SPICY CAJUN CASSEROLE RECIPE
This spicy Cajun casserole is a tip of the hat to French Quarter culture. Savory shrimp and Andouille sausage make a dish that's hearty and delicious!

- Place a rack in the center of the oven then preheat to 350 degrees. Spray a 2 qt casserole dish with non-stick spray and set aside. Please note that this recipe requires 3 cups of cooked rice. If you do not have any left over rice in the refrigerator, now is the time to start cooking it-1 cup uncooked rice will yield approximately 3 cups cooked rice.
- Melt butter in a large skillet set over medium heat. When the butter has melted, add the sliced sausage and cook for about 5 minutes until it has browned slightly.
- Add the onion, garlic, bell pepper and celery to the skillet and cook for an additional 5 minutes, stirring occasionally.
- Next, sprinkle the creole seasoning and flour over the sausage and vegetables then stir to combine. Once the flour has completely coated the mixture and no dry flour remains, pour in the chicken broth and stir until a smooth sauce forms. Bring the mixture to a boil, then immediately reduce the heat to low and simmer for 2 minutes.
- Remove the skillet from the heat and add the cheddar cheese. Stir until the cheese is melted and completely incorporated in the sauce. Add the cooked white rice and stir to combine.
- Transfer the mixture to the prepared 2 qt casserole dish, cover with aluminum foil then bake for 25-30 minutes. While the casserole bakes, season the shrimp with the additional 1 tsp of creole seasoning and set aside.
- After the casserole has baked for 25-30 minutes, remove the foil and stir in the seasoned shrimp. Return the casserole to the oven for an additional 5−10 minutes, just until the shrimp is cooked through and casserole is hot in the center. Remove the casserole from the oven, sprinkle with chopped parsley and sliced green onion then serve it with lemon wedges for a little more zip! Enjoy!

Steps:
- Preheat oven to 375°F (190°C).
- In a small bowl, combine the Cajun spice mix ingredients and stir to combine.
- In a baking dish, combine potatoes, corn, 2 garlic cloves, 1 tablespoon of oil, and ½ tablespoon of the cajun spice mix.
- Mix until the vegetables are coated evenly with the spice mix. Place butter on top.
- Bake for 25 minutes.
- In a medium bowl, combine the sausage, shrimp, garlic, oil, and ½ tablespoon of the spice mix. Save the remaining spice mix for future recipes.
- Mix well.
- Add the sausage and shrimp into the same baking dish as the corn and potatoes.
- Bake for another 15 minutes.
- Top with fresh parsley. Serve with lemon wedges and beer!

Here's a Cajun favorite that is perfect for the Lenten season and so easy for those busy days. The succulent shrimp, crawfish, and crab meat, blends perfectly with the delectable, spicy cheese sauce, and the rice adds a nice texture. It is a very versatile recipe and can also be made with a pound of just shrimp, crawfish, or crab meat, or whatever you have available. It can be made in advance as it freezes well, and then thawed and popped into the oven when ready to serve.

- Melt butter on medium heat, in large, heavy skillet. Saute the first 5 ingredients in the butter , until soft. (about 10 minutes) Add seafood, seasoning, parsley, and green onions, and continue cooking for 10 minutes. Add soups, half n' half, and Tabasco and mix well. Fold in the rice, mixing gently, but well. Transfer to a greased 13x9 inch baking dish and top with breadcrumbs and cheese Bake at 350 degrees, for 35 to 40 minutes or until bubbly and browned. - Peel shrimp and devein.
- Combine rice, shrimp, cheese and soup in a bowl.
- Melt butter in a large skillet over medium-high heat and add green onions.

CAJUN SHRIMP CASSEROLE
This is a recipe I was given when I first got married 25 years ago, and it has remained a favorite. Maybe because it's simple to make (don't let the long list of ingredients fool you). It also freezes well if made with fresh (not frozen or previously frozen) shrimp. It's great served with rice, salad, and some nice hot biscuits.

- Preheat oven to 425 degrees.
- In a large skillet, melt butter over medium heat.
- Add celery, green pepper, and scallions. Saute about 7 minutes, stirring frequently.
- Add flour, salt, mace, curry powder, hot pepper sauce, and Worcestershire sauce, stirring until smooth and well blended.
- Stir in warmed evaporated milk. Cook, stirring, until sauce is smooth and thickened.
- Add shrimp. Cook about 3 minutes. Taste and adjust seasoning to taste.
- Pour into a buttered casserole dish. Sprinkle top with Parmesan cheese and paprika.
- Bake at 425 degrees for 20 minutes.

- Prepare rice according to package instructions. Set aside. In large sauté pan over medium/high heat; cook celery, bell pepper and onions in oil until tender. Add garlic and cook for 1 minute.
