STEAMED BLACK ALASKA COD
Black Alaska Cod is worth it's weight in gold so I am fussy how I cook it. Try to find thick chunks . Don't buy the thin tail piece there is no flesh and it tastes over smoked. This recipe is so simple I feel silly posting it but if you haven't steamed it try it. You may make a sauce but I like it just buttered with salt & pepper

Steps:
- Place the fish, skin side down in it top part of the steamer Steamer pot (like a double boiler but with an insert with holes to allow the steam to come through or a Chinese steamer basket).
- Pour Beer/water into the bottom half.
- Bring to a boil& steam the fish until it flakes apprx 20 minutes depending on the thickness of the filet.
- When coked remove the skin& bones.
- Lightly butter the flaked fish.
- Add salt& Pepper.

- Melt butter in a saucepan. Add onion and cook until tender.
- Stir in flour, and cook for about 1 minute, stirring constantly.
- Slowly stir in milk.
- Add fish and parsley, and simmer until sauce thickens and fish is cooked through.

BEDDED SMOKED COD AND CALAMARI
I love this dish because I am a huge fan of seafood especially smoked cod. I am on a lifestyle program of low carbs so I came up with this meal from a list of things I can eat. I hope you like it. Tip: if you are on a lifestyle program then I believe presentation is everything, so treat yourself to a restaurant dinner every night--you deserve it.

Steps:
- Place milk shallots and water into frying pan bring to the boil. Add cod for 5 minutes then remove it. Take milk off the stove and stirring constantly add cheese, then peppers. Simmer off the stove. Replace cod to continue cooking slowly.
- Prepare asparagus by bending the stem and where it snaps discard the bottom bit (too woody).
- In a small saucepan boil water then add asparagus and sea salt.
- Boil for only 2 minutes then remove from water.
- Prepare lettuce by shredding it.
- Cut small tomatoes into 4 pieces.
- Cook calamari in olive oil and lemon juice and pepper in a very hot skillet or frying pan for only 3 minutes.
- Presentation: Place shredded lettuce on large plate first.
- Then criss cross asparagus on top, spears out.
- Place smoked cod on top of asparagus.
- Then layer calamari over fish in a line.
- Pour about 2-3 tablespoons of cheese sauce over whole meal.
- Cracked pepper and salt if desired over that.
- For personal interest this recipe has 9g carbs in it.
EASY! OVEN-BAKED COD
Taken from Rachael Ray's 30-minute meals, this is amazingly quick, fresh, and light - can be made with any type of fish fillet. Of course, my usual salad-in-a-bag is a lifesaver here, and fresh broccoli steamed in the microwave or asparagus roasted alongside the fish completes the meal!

- Preheat oven to 400°F Line your pan with aluminum foil and lightly brush with olive oil, or use a bit of cooking spray.
- Combine parsley, garlic, lemon zest, and coarse salt on the cutting board. Finely chop, then combine with the breadcrumbs in a shallow plate.
- Brush top of each fillet with olive oil. Press fillet into the crumb mixture. Place fillets in baking dish, crust-side up. Bake until firm, about 12-15 minutes, depending on the thickness of the fish. Serve with lemon wedges.
