This classic Greek salad relies heavily on the ripest and most aromatic tomatoes and has become world-popular, a staple in almost any Greek restaurant.

4-5 large tomatoes (ripe)
1 cucumber
1 bell pepper (green)
1 large onion (red)
Garnish: salt (sea, to taste)
Garnish: oregano (dried, Greek
rigani )
Garnish: Olive oil (top quality extra virgin , to taste)
1/4 pound feta cheese , (Greek, sliced or crumbled)
Optional: pepper
1 dozen Greek olives (Kalamata, green Cretan olives, etc.)
1 tablespoon of water
Garnish: pepper (pickled pepperoncini hot peppers)

Steps:

  • Wash and dry the tomatoes, cucumber and green pepper. Clean off the outer skin from the onion, wash and dry.
  • Cut the tomatoes into bite-sized irregularly shaped chunks, removing the core. Salt lightly. Slice the cucumber into 1/4-inch slices, cutting slices in half (whether or not you peel the cucumber is a personal choice). Salt lightly. Slice the pepper into rings , removing the stem and seeds. Salt lightly. Slice the onion into thin rings.
  • Combine the tomatoes, cucumbers, green pepper and onion in a large salad bowl. Sprinkle with oregano, pour olive oil over the salad, and toss.
  • Just before serving, place the feta on top of the salad, either as one slice or crumbled, and sprinkle the cheese with oregano (and pepper, if desired). Toss in some olives.
  • Mix a little bit of oil with the water and drizzle over the top. Serve garnished with hot peppers.

1/4 cup top quality extra virgin olive oil
1 dozen Greek olive (Kalamata, green Cretan olives, etc.)
1 tablespoon water (optional)

6 tablespoons olive oil
1 1/2 tablespoons fresh lemon juice
1 tablespoon red wine vinegar
2 garlic cloves, minced
1 teaspoon dried oregano (Mediterranean is best)
1 head lettuce, torn into bite-size pieces ((I use Romaine)
3 large plum tomatoes, seeded and coarsely chopped
1 English cucumber, peeled and coarsely chopped (the long, thin, almost seedless ones)
1 medium red onion, cut into thin rings and soaked for 10 minutes in a small bowl of ice water to make it less sharp
1 small green pepper, cut into thin rings
3/4 cup kalamata olive
3/4 cup crumbled feta cheese

Steps:

  • Whisk dressing ingredients together until blended.
  • Season to taste.
  • Drain onion from ice water and pat dry with paper towels.
  • Combine all salad ingredients, except cheese, in large bowl.
  • Toss with dressing.
  • Sprinkle cheese over and serve.

1 lb tomatoes, ripe and well flavoured
1/2 cucumber
1 red onion
7 ounces feta cheese
4 1/2 tablespoons extra virgin olive oil, plus a little extra to serve
salt, to taste
1 tablespoon red wine vinegar
1 teaspoon ouzo
fresh ground black pepper
2 tablespoons dill, chopped
20 black olives
1 teaspoon dried oregano

Steps:

  • Cut the tomatoes into chunks, and cut the cucumber in half lengthways and then across into thick slices. Slice the red onion very thinly. Crumble the feta cheese into small chunks.
  • Put the olive oil, ½ teaspoon salt, the red wine vinegar, ouzo and some black pepper into a large salad bowl and whisk together. Add the tomatoes, cucumber and onions and toss together gently.
  • Add the feta cheese, chopped dill and olives and mix briefly, then divide among four plates.
  • Drizzle the salad with a little more olive oil, sprinkle with the dried oregano and a little coarsely ground black pepper. Serve with some crusty fresh bread.
