2 tablespoons lemon-pepper
1 tablespoon dried basil
1 tablespoon poultry seasoning
2 tablespoons olive oil
6 Cornish game hens, about 1 1/2 pounds each, rinsed and dried thoroughly
1 green bell pepper, large dice
2 stalks celery, large dice
1 onion, large dice

Steps:

  • Preheat oven to 375 degrees F.
  • In a small mixing bowl, stir together salt, lemon pepper, dried basil and poultry seasoning. Rub olive oil all over the hens and season each with the salt mixture. Place the hens on a baking sheet pan with plenty of space between them. You may need to use 2 pans. Loosely stuff the cavities of each hen with some green bell pepper, celery and onion. Roast the hens in the preheated oven for about 1 hour or until an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear. Remove the hens from the oven, loosely tent with foil and let rest 10 minutes before carving or serving.

2 Cornish game hens
6 tablespoons Greek yogurt
1 teaspoon lemon juice
1 teaspoon ground paprika
½ teaspoon olive oil
½ teaspoon garlic salt
¼ teaspoon ground thyme

¼ teaspoon dried oregano
¼ teaspoon dried rosemary
¼ teaspoon dried savory

Steps:

  • Place Cornish game hens in a large resealable plastic bag.
  • Mix Greek yogurt, lemon juice, paprika, olive oil, garlic salt, thyme, black pepper, oregano, rosemary, and savory together in a small bowl. Pour yogurt mixture over game hens, turning to coating them completely and get some of the mixture into their cavities. Seal bag, removing as much air as possible, and refrigerate, 2 hours to overnight.
  • Preheat grill for low heat and lightly oil the grate.
  • Remove game hens from bags and pat dry. Discard yogurt mixture. Grill until skins starts to brown, about 3 minutes per side. Cover grill and cook game hens, rotating if needed, until an instant-read thermometer inserted into the thickest parts of the thigh, near the bone, reads 165 degrees F (74 degrees C), 15 to 20 minutes.
  • Remove game hens from the grill and slice open on the breast side, flattening them out like open books. Return to the grill, cut-side down, cover grill, and cook until browned, about 4 minutes.

Cornish Hen Recipe with a Mediterranean Garlic and Spice Marinade image

2 celery sticks, (cleaned and chopped in large pieces)
1 large sweet onion, (roughly chopped)
1 lime or lemon, (juice of)
4 Cornish hens, (roughly 1 pound to 1.5 pounds each)
2 cup chicken broth
15-20 garlic cloves
Salt
2 1/2 teaspoon hot or sweet paprika
1 1/2 teaspoon ground allspice
1 1/2 teaspoon dried thyme
1 teaspoon ground black pepper
1/2 teaspoon nutmeg
1 lemon or lime, (juice of)
2 tablespoon Private Reserve Greek extra virgin olive oil

Steps:

  • Preheat the oven to 425 degrees F.
  • Make the Mediterranean garlic and spice marinade. Combine the garlic spice rub ingredients in food processor. Run the processor until you achieve a pasty spice mixture or rub.
  • Now to each of the hens, apply the marinade generously on the outside and in the cavities. Lift the skins and apply some of the marinade underneath (this is the key to flavor).
  • Heat a lightly-oiled cast iron grill or skillet. Turn the the heat to medium-high and brown each of the hens on all sides. Set the hens aside momentarily to cool.
  • Once the hens are cool enough to handle, stuff each hen's cavity with the chopped onions and celery. Now squeeze juice of one lime or lemon on the hens. Add all the used lime or lemon halves in with the onion and celery stuffing. Sprinkle each hen lightly with a dash of seasoned salt, if you like.
  • Place the hens in a large cast iron skillet or a roasting pan. Add two cups of good chicken broth from the side of the skillet.
  • Bake in the 425 degrees F heated-oven for 1 hour to 1 hour and 15 minutes or until the hen juices run clean, basting every 15 minutes with the broth. Remove from the oven and cover loosely with foil for 15 minutes before serving.

1/4 cup sun-dried tomato (not oil packed)
1/3 cup of fresh mint, chopped
1/4 cup kalamata olive, pitted and chopped
1/4 cup golden raisin
2 garlic cloves, chopped
1/2 teaspoon lemon zest
1/4 teaspoon salt
2 Cornish hens, halved

Steps:

  • Preheat the oven to 425. In a small saucepan bring 1 cup of water to boil. Add the sun-dried tomatoes and cook for 5 minutes to blanch.
  • Reserving 2 tablespoons of the cooking liquid, drain the tomatoes. Place the reserved cooking liquid in a medium bowl. When cool enough to handle, coarsely chop the sun-dried tomatoes and add them to the bowl.
  • Add the mint, olives, raisins, garlic, lemon zest, and salt to the sun-dried tomatoes, stirring to combine. Using your fingers, carefully lift the game hens' breast skin and as much of the thigh skin as you can without tearing it.
  • Place ¼ of the stuffing mixture under the skin of each hen half.
  • Place the hens, skin side up, on a rack in a roasting pan, and roast for 25 minutes or until they are cooked through. Remove the skin before eating.

2 Cornish game hens (1 1/2 to 1 3/4 pounds each)
Kosher salt and freshly ground pepper
2 lemons (1 thinly sliced, 1 zested and juiced)
2 tablespoons unsalted butter
1/2 onion, chopped
1 1/2 cups Israeli couscous
1 3/4 cups low-sodium chicken broth
1 zucchini, quartered lengthwise and sliced 1/4 inch thick
1/4 cup honey
1 teaspoon ground cumin
1/2 teaspoon paprika
3 tablespoons chopped fresh cilantro

Steps:

  • Preheat the oven to 450 degrees F. Cut the hens in half with kitchen shears, cutting along one side of the breastbone. Place the hens on a rimmed baking sheet, cut-side down; season with salt and pepper. Scatter the lemon slices over and around the hens. Roast until the hens are golden, about 20 minutes.
  • Meanwhile, melt the butter in a medium saucepan over medium-high heat. Add the onion and a pinch of salt. Cook, stirring occasionally, until softened, 3 minutes. Add the couscous and cook, stirring occasionally, until lightly toasted, 3 minutes. Add the broth; season with salt and pepper. Bring to a simmer, then reduce the heat to low. Cover and cook until most of the liquid is absorbed, about 8 minutes. Stir in the zucchini, cover and cook until tender, about 3 more minutes; set aside.
  • Combine the honey, cumin, paprika and lemon juice. Brush on the hens and continue roasting until cooked through, 5 to 7 more minutes.
  • Stir the cilantro and lemon zest into the couscous and season with salt and pepper. Serve with the hens and drizzle with any pan juices.

1/2 cup red wine vinegrette dressing
1 teaspoon chopped fresh rosemary leaves, plus 4 sprigs

1 teaspoon chopped fresh parsley leaves, plus 4 sprigs
4 Cornish game hens, rinsed
1 lemon, cut in quarters
1 (16-ounce) bag baby carrots
1 (16-ounce) bag frozen pearl onions, thawed
1/2 pound red potatoes, cut into small chunks
Salt and fresh ground black pepper

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with foil and put a baking rack on top.
  • Mix together the grill seasoning, dressing, and chopped herbs in a small bowl. Reserve 2 tablespoons. Generously rub the hens inside and out with the herb and dressing mixture. Stuff each hen with a sprig of each herb and a piece of lemon.
  • In a large bowl, combine the carrots, onions and potatoes with the reserved 2 tablespoons of dressing mixture, a generous pinch of salt and pepper. Put the vegetables in a large roasting pan and arrange the hens on top. Roast them until the juices run clear and an instant-read thermometer registers 180 degrees F when inserted into the thickest part of the thigh, about 50 to 55 minutes. Remove the pan from the oven, cover with foil and let the hens rest for 5 minutes before serving. Transfer the hens to a large serving tray with the roasted vegetables.

3 tablespoons finely chopped fresh parsley
1 1/2 tablespoons grated lemon zest

  • ROASTED GAME HENS WITH ASIAN SPICE RUB: Preheat oven to 350 degrees. Rinse the game hens and pat them dry. Season the cavities with salt and pepper and place a quarter lemon and a quarter onion in each cavity. In a small bowl, combine the butter, ginger and five-spice powder. Rub the five-spice mixture onto the hens. Place the birds, breast side up, in a shallow roasting pan. Pour the white wine into the pan. Bake for 45 minutes to 1 hour, until the juices run clear when the hen is pierced in the thickest part of the thigh. Remove from the oven and serve with the pan juices spooned over the hens. Yield: 6 servings
  • ROASTED GAME HENS STUFFED UNDER THE SKIN WITH HERBED RICOTTA: Preheat oven to 350 degrees. Place the ricotta in a fine sieve and drain for 30 minutes. In a medium bowl, combine the drained ricotta, Parmesan, egg yolk, herbs and lemon zest. Put the garlic clove through a garlic press and into the ricotta. Mix well, adding salt and pepper to taste. Rinse the game hens and pat them dry. Season the cavities with salt and pepper and place a quarter lemon and a quarter onion in each cavity. Loosen the skin on the breasts by sliding your fingers under the skin, being careful not to pierce it. Spoon the ricotta mixture under the skin (about 4 tablespoons of stuffing per bird.) Truss the birds. Place the birds, breast side up, in a shallow roasting pan. Pour the white wine into the pan. Bake for 1 hour, or until the juices run clear when the hen is pierced in the thickest part of the thigh. Remove from the oven and serve with the pan juices spooned over the hens. Yield: 6 servings

  • Preheat oven to 450°F. Sprinkle game hen with salt and pepper. Using fingers, loosen skin and rub spice blend between meat and skin.
  • Slice unpeeled clementines crosswise. Arrange clementines, artichoke hearts with juices from jar, and olives in single layer in 13x9-inch metal baking pan. Place hen atop clementine mixture.
  • Roast hen until golden and cooked through, about 25 minutes. Brush with pan juices. Transfer 1 hen half to each of 2 plates. Place baking pan atop burner over medium-high heat. SKILLET ROASTED GAME HENS W/FINGERLINGS AND SPROUTS



Skillet Roasted Game Hens W/Fingerlings and Sprouts image

I took inspiration from "My Man's Belly" blog and fine-tuned her recipe to my liking. No less than a 12" cast iron skillet is required (14" is even better). You can take this into any direction you desire by the type of seasoning blend (with salt included) you use. Alternately, you can use fresh herbs finishing off with salt and pepper. Lastly, the sprouts are a wonderful addition, but for those that can't stand them, though I have not tested it, I would imagine using all fingerlings would be fine.

2 (1 1/2 lb) Cornish hens, thawed, rinsed and patted dry inside and out
1/2 lb fingerling potatoes or 1/2 lb assorted fingerling potato
3/4 lb Brussels sprout, thick ends trimmed, loose outer leaves removed and cut in half
3 slices thick cut bacon, chopped (or cut with kitchen shears)
2 garlic cloves, sliced thin
2 tablespoons seasoning, blend (Creole, Mediterranean, Herbs de Provence, Lemon Pepper etc. amt. to taste)
1 tablespoon olive oil

Steps:

  • Pre-heat oven to 400 degrees with cast iron skillet in the oven while it's pre-heating.
  • To prepare the hens, gently pull the legs out and away from the body so that they become dis-jointed and lie flat on either side of the body.
  • Rub 1/2 tablespoon olive oil all over each hen. Sprinke each with seasoning blend to taste outside and inside the cavity; set aside.
  • Wash the potatoes and toss them into a bowl with about 1/2″ of water. Cover and cook for 2 minutes on high in the microwave. Discard water and set aside.
  • Remove the pan from the hot oven and drop bacon pieces onto one half of the pan.
  • Place the chickens into the other half of the pan, breast up. Make sure to place the legs and thighs flat against the bottom of the pan. Put the skillet back into the oven and cook for 15 minutes.
  • Remove the pan from the oven, brush breasts with a few dabs of the bacon drippings. To the pan add the potatoes and garlic slices over 1/2 of the bacon pieces and the brussels sprouts over the other half of the bacon pieces. Toss the potatoes and brussel sprouts with the bacon pieces to coat them in some of the fat.
  • Put the pan back into the oven and lower the heat to 350 degrees. Continue to cook for 45-50 minutes longer or until the juices from the legs and thighs run clear when pierced.
  • Serve with pan juices.

GREEK STYLE ROASTED CHICKEN

This Delicious dish was a real winner. I came up with it by combining 2 chicken recipes that I had. Fancy without a great deal of work! You can reduce the fat content by not using the olive oil and herbs on the outside, then when serving don't eat the skin! Also, it is just as yummy if you omit the ham. Haven't tried it without the feta, but I imagine that would be good as well.

1 tablespoon garlic-flavored olive oil (or plain)

Steps:

  • Preheat oven to 325.
  • Brush chicken with oil.
  • Combine oregano, parsley, garlic powder, and garlic salt.
  • Rub onto chicken.
  • Combine spinach, feta, ham, bread, pine nuts, chives, butter, and pepper.
  • Slip fingers in between skin and breast, and Lightly stuff the pockets on both sides.
  • Lightly spoon stuffing into main cavity and neck, if desired.
  • Place in broiling pan, breast side up.
  • Roast for approximately 1 1/2 hours, or until meat thermometer reads 180 when inserted into thigh, and juices run clear.
  • Serve with Greek-style rice and veggies!
