GREEK BEEF PITAS
A local fast-food pita restaurant inspired me to make my own Greek-style sandwiches at home. Add olives if you like. -Nancy Sousley, Lafayette, Indiana

- In a large skillet, cook beef, onion and garlic over medium heat 8-10 minutes or until beef is no longer pink and vegetables are tender, breaking up beef into crumbles; drain. Stir in oregano and 1/2 teaspoon salt., In a small bowl, mix yogurt, tomato, cucumber, dill and remaining salt. Spoon 3/4 cup beef mixture over each pita bread; top with 3 tablespoons yogurt sauce. If desired, top with additional tomatoes and cucumbers. Serve with remaining yogurt sauce.

- In medium bowl, combine yogurt, mayonnaise, cucumber, tomato, oregano and salt.
- Set aside.
- Sprinkle both sides of steak with garlic powder and pepper.
- In large non-stick or lightly oiled skillet, cook steaks for 1- 2 minutes per side or until desired doneness.
- Cover each pita half with lettuce; top each with steak, some sauce and feta and olives, if desired.

GRILLED SKIRT STEAK GYROS

- Preheat a grill to medium high. Make the marinade: Whisk the olive oil, garlic, mint (if using), oregano, paprika, 1 teaspoon salt, and pepper to taste in a large bowl. Transfer 1 tablespoon of the marinade to a small bowl; mix in the yogurt and 2 tablespoons water. Add the bell pepper and onion to the bowl with the remaining marinade and toss; remove to a plate with a slotted spoon. Add the steak to the bowl and toss.
- Grill the bell pepper, onion and steak, turning once, until lightly charred, about 4 minutes per side for the vegetables and 4 to 8 minutes per side for the steak (depending on the thickness). Set aside to rest, about 5 minutes. Meanwhile, grill the pitas until marked, about 1 minute per side.
- Slice the steak against the grain. Fill the pitas with the steak, grilled vegetables, tomato and watercress. Drizzle with the yogurt sauce.

- Combine spices and oil and press into meat on both sides.
- Cut meat into 1 inch cubes and toss with lemon juice and let stand for 5 minutes.
- Thread on skewers.
- Broil or grill for about 5 minutes, turnning once.
- Do not overcook.
- Combine sauce ingredients and serve with Souvlaki.

- In a small bowl, mix yogurt, parsley, garlic and 1/8 teaspoon salt. Toss beef with herbs, pepper and remaining salt., In a large cast-iron or other heavy skillet, heat 2 teaspoons oil over medium-high heat. Add onion; cook and stir until tender, 4-6 minutes. Remove from pan., In same skillet, heat remaining oil over medium-high heat. Add beef; cook and stir until no longer pink, 2-3 minutes. Serve on pitas; top with onion and sauce.

- Pre-heat the oven to 400 degrees. Place the baguette slices on a foil-lined baking sheet and spray the tops with cooking spray. Flip the slices over and spray the other side as well. Place the baguette slices in the oven for 10-14 minutes until the edges are golden.
- Combine the feta and cream cheese in the bowl of a food processor and run the food processor for 3-5 minutes until completely smooth and set aside.
- Bring the oil to medium heat in a large skillet. Add the basil, oregano, rosemary and garlic to the hot oil and stir together. Add the steak strips and stir to coat with the oil and spices. Sprinkle with a bit of salt and pepper. Cook, stirring and flipping occasionally, for about 5 minutes until the steak is cooked to taste.
- To build each sandwich*, take a toasted baguette slice and spread about 1 ½ tablespoons of the whipped feta across the surface. Top with 1/4th of the cooked steak (for me this was about 1.5 ounces), a chopped olive, half of a chopped cherry tomato and half a tablespoon of diced cucumbers.
