3 cups fresh grapefruit juice (from about 4 large grapefruits), strained and chilled
1 1/2 cups sugar
1/2 cup Campari, chilled

Steps:

  • In a blender, combine the grapefruit juice and sugar, and blend until the sugar is dissolved. Add the Campari, pour the mixture into the container of an ice cream machine, and churn according to the manufacturer's instructions. Transfer to an airtight container and freeze for at least 2 hours before serving.

2 cups club soda
1 cup Campari
1/2 cup Simple Syrup for Campari Cocktails
Ice cubes
Garnish: 3-inch-long grapefruit-peel twists

Steps:

  • Combine grapefruit juice, club soda, Campari, and simple syrup in a large pitcher. Pour into ice-filled glasses, and garnish each with a twist.

3 large pink or ruby red grapefruit (4 pounds total), chilled
2 tablespoons sugar, or to taste
2 tablespoons Campari, or to taste

Steps:

  • Cut peel, including all white pith, from 2 grapefruit with a sharp knife. Cut segments free from membranes, letting them fall into a medium-mesh sieve set over a bowl. Squeeze juice from membranes into sieve, then discard membranes. Transfer grapefruit segments to a heatproof bowl and chill, uncovered, while making syrup.
  • Squeeze juice from remaining grapefruit through sieve into bowl. Stir together 1 cup juice (reserve remainder for another use), 2 tablespoons sugar, and a pinch of salt in a nonreactive 10-inch heavy skillet and boil over moderately high heat, swirling skillet occasionally, until reduced to about 1/2 cup, about 4 minutes. Stir in Campari and sugar to taste, then immediately pour hot syrup over chilled grapefruit. Chill, uncovered, 15 minutes.

1 1/3 cups sugar
1 cup water
3 cups fresh pink grapefruit juice (from about 4 pink grapefruits) with some pulp
1/4 cup Campari
Garnish: 3-inch-long pieces fresh grapefruit zest, removed with a vegetable peeler

Steps:

  • In a saucepan bring sugar and water to a boil, stirring until sugar is dissolved. Let syrup cool. Stir in grapefruit juice and Campari and freeze in a shallow metal pan, stirring and crushing lumps with a fork every 30 minutes, 3 to 4 hours, or until mixture is firm but not frozen. Scrape granita with a fork to lighten texture. Serve granita in chilled goblets and garnish with zest.

Granita:
2 cups fresh ruby red or pink grapefruit juice, divided
6 tablespoons sugar
2/3 cup Campari
1 tablespoon (packed) finely grated ruby red or pink grapefruit peel
4 ruby red or pink grapefruits
Vanilla whipped cream:
1 cup chilled heavy whipping cream
1/4 cup chilled crème fraîche or sour cream
4 teaspoons powdered sugar
1 1 1/2-inch piece vanilla bean, split lengthwise

Steps:

  • For granita:
  • Combine 1 cup grapefruit juice and sugar in medium saucepan. Stir over medium heat until sugar dissolves. Increase heat and bring to boil. Remove from heat; stir in remaining 1 cup grapefruit juice, Campari, and grated peel. Pour mixture into 11x7x2-inch glass baking dish or metal baking pan. Cover and freeze until firm, at least 8 hours or overnight. DO AHEAD: Can be made 3 days ahead. Keep frozen.
  • Using sharp knife, cut off all peel and white pith from 4 grapefruits. Working over bowl to catch juices and using small sharp knife, cut between membranes to release segments into bowl. Squeeze any remaining juice from membranes into bowl. DO AHEAD: Can be made 4 hours ahead. Cover; chill.
  • For vanilla whipped cream:
  • Combine whipping cream, crème fraîche, and powdered sugar in medium bowl. Scrape in seeds from vanilla bean; reserve bean. Using electric mixer, beat mixture until soft peaks form. Add reserved vanilla bean to cream mixture; cover and chill at least 2 hours. DO AHEAD: Can be made 4 hours ahead. Keep chilled.Remove vanilla bean and rewhisk cream mixture until thick before using.
  • Using fork, scrape surface of granita to form icy flakes. Divide grapefruit segments and juices from bowl among 6 dessert glasses. Divide granita among glasses. Top each with large dollop of vanilla whipped cream and serve immediately.

Grapefruit and Campari (and a splash of soda) is one of my favourite summer beverages. This granita is a sophisticated rendering of that. Freezing time has been noted as cooking time.

1 1/3 cups sugar
1 cup water
3 cups fresh pink grapefruit juice, with some pulp
1/4-1/3 cup campari (depending on how strong you like it)
long strips grapefruit zest, removed with vegetable peeler,and given a curl

Steps:

  • Bring sugar and water to a boil, stirring until sugar is dissolved.
  • Let syrup cool.
  • Stir in grapefruit juice and Campari and freeze in a shallow metal pan, stirring and crushing lumps with a fork every 30-40 minutes, 3 to 4 hours, or until mixture is firm but not frozen.
  • Scrape granita with a fork to lighten texture.
  • Serve in chilled, stemmed glasses and garnish with a curl of zest.

2 cups freshly squeezed pink grapefruit juice
3 tablespoons Campari
3 tablespoons vodka
Special Equipment
9 (1/3-cup) ice pop molds and 9 wooden sticks

Steps:

  • Simmer sugar and water in a small saucepan, stirring, until sugar is dissolved, then cool syrup. Stir in remaining ingredients and pour through a fine sieve into a large glass measuring cup. Pour into molds. Freeze at least 24 hours. Add sticks when mixture is slushy, about 1 hour.
