GARLIC ROASTED POTATOES WITH PANCETTA
Yummy roasted potatoes with garlic and rosemary

Steps:
- Preheat the oven to 375 degrees. Line a baking pan with parchment paper.
- Wash the potatoes but leave the skins on.
- Roughly chop the Pancetta into small pieces.
- Cut the potatoes into cubes about 1 1/2 inches. Transfer to a large bowl.
- Add the olive oil, garlic, rosemary, zest, pancetta, salt and pepper.
- Toss with your hands until all of the potatoes have been coated with the rest of the ingredients.
- Lay them out on the baking sheet making sure they are all the same level.
- Place them in the oven and bake for 40 minutes
- After 40 minutes, loosely move the potatoes around on the pan to ensure even cooking.
- Increase the oven to 425 degrees F and bake the potatoes for another 10 minutes.
- Serve at once .

- Preheat oven to 425 degrees. In a large pot of salted boiling water, cook potatoes until just tender, 10 to 12 minutes. Drain. Let potatoes dry 10 minutes, then spread in an even layer on a rimmed baking sheet.
- Drizzle potatoes with oil, and dot with butter. Taste a potato for seasoning. Add more salt if necessary, and season with pepper.
- Roast potatoes until beginning to turn golden, 30 to 35 minutes. Distribute onion evenly over potatoes. Reduce heat to 400 degrees, and roast until potatoes are golden and onions are tender, 25 to 30 minutes. Garnish with rosemary.
OVEN ROASTED POTATOES WITH GARLIC AND ROSEMARY
The original version came from Cuisine at Home. This is a truly easy side dish that is great for company. It goes wonderfully with roasted meat or chicken. Prep time includes 20 minutes resting time prior to roasting.

Steps:
- In a saucepan large enough to hold all of the potato chunks, bring water to a boil.
- Add potatoes, and boil for 2 minutes. You are not trying to cook the potatoes through at this point.
- In a large bowl, combine the oil, garlic, rosemary, salt and pepper. Be generous with the salt, or the potatoes will be bland.
- Drain the potatoes well, and add to the oil and garlic mixture.
- Mix gently, but thoroughly.
- Cover bowl, and let sit for at least 20 minutes, and up to 2 hours.
- Preheat oven to 450.
- Place potato mixture in a roasting pan.
- Bake for 20 minutes.
- Toss potatoes with a spatula.
- Return to the oven for 10 more minutes until cooked through and golden brown.
- Check seasonings, and add more salt or pepper as needed.
- Serve immediately.

- For the oil: Combine the oil, rosemary, garlic and some salt and pepper in a blender and blend for 2 minutes. Let the oil sit for 30 minutes, and then strain through a fine mesh strainer into a small bowl. Set aside 1/4 cup, plus more as needed, for the home fries, and reserve the rest in an airtight container for another use.
- For the home fries: Heat 1/4 cup of the rosemary oil in a large cast-iron skillet over medium heat. Add the pancetta and cook until golden brown and crisp. Transfer to a plate. Add more rosemary oil to the skillet, if needed. Add the potatoes in one layer and sprinkle with salt and pepper. Cook the potatoes, pressing the firmly with a spatula, until they are golden brown and crusty on the bottom. Turn the potatoes over, and repeat, adding more rosemary oil if needed. Stir in the parsley, red pepper flakes, reserved pancetta and cheese and serve from the pan.

- Preheat oven to 400°F Arrange pancetta slices on rimmed baking sheet, spacing apart. Bake until golden brown and crisp, about 20 minutes, watching carefully (do not turn). Drain on paper towels. Cool. Coarsely chop pancetta.
- Meanwhile, whisk lemon juice, rosemary, lemon peel, and garlic in small bowl. Gradually whisk in oil. Season dressing to taste with salt and pepper.

- Sprinkle pancetta and chopped parsley over potato salad.
