SPICY PEACH AND TOMATO CARPACCIO
Sure, carpaccio is generally made with paper-thin slices of meat or fish, but fresh peaches and tomatoes combine here for a plant-based option that tastes like summer on a plate. Look for produce that is at its peak but still slightly firm; chilling the peaches and tomatoes for a couple of hours should make them a little easier to slice very thinly, either with a sharp knife or a mandoline.

- Whisk together the apple cider vinegar and olive oil in a small bowl, then season with salt to taste. Set aside.
- Layer the peaches and tomatoes on a large platter, then sprinkle the jalapenos, shallots and grape tomatoes over the top. Drizzle with the dressing and garnish with fresh chervil or tarragon.
TOMATO CARPACCIO
Steps:
- Place the egg yolks, mustard, garlic, anchovies, lemon juice, 2 1/2 teaspoons kosher salt, and 1 teaspoon pepper in a food processor fitted with the steel blade and process for 15 seconds. Combine the olive and canola oils in a glass measuring cup. With the food processor running, slowly pour the oils in a thin stream down the feed tube, as you would to make mayonnaise. Add the grated Parmesan and pulse to combine. The mixture will be thin enough to drizzle on the tomatoes.
- Pour a puddle of dressing in the middle of 4 dinner plates. Core the tomatoes and slice crosswise with a serrated knife about 3/8 inch thick. Arrange overlapping slices of tomatoes decoratively on the plates. Sprinkle with the fleur de sel and drizzle more dressing onto the tomatoes with a tablespoon. Sprinkle with the capers, basil, shaved Parmesan, and pepper. Serve at room temperature with a pitcher of extra dressing on the side.
TOMATO PEACH SALSA
This fresh Tomato Peach Salsa is light and refreshing combining the flavors of red ripened tomato, yellow onion, and sweet fresh peaches accented with cilantro, green chilies, cider vinegar, and lime juice.

- Peel peaches and cut to remove pit. Then cut into large wedges.
- Cut tomato and onion into large wedges.
- Combine peaches, tomatoes, onion, cilantro, and garlic in a food processor. Pulse until coarsely chopped. Click here for a food processor.
- Add in green chilies, cider vinegar, lime juice, brown sugar, pepper and salt. Pulse food processor until combined and tomatoes and onions are preferred size.
- Transfer salsa to airtight containers and chill until ready to serve. Click for a 4 pack of 8 ounce jars.
- Store in the refrigerator. Serve with your favorite tortilla chips, pita chips, or on chicken or fish tacos. Yields 4 cups.

SPICY SEARED CARPACCIO OF BEEF
Carpaccio is of Italian origin, consisting of thin shavings of raw beef fillet, which may be drizzled with olive oil, lemon juice, balsamic vinegar or even mustard or mayonnaise. In this improvisation on the classic we sear the carpaccio to give it that nice seared grilled flavour and amazing colour, also adding to that we will use a variety of sauces to infuse various styles cuisines in the mix. This involves the use of just a few but good ingredients and is very easy to prepare.

- Make sure that the fillet is completely thawed and that it is standing at approximately room temperature. Spread the coriander seeds, green peppercorns on a cutting board and cover with a tablecloth. Using a bottom of a pan or a meat pounder smash the seeds and the peppercorns. Remove the table cloth, you should see no seed or pepper corn still intact. Sprinkle a generous amount of salt over the cutting board and add some freshly ground pepper. Spread the mix so that it is evenly spread out all over the cutting board.
- Place the fillet on the cutting board and roll and press the fillet of beef over the mixture and make sure that the mixture sticks with the beef. Once that is done, drizzle some olive oil on the fillet and ensure that the beef is now covered with a thin layer of oil. Leave the meat on the cutting board to absorb some of the flavours. In the mean time, get hold of a big grill pan or a ridged pan, and why not, you can do this even on a BBQ. Get the pan on medium-high heat and let it get very hot. Once it is hot, place the meat in the pan and sear the meat till it becomes brown and crisp on all sides. Should not take more then 5-10 minutes, rolling the fillet frequently so that the brown colour is uniform throughout the whole piece of fillet. With that done, turn off the burner and take the meat of the pan and put it on a cutting board to rest for 10 minutes.
- After the 10 minutes are over, start to slowly slice the fillet in thin slices, you should aim for slices less then 2mm in thickness. Get a big plate out, and spread the slices evenly to cover all the plate. Now its time to add some extra flavours in the mix. Drizzle the balsamic vinegar, sesame oil, soy sauce. Tear apart the Parma ham slices and sprinkle the parmesan shavings on top.

PEACH & TOMATO SALSA
This is a spicy salsa that my family eats with tortilla chips. My daughter serves it with grilled chicken. It is easy to prepare and process if you use the canned shortcuts. (Fresh is better, but it is still flavorful and spicy using canned tomatoes and peppers.) Use ONLY fresh, firm yellow peaches!

- Peel, pit, and chop peaches, and mix with lime juice.
- Peel and chop fresh tomatoes to measure 4 cups (If using canned diced tomatoes, drain excess juice before measuring).
- Combine all fresh fruits and vegetables in a large stainless steel pot. Add vinegar, honey,cilantro, cayenne, and crushed red pepper. ( Do not add canned vegetables yet).
- Bring mixture to boil over medium heat. Cook for 3 minutes, stirring frequently.
- Add any canned vegetables, and cook for 3 more minutes. .Continue frequent stirring.
- Turn heat to simmer.
- Ladle salsa into hot sterilized canning jars, leaving 1/4 inch headspace. Wipe jar rim with clean cloth or napkin. Top with new sterilized lid. Screw on band tightly.
- Place jars in canning pot. Add water, making sure tops of lids are covered.
- Bring canner to boil, and process for 10 minutes.
- Remove jars from canner, and place on towel in a cool spot.
- In about an hour, check to make sure that lids have sealed. Refrigerate or reprocess any that are not sealed.
- Allow to sit without moving for about 2 days.
- Label and store jars in a cool, dark place.
