½ English cucumber with peel, grated
1 clove garlic, pressed
2 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil
2 teaspoons grated lemon zest
3 tablespoons chopped fresh dill
1 tablespoon salt, or to taste
1 tablespoon freshly ground black pepper, or to taste

Steps:

  • Stir together yogurt, grated cucumber, garlic, lemon juice, and olive oil in a bowl. Add lemon zest, dill, salt, and pepper; whisk until smooth. Pour into a serving dish, cover tightly, and refrigerate 8 hours before serving.

1 (16 ounce) container low-fat plain yogurt
1 cucumber, peeled, seeded, and grated
1 clove garlic, minced
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh mint
1 tablespoon fresh lemon juice
salt and pepper to taste

Steps:

  • Line a colander with two layers of cheesecloth and place it over a medium bowl. Place the yogurt on the cheesecloth and cover the colander with plastic wrap. Allow yogurt to drain overnight.
  • Lay grated cucumber on a plate lined with paper towel; allow to drain 1 to 2 hours.
  • Combine the drained yogurt, cucumber, garlic, parsley, mint, lemon juice, salt, and pepper in a bowl. Refrigerate for at least 2 hours before serving.

Another variation of tzatziki. This recipe is adapted from "The Olive and the Caper," a Greek cookbook that I checked out from the library. This is great over baked salmon, gyro-style sandwiches, as a sauce for vegetable fritters... etc. This is best made several hours (up to the night before) before serving.

1 1/2 cups plain yogurt (12 ounces, I use Greek or fat-free plain)
1/2 teaspoon salt
4 teaspoons garlic, minced (from a jar)
1 small cucumber (I use a medium one)
1 tablespoon fresh dill, chopped or 1 teaspoon dried dill
1/4 teaspoon fresh ground pepper
1 tablespoon red wine vinegar

Steps:

  • In an airtight container (that can hold 2 cups), combine the yogurt, salt, and the garlic.
  • Peel the cucumber, and remove the seeds if they are large. Finely chop the cucumber.
  • Squeeze the cucumber bits to get rid of any excess liquid, then add it to the yogurt.
  • Stir in the dill, pepper, and the vinegar. Mix thoroughly.
  • Cover and refrigerate for up to two days.

This is the cool and creamy sauce that usually is served as a condiment on Greek Gyro sandwiches. The recipe calls for the thicker, Greek Yogurt, also called, "Greek Cheese". If you can't find this type of yogurt, you can use plain, regular yogurt from the grocery store. But in order to get the sauce to the desired thicker consistency, you need to suspend the yogurt in a cheesecloth for a couple of hours to drain some of the water off. If you don't mind it moderately runny, you can just make it as is and it is still delicious, just a little more messy. 3 cups Greek yogurt (also called Yogurt Cheese, see below for alternative)
3 tablespoons lemon juice (or juice of one lemon)
1 garlic clove, minced
1 large English cucumber, diced (the long, skinny ones)
1 tablespoon salt (for salting cucumbers)
1 tablespoon fresh dill (or both, depending on preference) or 1 tablespoon of fresh mint, chopped (or both, depending on preference)
salt & freshly ground black pepper

Steps:

  • Peel cucumbers and dice. Put them in a colander and sprinkle with the tablespoon of salt (draws water out). Cover with a plate and sit something heavy on top. Let sit for 30 minute Drain well and wipe dry with a paper towel.
  • In food processor or blender, add cucumbers, garlic, lemon juice, dill and/or mint, and a few grinds of black pepper. Process until well blended, then stir into yogurt. Taste before adding any extra salt, then salt if needed. Place in refrigerator for at least two hours before serving so flavors can blend.
  • This will keep for a few days in the refrigerator, but you will need to drain off any water and stir each time you use it.
  • ** If you can't find the thicker Greek Yogurt Cheese, you can use regular, plain yogurt that is either full fat or low fat. To thicken, spoon yogurt into cheese cloth that has been quadrupled. Draw the corners of the cloth up and tie together. Suspend above a bowl for 2 hours so that water can drip out. The consistency of the yogurt should be like that of sour cream.
  • You can skip this draining process, if you want, but you will have a moderately messier, runnier result.

You can add a little olive oil if you need to get in your healthy oil for the day. You can also add a little fresh dill.

1/2 cucumber
3 garlic cloves

Steps:

  • Peel the cucumber and remove the seeds. Grate coarsely. Put the grated cucumber in a bowl and sprinkle generously with salt. Let sit for 10 minutes, then drain and squeeze out as much liquid as you can. If you're concerned about salt, rinse the cucumber and squeeze again.
  • Peel and mince the garlic. I love garlic, so you may want to use a little less.
  • Mix the cucumber, garlic, and yogurt. Let sit for a bit to mingle the flavors.
  • Optional: Add olive oil and or minced fresh dill.

2 cucumbers, peeled and grated (strained of excess juice)
1/2 cup fresh dill, chopped

Steps:

This is worth making it is so delicious! Greek yogurt is richer and thicker then regular yogurt and is the best used for this recipe, if you cannot find Greek yogurt just use 4 cups regular full-fat plain yogurt and drain it in the fridge through a triple thickness of cheesecloth for 8 hours or overnight, if you are using Greek yogurt you will not have to strain it, once you try Greek yogurt you will never go back to regular yogurt again! Plan ahead this needs to chill for a minimum of 2 hours, you won't be able to keep your spoon out of the bowl LOL! Make certain to drain the cucumber very well for this. Serve this anyway or with anything you want to, it is great on pita. Prep time is only if you are using the Greek yogurt if you are straining the yogurt prep time will be more.
