These are truly something different...an onion ring recipe calling for condensed milk & chipotle peppers! The original version in Southern Living magazine used 1/4 cup of jalapeños, but I like the slightly smoky flavor the chipotles add. Our family likes these served with ranch dressing.

2 medium onions
1 cup self rising flour
1/3 cup cornbread mix (I use Jiffy)
1 egg, beaten
1/2 cup sweetened condensed milk
1/4 cup club soda
1 -2 chipotle chile in adobo (Canned)
hot oil (for frying)

Steps:

  • Peel the onion& slice into 1/4 inch slices: Separate into rings.
  • Combine flour& cornmeal, mix well.
  • Combine beaten egg, sweetened condensed milk,& club soda: stir into flour/cornmeal mixture.
  • Finely mince 1 or 2 chipotle peppers (depending on size& desired heat level) and stir into batter mixture.
  • Dip onion rings into batter coating well, shake lightly, and fry in deep hot oil (350-375°F): avoid overcrowding.
  • Fry until golden brown& drain the rings on paper towels.

2 large onions, cut into 1⁄2-inch rounds
2 quarts peanut oil
1 cup all-purpose flour
1⁄2 cup cornstarch
1 teaspoon baking powder
1⁄4 teaspoon baking soda
1⁄2 teaspoon paprika
3/4 cup light-flavored beer (such as PBR or Budweiser), ice-cold
1/4 cup 80-proof vodka
Kosher Salt

Steps:

  • Separate the onion rounds into individual rings. Place in a gallon-sized zipper-lock freezer bag and put them in the freezer until completely frozen, at least 1 hour (they can stay in the freezer for up to 1 month).
  • When ready to fry, remove the onion rings from the freezer bag, transfer to a bowl, and thaw under tepid running water. Transfer to a rimmed baking sheet lined with a clean kitchen towel or several layers of paper towels and dry the rings thoroughly. Carefully peel off the inner papery membrane from each ring and discard (the rings will be very floppy). Set aside.
  • Preheat the oil to 375°F in a large wok or a Dutch oven over medium-high heat. Combine the flour, cornstarch, baking powder, baking soda, and paprika in a medium bowl and whisk together. Combine the beer and vodka in a small bowl.
  • Slowly add the beer mixture to the flour mixture, whisking constantly until the batter has texture of thick paint (you may not need all of the beer). The batter should leave a trail if you drip it back into the bowl off the whisk. Do not overmix; a few small lumps are OK. Dip one onion ring in the batter, making sure that all surfaces are coated, lift it out, letting the excess batter drip off, and add it to the hot oil by slowly lowering it in with your fingers until just one side is sticking out, then dropping it in. Repeat until half of the rings are in the oil. Fry, flipping the rings halfway through cooking, until they are deep golden brown, about 4 minutes. Transfer the rings to a large mixing bowl lined with paper towels and toss while sprinkling salt over them. The fried rings can be placed on a rack on a rimmed baking sheet and kept hot in a 200°F oven while you fry the remaining rings. Serve the rings immediately.

1 medium white onion
corn oil for deep-frying
1/2 cup all-purpose flour
The following recado is a dry rub that gives a burst of flavor to almost any meat or vegetable but is particularly wonderful on beef and corn.
1/4 cup dried Mexican oregano*
1/4 cup corn oil
5 dried chipotle chiles*, stemmed, seeded, and deveined (wear rubber gloves)
5 ancho chiles*, seeded and deveined (wear rubber gloves)
25 garlic cloves
1 1/2 cups coarse salt
available at Mexican markets and some specialty produce markets

Steps:

  • Preheat oven to 250°F. and line a large baking sheet with paper towels.
  • With a mandoline or other manual slicer, slice onion paper-thin and separate into rings.
  • In a deep kettle or deep fryer heat 2 inches oil to 375°F.
  • While oil is heating, in a large bowl stir together flour and chipotle rub. Add onion rings and toss well to coat. Transfer onion rings to a large sieve and shake gently to remove excess flour mixture.
  • Add a handful of onion rings to hot oil and fry, stirring, until crisp, about 30 seconds, transferring with a slotted spoon to baking sheet to drain. Fry remaining onion rings in same manner. (Onion rings may be made 15 minutes ahead and kept warm in a 250°'F. oven).
  • In a small heavy skillet dry-roast oregano over moderate heat, shaking skillet occasionally, until fragrant and beginning to brown, about 2 minutes, and transfer to a small bowl. Cool oregano completely and in an electric coffee/spice grinder grind fine.
  • In a heavy skillet heat oil over moderately high heat until hot but not smoking and, using tongs, fry chiles, 1 or 2 at a time, turning them, until puffed and just beginning to brown, about 10 seconds. (Do not let chiles burn or rub will be bitter.) Transfer chiles as fried to paper towels to drain and cool until crisp.
  • Wearing rubber gloves, break chiles into pieces and in coffee/spice grinder grind fine in batches. In a food processor grind oregano and chiles with garlic and salt until mixture is a shaggy, saltlike consistency. If mixture seems moist, on a large baking sheet spread it into a thin even layer and dry in middle of an oven set at lowest temperature until no longer moist, about 1 hour. Wearing rubber gloves, break up any lumps with your fingers. (Chipotle rub keeps in an airtight container, chilled 6 months. Regrind rub before using.) Makes about 3 1/4 cups.

FRIED PICKLES AND ONION RINGS

2 to 3 quarts vegetable oil, for deep-frying
2 large onions
1/2 cup dill pickle chips
4 large eggs
2 cups buttermilk
2 cups all-purpose flour
Kosher salt and freshly ground black pepper
6 cups panko breadcrumbs

Steps:

  • In a large, heavy saucepot fitted with a deep-frying thermometer, heat the oil to 350 degrees F. Line one baking sheet with paper towels; line a second baking sheet with parchment; and set a rack over a third baking sheet.
  • Cut the ends off the onions and peel the skin. Slice the onions crosswise into three rounds, then separate into rings.
  • Place the dill pickle chips on the paper-towel-lined baking sheet, cover with more paper towels and dry well.
  • Whisk the eggs in a medium bowl. Add the buttermilk and whisk to combine. In another medium bowl, whisk together the flour, 1 tablespoon salt and 1/2 teaspoon pepper. Place the breadcrumbs in a shallow dish.
  • Toss the onions rings in the seasoned flour; coat well. Then dip the onion rings in the buttermilk mixture. Dredge the onion rings a second time in the flour and again in the buttermilk (for a double dredge). Toss the onion rings in the breadcrumbs and place on the parchment-lined baking sheet.
  • Use the same double-dredge process--flour, buttermilk, flour, buttermilk, panko--for the pickle chips.
  • In batches, fry the onion rings until golden brown, 1 to 1 1/2 minutes. Remove to the rack to rest. Sprinkle immediately with salt.
  • Fry the pickle chips until golden brown, 1 to 2 minutes. Remove to the rack and sprinkle with salt. Serve immediately.

Delicious Onion Rings with Chipotle Powder. It has a smokey flavored kick to them. Measurements are approximate; I eyeball it. I deep fry. I originaly started with the Fried Vegetables recipe on the back of the Kentucky Kernel Seasoned Flour from Hudgson Mill, Inc.. It was way too salty for my taste. So I added the rest, and now I love the taste. Probably good for other vegetables too.

1 large vidalia onion
5 tablespoons kentuckey kernel seasoned flour
1 large egg
2 tablespoons water
1/2 cup artisan 100% organic all-purpose wheat flour (King Arthur brand)
1 tablespoon powdered chipotle pepper (I like things medium hot.)
3/4 tablespoon garlic powder (I tend to go heavy on the garlic)
1/2 tablespoon onion powder
peanut oil (for frying)

Steps:

  • Preheat deep fryer oil to 350 deg.
  • Mix batter: Kentuckey Kernel Flour, egg and water.
  • Slice onion in thick rings, and separated.
  • Mix DRY INGREDIENTS [mix in large plastic baggie]: All purpose flour, Chipotle Chili Powder, Garlic Powder, Onion Powder, and set aside.
  • Dip individual onion rings into batter.
  • Take onion rings out of batter and place in dry ingredients, coat liberally.
  • Fry a few coated onions in at least 2 inches of 350 deg. oil for 2-3 minutes. Several batches may be needed. I just keep the onion rings in the baggie until I have room for them in the oil.

Onions are probably one of my favorite pantry ingredients: they're inexpensive, full of flavor and have a long shelf life. However, they don't always get to be the star of the show-until now! The air fryer is a great tool for making a gluten-free version of traditional onion rings, here accompanied by an onion dip made with, yes, raw onions. Soaking the onions in buttermilk helps take away some of the bite!

1 large sweet onion, sliced into rings
1/2 cup buttermilk
1/2 cup gluten-free potato flakes
1/2 teaspoon ground chipotle
Kosher salt
1 large egg
1 cup gluten-free panko
2 teaspoons dried chives, optional
Nonstick cooking spray
1/4 cup finely chopped red onion
1/3 cup buttermilk
1 cup sour cream
1/4 cup scallions, white and green parts, finely chopped
1/2 teaspoon garlic powder
1 teaspoon kosher salt, or to taste
1/2 to 1 teaspoon freshly ground white pepper or black pepper, or to taste
1 teaspoon freshly grated lemon zest
Pinch dried chives

Steps:

  • For the onion rings: Separate the onion rings, place in a shallow dish with the buttermilk and soak for 5 minutes.
  • Preheat an air fryer to 375 degrees F. Preheat the oven to 200 degrees F.
  • Set out three shallow bowls for dredging. Whisk the potato flakes, ground chipotle and 1/2 teaspoon salt in one bowl. Whisk the egg, 2 tablespoons water and a little salt together in another bowl. Mix the panko, dried chives if using and 1/2 teaspoon salt together in the third bowl.
  • Spray the basket of the air fryer lightly with cooking spray. Drain the buttermilk from the onions; reserve 1/3 cup of the buttermilk for making the raw onion dip.
  • Dip each ring one at a time in the potato flake mixture, then in the egg mixture and finally in the panko mixture. Working in batches, put the onion rings in a single layer in the air fryer basket. Spray lightly with cooking spray. Cook until golden and crisp all over, about 10 minutes, flipping them halfway through the cooking time. Transfer the cooked rings to a baking sheet and keep warm in the oven while cooking the remaining rings.
  • For the raw onion dip: Stir the red onion, the buttermilk reserved from the onion rings, the sour cream, scallions, garlic powder, salt, pepper and lemon zest together in a large bowl until completely combined. Let sit 5 to 10 minutes for the flavors to blend. Garnish with the dried chives. Serve immediately with the hot onion rings or refrigerate, covered, for up to 3 days.
