Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease one 9x5-inch loaf pan with cooking spray.
- Mix beef, onion, stuffing mix, and egg by hand in a bowl. Press beef mixture into prepared pan.
- Bake in the preheated oven until no longer pink in the center, 35 to 40 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- Top meatloaf with shredded mozzarella cheese and let rest while cheese melts, about 10 minutes.

SUPER EASY STOVE TOP STUFFING MEATLOAF
This is a very quick and easy meatloaf recipe, where Stove Top Stuffing provides much of the flavor.

Steps:
- In a large mixing bowl put the hamburger meat, eggs, stuffing, broth and salt.
- Mix well.
- Place the mixture in a bread loaf pan.
- Bake at 350F for 60-70 minutes, or until done.
- The last 15 minutes of cooking, spread the ketchup on top of the meatloaf.
- If you don't want to use ketchup, put a can of condensed cream of mushroom soup on top of the meatloaf right before you put it in the oven.
STUFFING MEATLOAF
Steps:
- Preheat the oven to 375 degrees Fahrenheit.
- In a large mixing bowl, combine ground beef, stuffing mix, eggs, ketchup and water. Mix until well combined.
- Transfer the mixture to a loaf pan lined with parchment paper or aluminum foil. You may also shape into a loaf on a baking sheet.
- Top with additional ketchup if desired.
- Bake at 375 degrees Fahrenheit for 45-50 minutes, or until the internal temperature reaches 165 degrees Fahrenheit.
- Allow to cool in loaf pan for 5 minutes, then slice and serve!

STOVE TOP STUFFING MEATLOAF
I received this recipe from a Weight Watchers forum and then tweaked it to make it more of my own and to include more veggies. It is always a hit and I frequently get asked for the recipe.

Steps:
- Gently blend the hamburger and sausage in a mixing bowl. Form a well in the meat and then add the stuffing followed by all ingredients EXCEPT ketchup. Do NOT drain tomatoes. Mix well and form into a meatloaf shape in baking pan. Bake at 350 for approximately 45 minutes or until nearly done and edges are getting crispy. Remove from oven and top with ketchup. Return to oven for additional 10-15 minutes. Allow to rest 5 - 10 minutes, slice and enjoy.
- This is also great cooked in muffin tins. Not only do you have individual sized meatloaves, with everyone getting crispy edges, they freeze great when the craving for "just a little meatloaf" hits.

MEATLOAF MUFFINS WITH STOVE TOP STUFFING
This is very quick and easy to make. Kids love the "muffins". Also great for any of those anti-onion people in your home. You can make it with ground turkey to make it really healthy. I actually have a pan I drilled holes in to let the fat and grease drain out while cooking. We make these often. I got this recipe from a friend who was doing Weight Watchers at the time. Oh, and I half this recipe all the time. If I feel like loafs I just form those and bake a bit longer.

Leftover stuffing stirred into ground beef flavored with ketchup-that's a easy recipe for a truly yummy meatloaf! I found this recipe in Woman's World magazine. I have not tried this recipe, but I'm posting it for safe keeping.

- Preheat oven to 350. Line roasting pan with foil. In bowl, combine ground beef, stuffing, eggs, 1/2 cup ketchup, chopped parsley and steak seasoning. In roasting pan, shape mixture into a 10"x4" loaf.
- Bake until meat thermometer inserted into center of loaf registers 165 F, about 1 hour, 10 minutes, brushing with remaining 1/4 cup ketchup during last 5 minutes of cooking time. Let stand 10 minutes before slicing. If desired, serve meatloaf with mashed potatoes and garnished with herbs.

- Place stuffing, onion soup mix and warm water in a bowl. Mix well. Let sit for 5 minutes to allow bread time to absorb water.
- Add eggs and ground beef. Mix well with hands.
