1 (10 1/2 ounce) can condensed beef broth
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1 tablespoon Worcestershire sauce
1 tablespoon butter
1 (12 ounce) can evaporated milk
8 ounces shredded provolone cheese
1 (15 ounce) can diced potatoes, drained
1 (4 ounce) can sliced mushrooms, drained (optional)
2 tablespoons cornstarch

Steps:

  • Preheat the oven to 350°F . Lay the Steak-ums out on a baking sheet then bake in the oven until no longer pink (around 5-7mins).
  • Meanwhile, pour the broth into a large pot. Add in the spices, worcestershire, butter, milk, & cheese, stir until melted.
  • Take the beef out of the oven then shred with a fork & knife. Add to the pot along with the potatoes & mushrooms (if using).
  • Simmer on low for 10 minutes. Mix the cornstarch with a little water then stir into the pot. Continue to simmer until thickened. Serve with a loaf of french bread.

8 slices baguette
⅓ cup butter
1 large onion (diced)
3 ribs celery (sliced)
1 ½ cups mushrooms (sliced)
1 green pepper (sliced)
⅓ cup flour
1 ½ tablespoons Worcestershire sauce
4 dashes hot sauce (such as tabasco)
4 cups beef broth
1 cup light cream
8 ounces provolone cheese (shredded, divided)
6 ounces cheddar cheese (shredded)
1 pound top round steak (thinly sliced (see note below))

Steps:

  • Place steak in the freezer (for about 15 minutes before slicing).
  • Top each baguette slice with about 1 tablespoon of provolone cheese. Broil until bubbly and set aside.
  • Cook onion, celery and mushrooms in butter until tender. Add flour and cook 1 to 2 minutes
  • Stir in beef broth a little at a time stirring until smooth after each addition. Add Worcestershire sauce, hot sauce and green peppers. Simmer until vegetables are soft, about 10 minutes.
  • Add cream and simmer an additional 5 minutes. Remove from heat and stir in cheeses until melted.
  • Meanwhile, thinly slice steak. Heat 1 tablespoon of olive oil over medium-high heat. Add beef and cook until browned.
  • Place beef in the bottom of each bowl and top with hot soup. Serve with cheese toasts.

Steps:

Everyone's favorite sub sandwich deconstructed into a tasty soup!

1 tablespoon vegetable or olive oil
1 pound lean steak (, thinly sliced and cut into 1/2" pieces (or use lean ground beef))
kosher salt and freshly ground black pepper, (and/or steak seasoning)
8 ounces white or cremini mushrooms, (sliced thin)
1 medium onion, (sliced thinly into short strips)
1 green bell pepper, (sliced into short julienne strips)
1 tablespoon tomato paste
1 teaspoon smoked paprika
1/2 teaspoon dried oregano or marjoram ((or Italian seasoning blend))
2 tablespoons all-purpose flour
15 ounce can beef broth
6 ounces beef consomme, (not diluted with water (about 1/2 can))
1 tablespoon Worcestershire sauce
1 heaping teaspoon mushroom or beef Better than Bouillon paste
1/3 cup heavy cream or half-and-half
salad croutons, (crushed a bit if large)
shredded cheese, (such as provolone, fontina, aged cheddar)

Steps:

  • Season the steak strips or ground beef with kosher salt and black pepper, or your favorite ground steak seasoning.
  • Heat the oil in a 4-5 quart Dutch oven or soup over medium heat until the surface shimmers.
  • Add the beef to the pot.
  • Cook, stirring frequently, until mostly browned. Check the pot for fat. If there's more than a couple of tablespoons's worth, drain or spoon some of it off.
  • Add the mushrooms and saute until they've given off most of their liquids.
  • Add the onions and green peppers, plus a big pinch of salt, and saute until softened, stirring frequently.
  • Scoot everything in the pot off to one side, and let some of the liquids pool in the cleared area.
  • Spoon the tomato paste into the liquids, along with the smoked paprika, dried herbs, and a big pinch of salt. Stir the paste until fragrant, and then mix into the rest of the vegetables and meat.
  • Sprinkle the flour over the mixture and stir. It will all become a bit pasty; that's good. Continuing stirring for 15 seconds or so to cook off the raw flavor of the flour.
  • Pour in the broth, consomme, soy/Worcestershire sauce, plus a 1/4 cup of water, stirring well.
  • Raise the heat to bring the soup to a gentle bubbling, and simmer for 10 minutes.
  • Mix in the Better than Bouillon paste, and turn heat to low.
  • Pour the dairy in small bowl, and spoon an equal amount of the hot soup liquids into it, stirring or whisking constantly, until smooth. Add to the soup, mixing well.
  • Serve with toppings and a side of crusty baguette.

1 green pepper, diced

Steps:

  • Melt butter in large, heavy-bottomed stock pot or Dutch oven over medium heat.
  • Add green peppers, onion, and mushrooms and saute until tender (about 5 minutes).
  • Add flour and cook another 5 minutes stirring often. This is an important step to cook out the flour taste.
  • Slowly whisk in milk and bring to a simmer stirring often until soup thickens.
  • Reduce heat to medium low and stir in beef consomme, salt and pepper.
  • Slowly stir in provolone until all is melted and incorporated into soup.
  • Remove from heat and stir in roast beef.
  • Serve with a crusty loaf of french bread.
  • To freeze: Prepare soup as directed and allow to cool. Place in rigid freezer container. Seal, label and freeze.
  • To serve: Thaw in fridge. Reheat in microwave or on stovetop,stirring to recombine the soup.

1 small onion, chopped
1 carrot, chopped
1/4 teaspoon celery seeds
2 cloves garlic, chopped
1/3 cup plus 2 tablespoons all-purpose flour
2 teaspoons Worcestershire sauce
1/2 teaspoon hot sauce
6 cups low-sodium chicken broth
2 soft hoagie rolls, cut into 1/2-inch cubes
Kosher salt and freshly ground pepper
8 ounces cheddar cheese, shredded
8 ounces provolone cheese, shredded
1 pound shaved beef steak or roast beef
1/4 cup jarred sliced pepperoncini
2 tablespoons chopped fresh parsley, plus more for topping

Steps:

  • Preheat the oven to 400 degrees F. Heat 2 tablespoons olive oil in a Dutch oven or heavy-bottomed pot over medium-high heat. Add the onion, carrot, celery seeds and garlic and cook, stirring occasionally, until the onion softens, about 3 minutes. Add 1/3 cup flour, the Worcestershire sauce and hot sauce; cook, stirring occasionally, about 2 minutes. Add the chicken broth and 2 cups water and bring to a boil. Reduce the heat to medium low and cook until the vegetables are tender, about 20 minutes.
  • Meanwhile, toss the bread cubes with 1 tablespoon olive oil on a baking sheet; season with salt and pepper. Bake until golden and crisp, about 7 minutes; set aside.
  • Puree the soup in a blender until smooth. Return to the pot and bring to a boil, then reduce the heat to medium low and simmer 5 minutes. Toss the cheddar, provolone and the remaining 2 tablespoons flour in a bowl; slowly whisk the cheese mixture into the soup until melted. Return to the blender and puree until smooth. Pour back into the pot and bring to a low boil; remove from the heat.
  • Heat the remaining 2 tablespoons olive oil in a large skillet over medium-high heat. Add the beef and cook, stirring occasionally, until browned, about 3 minutes. Stir in the pepperoncini and parsley and season with salt and pepper. Ladle the soup into bowls; top with the beef, croutons and more parsley.

Steps:

  • Place steak in freezer for 30 to 45 minutes; this makes it easier to slice the meat. Remove the meat from the freezer and slice very thinly.

  • Place several slices of the meat on the bottom half of the roll, spoon some of the cheese sauce over the meat, and top with the mushrooms, onions, and peppers.
  • Melt butter in a medium saucepan over medium heat. Whisk in the flour and cook for 1 minute. Slowly whisk in the warm milk, and cook, whisking constantly until thickened, about 4 to 5 minutes.   • Heat oil and butter in a large saute pan over high heat. Add the mushrooms and cook until the mushrooms are golden brown. Stir in the parsley and season with salt and pepper.
  • Heat butter and oil in a large saute pan over medium heat. Add the onions, season with salt and pepper, and cook slowly until golden brown and caramelized, stirring occasionally, approximately 30 to 40 minutes.
  • Heat the oil in medium saute pan over high heat. Add the peppers and cook until soft. Season with salt and pepper.

300g steaks
2tbsp sunflower oil
1 onion , sliced
1 red pepper , sliced
1 green pepper , sliced
2tbsp white wine vinegar
8 cheese slices
50g grated mozzarella
4 soft white sub rolls

  • Trim away and discard the long piece of fat running down the side of the steaks. Cut each steak in half and put on a baking tray, then transfer to the freezer and freeze for 40 mins.
  • Heat the oil in a heavy-based pan or casserole dish set over a medium heat. Add the onion and peppers along with a good pinch of salt and fry for 20 mins, or until the onions are golden and sticky. Add the vinegar and cook for a further 5 mins. Season to taste.
  • Using a sharp knife, slice the steak as thinly as possible and pile the slices into four portions. Heat a skillet over a high heat until almost smoking. Put one portion of the steak slices in the pan in a pile that's roughly the length of your rolls. Fry for 3 mins over a high heat until some of the steak is cooked through, with pink bits remaining. Pile a quarter of the onion mixture on top, as well as a quarter each of the cheese slices and the mozzarella. Continue to cook undisturbed over a medium heat for 5-10 mins until the meat is brown and crisp around the edge and the cheeses have melted. Split one of the rolls open and carefully scoop the meat and cheese mixture into it. Repeat with the remaining meat, onions, cheese and rolls.
