1 tablespoon canola oil
4 medium unpeeled potatoes, cut into 1-inch pieces
5 medium carrots, cut into 1-1/2-inch chunks
1 celery rib, cut into 1-inch chunks
1 large onion, cut into 1-inch chunks
1 can (14-1/2 ounces) chunky stewed tomatoes
3 tablespoons quick-cooking tapioca
1/8 to 1/4 teaspoon pepper
1 cup frozen peas

Steps:

  • In a Dutch oven, brown steak in oil. Add the next eight ingredients. Cover and bake at 350° for 1-1/2 to 2 hours or until a thermometer reads 160°, stirring twice. , Stir in peas; cover and let stand for 5 minutes before serving.

1 tablespoon sugar
1/8 teaspoon pepper
2 dried bay leaves

Steps:

2 tablespoons olive oil
10 oz baby bella mushroom, quartered
1 yellow onion, diced
3 carrots, chopped
2 celery stalks, chopped
2 cloves garlic, minced
½ teaspoon dried rosemary
½ teaspoon dried thyme
½ teaspoon pepper
3 tablespoons tomato paste
2 tablespoons low sodium soy sauce
¼ cup flour
¾ cup dry red wine
4 cups red potato, diced
4 cups vegetable broth
2 leaves bay leaf

Steps:

  • In large pot or Dutch oven, heat the olive oil over medium heat. Once the oil begins to shimmer, add the mushrooms and cook for about 5 minutes, or until most of their juices have been released.
  • Add the onions, carrots, and celery, and cook for 4-5 minutes, or until onions are semi-translucent.
  • Add the garlic, rosemary, thyme, pepper, tomato paste, and soy sauce, and cook for 2-3 more minutes, until the herbs are fragrant.
  • Add the flour and stir until fully incorporated. Add the wine and stir until mostly absorbed.
  • Add the potatoes, vegetable broth, and bay leaves, and bring to a boil. Reduce the heat to medium-low and simmer for 45 minutes, stirring occasionally, until the potatoes are tender and the stew has thickened.
  • Remove the bay leaves.
  • Enjoy!

You simply toss all the ingredients into a large casserole dish or dutch oven just after lunch time. There's no browning involved. By about 4:00 p.m. your kitchen will greet you with wonderful slow-brasing aromas.

2 lbs boneless lean beef, cut into 1-1/2-inch cubes
1/4 cup flour
1/2 teaspoon dried thyme
1/2 teaspoon marjoram
1/2 teaspoon crumbled rosemary
1/2 teaspoon salt
1/2 teaspoon paprika
black pepper, As much as you like
1 (28 ounce) canned tomatoes, with liquid
8 large carrots, peeled and cut into thick slices
4 medium potatoes, scrubbed and cut in chunks
1 large onion, cut in chunks
1 bay leaf
1 small rutabagas or 1 small turnip, cut in chunks
fresh green beans, cut in pieces

Steps:

  • Trim any fat from meat cubes; set aside. Mix flour and seasonings together in a bag, put the meat in the bag too and shake to coat meat with the flour mixture. Place coated meat and all remaining ingredients in a 3-4 quart casserole or dutch oven and mix.
  • (TRUST ME - there will be enough liquid - do NOT add more than the canned tomatoes!).
  • Cover and bake at 275 degrees for 4 hours or until meat is very tender. This recipe makes four very LARGE servings (or smaller with leftovers) and is a great company recipe especially for those who can't cook or are pressed for time. Turn on or pre-set your oven to come on at 2:00 and you will be serving at 6:00. Serve with crusty bread or rolls, a green salad and a good bottle of wine. So easy and so delicious! Bon appetite!

1 onion, chopped
8 carrots, chopped
5 potatoes, chopped
¾ cup tomato sauce
⅓ cup water

1 teaspoon white sugar

  • In a large stock pot combine meat, onion, carrots and potatoes.

1 1/2-2 lbs beef stew meat
1/4 cup all-purpose flour
2 (16 ounce) bags frozen stew vegetables (onion, potatoes, carrots)
1 (14 ounce) can diced tomatoes (undrained)
1 bay leaf
1 (1 1/4 ounce) package Lipton Beef and Onion Soup mix
1/2 cup dry red wine or 1/2 cup water

Steps:

  • Preheat oven to 425°F In 2 1/2 quart casserole toss beef with flour, then bake uncovered 20 minutes - stirring once halfway through.
  • Reduce heat to 350°F Add frozen stew vegetables, tomatoes, bay leaf, soup mix and wine.
  • Bake covered 1 1/2 hour or until beef is tender. Stir after one hour.
  • Season to taste (season salt, garlic powder, ground black pepper).
  • Serve as is or over rice or noodles.

1.6kg whole chicken
1½ tbsp demerara sugar
400ml hot chicken stock
1 tbsp browning sauce (I use Grace)
1 tsp plain flour mixed with 25ml cold water
1-2 spring onions, sliced, to serve
rice and peas and slaw, to serve (optional)
8 thyme sprigs
1 onion, finely sliced
2 garlic cloves, chopped
½ scotch bonnet pepper, chopped
2 tomatoes, cut into wedges
2 tbsp all-purpose seasoning (I use Dunn's River)
1 tbsp chicken seasoning (I use Dunn's River)
6 whole pimento seeds, crushed
1 tsp black pepper
4 tbsp extra virgin olive oil

Steps:

  • Remove the skin from the chicken, joint it, cut the breasts in half and separate the legs and thighs.
  • Put the chicken pieces in a large bowl along with all the marinade ingredients. Toss, then rub the mixture into the chicken. Cover tightly and chill for 24 hrs.
  • Heat the oven to 200C/180C fan/gas 6. Tip the chicken and marinade into a deep ovenproof dish. Cover and bake for 40 mins, then remove the lid and stir in the sugar, stock, browning sauce and flour mixture. Bake for another 15 mins, uncovered, turning the chicken and basting it every 5 mins.
  • Check the chicken is cooked through. If not, bake for 15 mins more, then check again. Taste for seasoning, then scatter with the spring onions and serve with rice and peas and slaw, if you like.
