4 teaspoons taco seasoning mix
1 cup salsa
1 cup shredded Cheddar cheese

Steps:

  • Mix first 8 ingredients in glass or plastic bowl. Cover and refrigerate at least 1 hour to blend flavors. This is your Tropical Fruit Salsa.
  • Heat oven to 425 degrees. Melt butter in a rectangular baking pan, 13 x 9 x 2 inches, in oven.

Not your typical church lady luncheon! If you want, you can easily make this into a great appetizer. Cut the chicken into bite sized pieces before breading and serve with a bowl of salsa on the side. This works well with chicken thighs too, and those pieces are cheaper.

1 1/2 cups fresh pineapple, finely diced

salt and pepper
6 boneless skinless chicken breasts
2 cups unsweetened coconut, shredded

  • Toss first 7 ingredients together in a bowl. Season with a little salt and pepper.
