  • Wash lettuce leaves very well, let them drain in a colander, and dry them on a paper towel. You can also use a salad spinner.

1/2 bunch dill, chopped ((about 1/4-1/3 cup))
1/2 large English cucumber ((optional))
1/2 cup extra virgin olive oil
2 tablespoons red wine vinegar (or freshly squeezed lemon juice)
1/4 teaspoon sea salt
1 teaspoon Greek oregano ((rigani))

Steps:

  • Wash and dry the lettuce, cucumber, and scallions.
  • Thinly slice the lettuce cross-wise, like a chiffonade. Move lettuce to a large bowl.
  • Thinly slice the scallions (both white and green parts) and add to the bowl. Add the chopped dill.
  • If using, cut the cucumber in half length-wise. Then thinly slice each half cross-wise. Add to the bowl. Toss the ingredients to combine.
  • In a small bowl, whisk the dressing ingredients and toss with the salad.*
  • Serve with crusty bread and feta cheese.

½ cup crumbled feta cheese
¼ cup fresh lemon juice
1 (heaping) teaspoon lemon zest
4 cloves garlic
1 teaspoon salt
¼ teaspoon black pepper
¼ cup olive oil
1 tablespoon fresh chopped dill
½ teaspoon fresh chopped oregano
1 medium-small head romaine, chopped
2 cups arugula
½ small red onion, quartered and sliced thinly
1 cup cherry tomatoes, halved
2 medium-small Persian cucumbers, sliced
1 cup pitted Kalamata olives, whole of halved
½ cup feta cheese, crumbled

1 Tbs. good-quality Champagne or Chardonnay vinegar
1-1/2 tsp. granulated sugar
1 tsp. minced garlic
1/2 cup plain whole-milk Greek yogurt
1/4 cup plus 1 Tbs. extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 large head romaine
1 English cucumber
1 cup (1 oz.) baby arugula
3/4 cup lightly toasted walnut halves, 2 to 3 Tbs. reserved for garnish
2 Tbs. chopped fresh dill
1 Tbs. chopped fresh mint
1 Tbs. chopped fresh flat-leaf parsley
Kosher salt and freshly ground black pepper
1/4 tsp. Aleppo pepper or a scant 1/4 tsp. crushed red pepper flakes

Steps:

  • In a small bowl, combine the lemon juice, vinegar, sugar, and garlic. Let stand for at least 10 minutes to mellow the garlic. Whisk in the yogurt. Slowly drizzle in the oil, whisking constantly to combine. Season to taste with salt and pepper. Refrigerate until ready to use.
  • Wash and thoroughly dry the romaine leaves (the dressing won't cling if the lettuce is wet). Slice the leaves crosswise 1/4 inch thick and transfer to a large bowl.

Gyro Meat:
1 tablespoon olive oil
1.5 lbs. ground beef or lamb
1 cup diced red onion
6 cloves minced garlic
2 teaspoon dried oregano
2 teaspoon ground coriander
2 teaspoon dried thyme
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
2 teaspoon lemon juice
1/3 cup chopped fresh parsley
1/4 cup chopped fresh dill
chopped romaine lettuce
chopped tomatoes
chopped cucumber
Tzatziki Guacamole:
2 large avocados
1 medium or 1/2 large cucumber
1/4 cup fresh chopped dill
2 tablespoons lemon juice (or more, if you like)
salt to taste

Steps:

  • In a small bowl, combine the oregano, coriander, thyme, paprika, salt and pepper. Set aside.
  • Heat the olive oil in a large skillet over medium-high heat. Once hot, add the onion and saute for 3-5 minutes, or until it begins to soften. Add the garlic and stir until fragrant.
  • Add the meat to the pan and break it up with a spatula to encourage it to brown. When it's about halfway through cooking, add half of the spice blend. Continue cooking until the meat has browned. Add the remaining spice blend. Let the meat keep cooking so it sort of shallow fries itself in the residual fat in the pan. Once the meat is browned and pretty crispy, stir in the lemon juice, fresh parsley and fresh dill.
  • To prepare the tzatziki, scoop the flesh out of the avocados and mash them until fairly smooth along with the lemon juice.
  • Use a box grater to grate the cucumber (I like using a combination of the small and medium sized holes on the grater to give the dip more texture).

Grilled Romaine Salad with Creamy Avocado Dressing image

Number Of Ingredients 13

2 heads of romaine, halved lengthwise, rinsed and dried well
Garlic infused oil, or olive oil, for brushing
3-4 hard-boiled eggs, quartered
1 heaping cup cherry tomatoes, quartered
6 strips of cooked bacon, roughly chopped up
Fresh pepper, as needed
Yields about ¾ cup
1 small avocado
1 small garlic clove
½ cup (10g) dill
1 ½ tbs lemon juice
¼ cup plain greek yogurt
3-4 tbs water

Steps:

  • Begin by making the dressing. Place all of the ingredients in a food processor, or blender, and process until smooth. Add the water as need (1 tbs at a time) until desired consistency is reached. Taste the dressing and add more salt to taste. Transfer to an airtight container and store in the fridge for up to 5 days.
  • Heat an outdoor grill to medium-high heat (a grill pan set over medium-high heat can also be used). Brush each of the cut sides of the romaine with oil of choice, place on the grill, and cook for about 2-3 minutes, turning once, until slightly wilted and char marks appear.
  • Divide each half of romaine between four plates. Garnish each plate with an equal serving of cherry tomatoes, bacon, and eggs. Drizzle desired amount of dressing on each salad with a few cracks of pepper. Enjoy these salads right away.

This is an extremely simple, yet wonderfully delicious salad that I make when I see freshly made Feta in the grocery store. It was introduced to me as a child, and ever since then...well I am an addict :) I have also made every friend of mine that has tried this one as well. If you like lots of lemon, you like dill, and you love feta, you will love this salad!

1 head romaine lettuce
5 ounces feta cheese
2 lemons
1/4 cup olive oil
1 bunch fresh dill

Steps:

  • Wash Romaine and cut across the width until chop off the end. Put aside.
  • Juice both lemons and set aside.
  • Chop dill (preferably stemmed) until somewhat minced, make sure to at least have 2 large handfulls.
  • Crumble Feta into a Ziploc bag with hands and set aside.
  • Pour olive oil, lemon juice, and dill into Ziploc bag that contains the Feta.
  • Close the Ziploc and shake until the dressings looks creamy to an extent.
  • Throw some of the chopped Romain into the Ziploc and continue to shake.
  • Pour out Ziploc into bowl with remaining Romaine and mix!
  • Enjoy the wonderful meld of flavors!
