Steps:

  • Cut a circle in the middle of a piece of bread.
  • If you don't have a round cookie cutter, the top of a glass will work.
  • Heat a skillet or griddle sprayed with Pam or Mazola.
  • Place the bread in the pan.
  • Put about 1/2 t butter in the hole in the bread.
  • Heat the butter until very hot.
  • Crack an egg in the hole.
  • Use a spatula to move the white around so it gets done.
  • When the egg is fairly well set, turn the bread and egg over to cook the other side, being careful not to break the yolk.
  • In the meantime, toast the holes from the bread for dipping in the yolk.
  • Oh, and salt and pepper as desired.
  • I guess you could toast the bread before you put it in the pan, but I've never tried it that way.

2 tablespoons butter, melted
24 wonton squares
6 slices shaved prosciutto, chopped
12 large eggs
6 tablespoons grated Parmesan
1 roasted red pepper, cut into thin strips
6 slices Brie cheese
12 fresh tarragon leaves
Salt and pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Brush the muffin cups with butter and line each with 1 wonton square. Brush the squares with more butter and place the second wonton on top of the first at an angle so that all of the points show. Divide the prosciutto among 6 of the muffin cups. Break 1 egg into each muffin cup. Top the 6 with the prosciutto with the Parmesan and, using 2 slices of red pepper each, form an "X" on top of each egg.
  • Top the other 6 eggs with the brie and form an "X" on the top of those with the tarragon leaves. Sprinkle all with a little salt and pepper and place in the bottom half of the oven for 15 to 20 minutes, or until the egg white is firm but yolk still liquid. Remove from the oven and let sit 5 minutes before carefully removing the baskets from the tin. Arrange on a decorative platter and serve immediately.

Besides being one of the most amazing movies I've seen in a while, V for Vendetta features the simplest, most CRAVEABLE breakfast dish I think I've ever seen. In the movie, "V", in his jaunty kitchen apron, so lovingly prepares this charming breakfast dish for Natalie Portman's character. By the movie's end, I was craving so badly, that I made it for our breakfast for the next two days!! Please feel free to use ANY bread you have on hand. I also like to make these on my large nonstick griddle, but you can prepare them 1 or 2 at a time using a non-stick frying pan.

6 slices whole wheat bread
6 eggs
butter

Steps:

  • Butter bread slices on both sides.
  • Cut an approximately 2 inch circle in the middle of each slice, using a cookie cutter or small glass.
  • Place buttered bread slices on a non-stick griddle pan, preheated over medium heat.
  • Add a bit of butter to the center of the bread, and gently crack your eggs into the hole.
  • Sprinkle eggs with salt and freshly ground pepper to taste.
  • When the eggs begin to set around the edge of the hole, flip.
  • Finish cooking eggs as you prefer (over easy or over medium).
  • The buttered bread "centers" can be grilled or toasted as well to sop up the extra yolk!

I learned this recipe while I was taking a home economics class in high school (a long time ago). I have prepared these 'eggs in a basket' for my children for Easter fun when they were small. They are all grown up now and they still insist on the 'eggs in a basket' each and every Easter. My hubby really likes them too.

1 slice white bread
1 egg
1 tablespoon melted butter or 1 tablespoon oleo
1 pinch salt
1 pinch pepper

Steps:

  • Remove the crust from each slice of bread.
  • Lightly brush each slice of bread on both sides with the melted butter.
  • In a large cup muffin pan, place and mould each slice of bread in individual cups.
  • Break a fresh egg in each muffin cup.
  • Add a pinch of salt and pepper to each egg cup.
  • Add a dab of cold butter (or oleo) on top of each egg cup.
  • Place in a pre-heated 350 degree oven until the eggs are done to your liking.
  • Once the eggs are done, remove from oven let cool for a couple of minutes.
  • Remove the egg baskets from the muffin pan and serve hot with your other favorite Easter foods.

Calling all pickle lovers! Grandma's Pickled Eggs are a cinch to make and they don't require canning. Simply heat the liquid mixture, pour over hard boiled eggs, cover and refrigerate. Be sure to read my helpful hints for perfect hard boiled eggs.

12 large eggs hard boiled and peeled
2 c white vinegar
1 c rice vinegar
1 c water
2 Tbsp pickling spices
1 tsp dill seed
1 tsp coarse salt
10 black peppercorns
1 sweet onion thinly sliced
3 sprigs fresh dill
2 garlic cloves

Steps:

  • 1. Place the peeled eggs in mason jars or tall cover-able container.
  • 2. Add both vinegars, water, pickling spices, dill seed, salt, black peppercorns and onions in a sauce pan and bring to a low boil. Simmer for 5 minutes. Pour the hot liquid over the eggs.
  • 3. Put the garlic and dill sprigs in the jar with the eggs. Close the jars, cool to room temperature, refrigerate for 3-4 days.
