This Cowboy Chicken is packed with wholesome veggies, beans, corn, and loads of flavor! Top it off with delicious cheese and this one dish meal was made to please!

Steps:
- Lay the chicken breast flat in a casserole dish, then sprinkle 1 tbsp of the italian dressing seasoning over the top.
- In a bowl, mix the black beans, black eyed peas, fire roasted tomatoes, corn, onion, bell pepper, garlic, oil, lime juice, and the remaining 1 tbsp dressing mix until combined.
- Spread the bean mixture over the seasoned chicken. Bake uncovered on the middle rack at 375˚F for 45-55 minutes or until the chicken is cooked through (internal temp 165˚F)
- 5 minutes before the baking is finished, remove the dish and cover the top evenly with cheese and return to the oven to cook until done.
- Garnish with cilantro and serve over rice or with your favorite side dishes. Enjoy!

- In a 4-5-qt. slow cooker, combine broth and dressing mix; add chicken. Cover and cook on low for 6 hours. Remove chicken to cutting board; shred with two forks and return to slow cooker. , Stir in soup and cream cheese. Cover and cook on low until cream cheese is melted, about 30 minutes. Serve over rice or noodles. Add optional toppings as desired.

Steps:
- Put all seasoning ingredients in a small bowl and mix well.
- Cut the fat off the chicken and then put in the crockpot.
- Top the chicken with the seasoning.
- Empty the jar of salsa in the crockpot.
- Drain corn and dump over chicken.
- Cover and cook on low for 4 hours.
- Drain and rinse black beans thoroughly. Then dump into crockpot.
- Cover and cook for an additional 1-2 hours.
- Serve over rice and top with your favorite toppings; sour cream, greek yogurt, cheese, guacamole, etc.
- ENJOY!
CROCK POT WHOLE CHICKEN
Tender, fall-off-the-bone chicken! Skip the overnight refrigeration if you are in a hurry. For variety, eliminate the onion and substitute a quartered lemon or two, stuffed into the chicken cavity. Chef Shapeweaver had a good suggestion: Use Fajita Seasoning Mix #28011 as another variation. Thanks! The standard size slow cookers are a bit too small and a whole chicken won't fit. You'll need a 6-quart slow cooker for this recipe.

Steps:
- In a small bowl, combine the spices.
- Remove any giblets from chicken and clean chicken.
- Rub spice mixture onto the chicken.
- Place in resealable plastic bag and refrigerate overnight. (I usually skip this step because I'm always in a hurry).
- When ready to cook, put chopped onion in bottom of crock pot.
- Add chicken. No liquid is needed, the chicken will make its own juices.
- Cook on low 4-8 hours.
- Note: I highly recommend a pop-up timer in the chicken because some crock pots cook faster/slower than others (my crock pot cooks this recipe in 4-5 hours).

- 1. Place chicken in a 5-6 quart greased slow cooker. 2. In medium bowl mix brown sugar, mustard, and salsa. 3. Pour mixture over chicken. Add water to cover chicken, if needed. Cook on low for 6-8 hours or high for 4 hours. 4. With 30 minutes of cook time remaining remove the lid and shred the chicken using two forks. 5. Add the beans, corn, and sour cream to the slow cooker and mix together with the chicken. Replace lid and cook for remaining 30 minutes. 6. Serve over rice with sour cream.

- Sprinkle chicken with salt and pepper.
- Place in slow cooker.
- Combine ginger, garlic, broth and syrup from pineapple; set aside.
- Cut pineapple slices into fourths.
- Arrange pineapple and water chestnuts over chicken.
- Pour ginger sauce over all.
- Cover and cook on high 1 hour; reduce heat to low and cook an additional 2 to 3 hours or until chicken is tender (it can be cooked up to 8 hours).
- Add green onions.
- Dissolve cornstarch in soy sauce and vinegar.
