light and fluffy. Spread over beef mixture. Sprinkle with cheese. Bake, uncovered, at 350° for 30-35 minutes or until heated through.

Baked Ziti With Beef and Green Beans image

I'm not a fan of green beans but I have to say that I, as well as the entire family, really enjoy this recipe. Recipe is from the American Heart Association No Fad Diet book and the recipe called for no salt tomatoes and tomato paste or other added salt. Original recipe also called for 1 TBLS bacon bits which I omitted. Nice casserole style comfort food dish that is healthy and doesn't need any else served with it except a nice salad.

4 ounces dried ziti pasta (about 1 cup)
1 lb lean ground beef
1/2 medium onion, chopped
14 1/2 ounces diced tomatoes, undrained
1 cup nonfat beef broth
2 tablespoons tomato paste
1 teaspoon oregano
2 medium garlic cloves, minced
2 cups frozen green beans, thawed (about 8 ounces)
1 cup shredded fat free mozzarella cheese
1/4 cup shredded parmesan cheese

Steps:

  • Cook pasta according to pasta directions. Omit oil and salt if required for your dietary requirements.
  • Cook beef in nonstick skillet until brown, breaking up the meat while cooking. Drain meat and run under hot water. Wipe skillet with paper towels and put beef back into skillet.
  • Add onions to beef and cook until onions are soft about 3-4 minutes. Stir as needed.
  • Stir in tomatoes (do not drain), broth, tomato paste, oregano and garlic. Simmer for 10 minutes.
  • Mix mixture with pasta and green beans and half of the cheese.
  • Sprinkle top with remaining cheese and bake uncovered at 350 for 20 to 25 minutes.
  • TO FREEZE: Undercook pasta slightly. Freeze fully assembled. Fully thaw dish and let come to almost room temp before putting in 350 oven. Cook until heated through.
  • Serving is approx 1.5 cups.

5 tablespoons extra-virgin olive oil
2 tablespoons tomato paste
2 teaspoons finely chopped fresh rosemary
2 cloves garlic, chopped
Pinch of red pepper flakes
2 pounds green beans, trimmed and halved
1 14-ounce can cherry tomatoes Kosher salt
3/4 cup panko breadcrumbs
1/4 cup grated parmesan cheese
1 tablespoon chopped fresh parsley
Freshly ground pepper

Steps:

  • Preheat the oven to 425 degrees F. Heat 3 tablespoons olive oil in a large pot or Dutch oven over medium-high heat. Add the tomato paste and cook, stirring, until slightly darkened, about 2 minutes. Add the rosemary, garlic and red pepper flakes and cook until the garlic starts browning, about 1 minute.
  • Add the green beans, cherry tomatoes and their liquid, 1 3/4 cups water and 2 teaspoons salt to the pot. Partially cover and cook, stirring occasionally, until the green beans are tender and the liquid is slightly thickened, 20 to 25 minutes. Transfer to a 3-quart baking dish.
  • Mix the panko, parmesan, parsley and the remaining 2 tablespoons olive oil in a bowl; season with salt and pepper. Sprinkle over the green bean mixture and bake until the sauce is bubbling and the topping is browned, about 15 minutes.

This is a great comfort meal for those days when you want a tasty main dish without spending a lot of time in the kitchen.

1 lb ground beef
salt and pepper
1 (6 ounce) can tomato sauce
1 onion, chopped
1 tablespoon Worcestershire sauce
1 (15 ounce) can baked beans
6 cups mashed potatoes
6 ounces shredded cheddar cheese

Steps:

  • Preheat oven to 375°F.
  • In a large skillet over medium high heat, combine the ground beef and salt and pepper to taste.
  • Sauté for 10 minutes, or until well browned.
  • Add tomato sauce, onion and Worcestershire sauce.
  • Reduce heat to low and simmer for 10 minutes.
  • Prepare potatoes.
  • Place beef mixture into a casserole dish.
  • Layer the beans over the beef and smooth potatoes over the beans.
  • Sprinkle the cheese over the potatoes and bake uncovered at 375°F for 30 to 40 minutes.

JEFF'S GREEN BEAN AND BEEF CRESCENT ROLL CASSEROLE

My husband's friend, Jeff, described this ground beef and crescent roll recipe to us over the phone and we just had to try it. He sent us his recipe and we tweaked it a bit to suit our tastes. It's an easy one-dish meal that's made complete with a simple salad. Our favorite part of the original recipe that we received was the last line that said "eat the whole dish and take a nap!"

1 pound ground beef
1 large onion, diced
2 (14 ounce) cans diced tomatoes, undrained
1 (14.5 ounce) can French-cut green beans, undrained
1 (6 ounce) can sliced black olives, undrained
1 pinch red pepper flakes, or to taste
1 pinch garlic powder, or to taste
1 pinch salt and ground black pepper to taste
1 cup sour cream
2 (8 ounce) packages refrigerated crescent rolls
1 large egg, beaten
2 cups shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Cook and stir ground beef and onion in a large skillet over medium-high heat until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Stir tomatoes, green beans, black olives, and red pepper flakes into the skillet. Season with garlic powder, salt, and pepper. Simmer for 15 to 30 minutes. Drain off most of the liquid. Stir in sour cream.
  • Line the bottom of a baking dish with 1 can of crescent rolls. Brush beaten egg on top. Sprinkle 1 cup Cheddar cheese over the dough. Stir remaining Cheddar cheese into the meat and vegetable mixture. Pour into the baking dish. Top with the remaining crescent rolls.
  • Bake in the preheated oven until bubbly and brown, 30 to 45 minutes. Let stand for 10 to 15 minutes before serving.

My mom saw this on TV and thought I'd like the recipe. I think it was on the Today show. The original recipe is from Sandi Richard's but I've changed it to suit our tastes a bit. I've also made this without the sweet chili sauce and it tasted just fine. Easy, quick recipe using what I normally have on hand.

1 teaspoon olive oil, extra-virgin
1 teaspoon sesame oil
1 1/2 lbs flank steaks, trimmed
2 teaspoons fresh garlic
1 tablespoon fresh ginger
1/4 cup soy sauce, reduced-sodium
1 tablespoon rice vinegar
2 tablespoons fish sauce
2 tablespoons Thai sweet chili sauce
2 tablespoons hoisin sauce
1/2 teaspoon sambal oelek (crushed chili paste)
1 lb frozen green beans (I use fresh)
1 small onion, thinly sliced
cornstarch (optional)

Steps:

  • Heat both oils in a large nonstick fry pan or wok at medium-high. Cut beef into thin short strips, against the grain. Add beef to pan, toss and sauté slightly for 5 minutes.
  • Add sliced onion and green beans, toss. Add garlic and ginger. (I like my beans a little more done. I usually put the cover on to cook them for about 5 more minutes).
  • Reduce heat to medium-low. Add soy sauce, rice vinegar, fish sauce, sweet chili sauce, hoisin sauce and chili paste. Stir to combine.
  • (Add mixture of cornstarch and water if desired to thicken).
  • Serve with rice.

1/2 cup milk
1 teaspoon soy sauce
pepper (optional)
4 cups fresh green beans, cut in half,cooked until just crisp
1 can French-fried onions

Steps:

  • In a 1 1/2 qt casserole mix soup, milk, soy& pepper.
  • Stir in beans and 1/2 can fried onions.
  • Bake 350 for 25 minutes.
  • Top with remaining 1/2 can of fried onions.
  • Brown for 5 minutes more.
