You'll be surprised at how quick and easy it is to put together this dressed-up potato casserole! When a friend made it for a church supper, I had to have the recipe. It's great for parties, potlucks and family reunions. -Betty Sitzman, Wray, Colorado

Number Of Ingredients 4

2 cans (10-3/4 ounces each) condensed cream of celery soup, undiluted
2 cartons (8 ounces each) spreadable chive and onion cream cheese
1 package (2 pounds) frozen cubed hash brown potatoes
1 cup shredded cheddar cheese

Steps:

  • In a large microwave-safe bowl, combine the soup and cream cheese. Cover and cook on high for 3-4 minutes or until cream cheese is melted, stirring occasionally. Add the potatoes and stir until coated., Spoon into a greased 13x9-in. baking dish. Bake, uncovered, at 350° for 35-40 minutes or until the potatoes are tender. Sprinkle with cheddar cheese. Bake 3-5 minutes longer or until cheese is melted. Freeze option: Sprinkle cheddar cheese over unbaked casserole. Cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

8 medium potatoes, peeled and chopped in chunks and cooked till fork tender
2 (10 1/2 ounce) cans cream of mushroom soup
4 tablespoons butter
2 cups sour cream
1/4 cup green onion, sliced thinly
2 cups cheddar cheese, shredded
3 cups ham, cubed

Steps:

  • In sauce pan heat soup and butter until melted.
  • Add all the rest of ingredients except 1/2 to 1 cup of the cheese (personal taste), mix until well combined.
  • Pour into a 9x13 pan and top with remaining cheese.
  • Bake covered for 45 minutes at 350 degrees.
  • Remove from oven and let sit uncovered for 15-20 minutes (to allow sauce to thicken).
  • Serve and enjoy!

5 pounds Yukon Gold potatoes, cubed
2 (3 ounce) packages cream cheese
8 ounces sour cream
½ cup milk
2 teaspoons onion salt
ground black pepper to taste

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Place potatoes in a large pot of lightly salted water. Bring to a boil, and cook until tender, about 15 minutes. Drain, and mash.
  • In a large bowl, mix mashed potatoes, cream cheese, sour cream, milk, onion salt, and pepper. Transfer to a large casserole dish.
  • Cover, and bake for 50 minutes in the preheated oven.

1 package (32 oz.) frozen cubed hash brown potatoes, thawed
1 lb. Velveeta, cubed
2 cups sour cream
1 can (10 3/4 oz.) condensed cream of chicken soup, undiluted
3/4 cup butter, melted, divided
3 tablespoons chopped onion
1/4 teaspoon paprika
2 cups cornflakes, lightly crushed
Fresh savory, optional

Steps:

  • In a large bowl, combine the hash browns, cheese, sour cream, soup, 1/2 cup butter and onion. Spread into a greased 13x9-in. baking dish. Sprinkle with paprika. Combine cornflakes and remaining butter; sprinkle on top. Bake, covered, at 350° until heated through, 40-50 minutes. Uncover, bake until top is golden brown, 10 minutes longer. 10 large garlic cloves, peeled
1/3 cup marsala wine
1 1/4 cups heavy cream
3 large russet potatoes, 1 1/2 pounds, peeled and thinly sliced
2 large pears, peeled, cored, thinly sliced
salt
pepper
8 ounces gorgonzola, crumbled
1 cup pecans, lightly toasted, chopped
1 tablespoon fresh rosemary, chopped

Steps:

  • Preheat oven to 400°F.
  • In a small pan filled with water, parboil the garlic cloves, until tender, about 8 minutes. Place cloves and Marsala wine in blender and puree until smooth. Combine with cream and set aside.
  • Lightly grease an oval au gratin dish or rectangular oven-proof dish and arrange 1/3 of each of the potatoes and the pears. Dot potatoes with 1/3 of the cheese and sprinkle with a little salt and pepper. Top with 1/3 cup of pecans and 1 teaspoons of the rosemary. Repeat this layering 2 more times.
  • Pour the garlic cream mixture over the top of the potato layers and bake, covered with foil, for 25 minutes.
  • Remove foil and bake another 20-35 minutes longer or until almost all of the cream mixture is absorbed and the potatoes are tender.
