I've been making this recipe for the family for many years. It's a great winter time warm up and makes a meal in itself.

3 pounds ground beef
3 (12 fluid ounce) cans or bottles beer
2 (15 ounce) cans tomato sauce
2 (15 ounce) cans diced tomatoes
1 (15 ounce) can pinto beans, undrained
1 (15 ounce) can red beans, undrained
1 (15 ounce) can kidney beans, undrained
2 large white onions, chopped
1 large green bell pepper, chopped
1 large red bell pepper, chopped
½ cup light brown sugar
4 cloves garlic, chopped
2 (1.25 ounce) packages chili seasoning mix
1 tablespoon cornstarch
½ teaspoon ground mustard
1 cup shredded Cheddar cheese, or to taste
½ cup chopped onion, or to taste
1 dash hot pepper sauce, or to taste
salt and ground black pepper to taste

Steps:

  • Heat a large stock pot over medium-high heat. Cook and stir beef until browned and crumbly, 10 to 15 minutes; drain and discard grease. Mix beer, tomato sauce, diced tomatoes, pinto beans, red beans, kidney beans, 2 chopped onions, green bell pepper, red bell pepper, brown sugar, garlic, chili seasoning mix, cornstarch, and mustard into ground beef; bring to a boil. Reduce heat, cover pot, and simmer, stirring frequently, until flavors have blended, about 1 hour.
  • Top each serving with about 1 tablespoon Cheddar cheese, 1 1/2 teaspoons onion, and hot sauce; season with salt and pepper.

My Grandfather owned a drive-in restaurant back in the 1950's. This is his exact recipe for Coney Dogs from back in the day. I make this on special occasions and it is always hit with friends and family. Enjoy.

2 pounds ground beef
½ cup chopped onion
1 ½ cups ketchup
¼ cup white sugar
¼ cup white vinegar
¼ cup prepared yellow mustard
½ teaspoon celery seed
¾ teaspoon Worcestershire sauce
½ teaspoon ground black pepper
¾ teaspoon salt

Steps:

  • Place the ground beef and onion in a large skillet over medium-high heat. Cook, stirring to crumble, until beef is browned. Drain. Transfer the beef and onion to a slow cooker and stir in the ketchup, sugar, vinegar and mustard. Season with celery seed, Worcestershire sauce, pepper and salt. Cover and simmer on Low setting for a few hours before serving.

A soupy version of a green chile. From Great American Brand Name Recipes Cookbook, 1989 version. I'm writing it as posted, but I did not add the pinto beans, and I used cut up pork chops. I also did not use as much meat as recipe calls for. The recipe also reads that "This chili is equally delicious made with beef."

2 tablespoons vegetable oil
2 lbs boneless pork shoulder, cut into 1 inch cubes
1 onion, medium, chopped
1 green bell pepper, small, chopped
2 garlic cloves, minced
3 tablespoons chili powder
1 teaspoon paprika
1/2 teaspoon celery seed
1/2 teaspoon salt
1/2 cup green olives, sliced (pimiento stuffed)
3 tablespoons olive juice (from jar)
2 cans pinto beans, undrained (2 16 oz. cans each)
1 cup water
1 teaspoon hot pepper sauce (Tabasco)

Steps:

  • In large heavy saucepot or Dutch oven heat oil. Add pork; cook over medium high heat until browned. Add onion, green pepper, garlic, chili powder, paprika, celery seed and salt. Cook 15 minutes or until vegetables are tender. Stir in olives and olive juice. Cover. Simmer 1 hour or until meat is tender; stir occasionally. Stir in beans, water and Tabasco sauce. Cover. Simmer 30 minutes; add more water if necessary to prevent sticking.

Not my grandpa's chili, but a family favorite of a co-worker of mine. Since I made this chili, I never went back to my own family recipe!

2 lbs lean ground beef
2 medium onions, chopped
1 (6 ounce) can tomato paste
2 (15 ounce) cans chili beans
1/4 cup brown sugar
1 tablespoon chili powder
1 teaspoon dried celery leaves
1 tablespoon Worcestershire sauce
2 bay leaves
1 dash red pepper powder
1 dash paprika
3/4 cup catsup
salt and pepper

Steps:

  • Brown meat and onions in a skillet; drain off fat. Add all other ingredients, bring to a boil, and then simmer for 30 to 45 minutes. Let stand in refrigerator for 24 hours. Reheat and serve.

The "new" Recipezaar has cut off about half of my directions after step 3 during the switch. sad. sorry to any new readers. Maybe I'll have time to come back and make corrections someday, though I rarely frequent this site now because of how much more difficult it is to navigate. this is a passed down, tried and true chili recipe. i always get a ton of compliments on it. serving ideas: cheese, fritos, cornbread, saltine crackers (we love them all -- depending on our mood!)... note -- this is one of those recipes that comes from my brain and test tastes. :) so a couple of notes: -- i have found that Lawry's chili seasoning gives the best overall taste. and plus, that's just the way grandma made it! -- i use any where from one to two pounds of meat and adjust the ingredients accordingly. -- i often use nearly 1 and 1/2 packets of chili seasoning, especially if the meat portion is on the heavy side. -- i often use some of the stewed tomato juice and chili bean juice to help add flavor.

This is my variation on the delicious chili my grandfather used to make. It was the only thing he could cook (besides hot dogs), but he certainly did it right. Make sure you have a large pot to cook it in, 'cause it makes enough to have some now and freeze some for later.

1 lb lean ground beef
1 -1 1/2 lb extra lean ground turkey
1 (14 1/2 ounce) can whole canned tomatoes
1 (14 1/2 ounce) can stewed tomatoes
2 (15 1/2 ounce) cans dark red kidney beans
1 (15 1/2 ounce) can red kidney beans
1 (15 1/2 ounce) can black beans
1 large yellow sweet onion, rough chopped
3 tablespoons extra virgin olive oil
1 large green pepper, diced
3 -4 stalks celery, chopped
4 fresh garlic cloves, minced
4 tablespoons chili powder
1 tablespoon cayenne pepper
2 tablespoons crushed red pepper flakes
1 (46 ounce) can tomato juice
1/2 cup ketchup
salt and pepper

Steps:

  • In a large stock pot or dutch oven, heat oil until hot. Add onion and garlic, cooking until the onions are opaque.
  • Reduce heat to medium. Add the ground beef, ground turkey and salt and pepper to taste. Using a wooden spoon, work the ground beef and turkey until it is in small pieces. Add the celery and green pepper. Allow to cook for about four minutes, stirring occassionally.
  • Add the chili powder, cayenne pepper and crushed red pepper. Add both cans of tomatoes and all of the beans. Add the ketchup and the tomatoe juice.
  • Reduce heat to low or medium low and allow to simmer for 30 minutes to an hour.

2 pound(s) ground beef (i use 93/7 lean)
1 tablespoon(s) minced garlic
5 tablespoon(s) chili powder
1 1/2 teaspoon(s) salt
1 teaspoon(s) cumin
1/2 cup(s) chopped onion
8 ounce(s) tomato sauce (hunt's canned will do)
2 tablespoon(s) mesa flour
8 ounce(s) water, as needed

Steps:

  • Cook beef in pot with garlic and onion until all the meat is brown and the onion is tender.
  • Add Chili powder, salt and cumin to season meat. Stir thoroughly
  • In a small bowl, combine mesa flour and 1/4 cup warm water. Stir until it forms a paste. Add more water if needed. Should be about pancake batter consistency.
  • Add 8 oz can tomato sauce and mesa flour mixture to the meat. Stir thoroughly.
  • Add 8 oz water (more or less as desired. I use less if I'm making it for Frito Chili Pie. More if I'm serving it with cornbread.) and stir. Let the chili simmer uncovered for 4 - 6 minutes, stirring often.

This is a hand-me-down from my Grandma. I like it because it doesn't have kidney beans and it has a bit of a sweet taste. It's a brown chili not a red one - no tomatoes.

½ green bell pepper, chopped

1 (4.5 ounce) can mushrooms, drained

Steps:

  • In a large saucepan over medium high heat, saute the ground beef for 5 minutes, or until browned. Stir in the onion and green bell pepper and saute for 5 more minutes. Season with salt and pepper to taste.
  • Next, add the beans, mushrooms, brown sugar and chili powder to taste. Mix together well, reduce heat to low and let simmer for 20 minutes to 1 hour or more, depending on how much time you have and how thick you like your chili.

1 1/2 cups bulgur
3 tablespoons olive oil
2 large yellow onions, diced
2 medium carrots (chopped or grated)
3 cups cauliflower
1 teaspoon turmeric
2 teaspoons ground coriander
1/8 teaspoon ground cloves or 1/8 teaspoon ground allspice
1/4 teaspoon cayenne pepper (to taste)
2 tablespoons ground cumin
1 (15 ounce) can chickpeas, rinsed & drained
2 (28 ounce) cans diced tomatoes
1 tablespoon tamari soy sauce
1 cup cashews

Steps:

  • Rinse bulghur in a sieve.
  • Put bulghur in medium bowl and cover with boiling water by 2 inches?.
  • Soak uncovered for 30 minutes, or until tender.
  • Drain thoroughly by spooning batches into a sieve and pressing out all of the liquid with the back of a spoon.
  • As the batches are completed, put them in another medium bowl.
  • Heat the oil in a large skillet over medium heat.
  • Add the onions and saute for 3 minutes, tossing often.
  • Add carrots and cauliflower and saute for additional 2 minutes.
  • Sprinkle on the turmeric, coriander, cumin, cloves and cayenne and cook 1 minute, stirring frequently.
  • Add the drained chickpeas.
  • Mix and cook 2 minutes.
  • Stir in the drained bulghur, tomatoes and tamari and mix thoroughly.
  • Cook, tossing occasionally, 15 minutes, or until piping hot.
  • Toss cashews on top and serve with plain yogurt, for contrasting flavor & texture.
