RAISIN APPLESAUCE CAKE
This cake is one of my grandfather's favorites. And it seems like he always knows when you're making it-he must have a keen sense of smell! The recipe was passed down through the generations beginning with my great-grandmother. Sometimes I can imagine her making it all those years ago.

- In a bowl, cream the sugar and shortening. Beat in molasses until blended; set aside. Sift together flour, baking soda, cinnamon, cloves and salt; add to creamed mixture alternately with applesauce, beating well after each addition. Stir in raisins., Pour into a greased and floured 10-in. tube pan. Bake at 350° until a toothpick comes out clean, about 45 minutes. Cake will not rise to top of pan. After 10 minutes, remove cake from pan and cool on a wire rack.

- Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9x13 inch pan. Mix together the flour, baking soda, cinnamon, cloves and nutmeg. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Beat in the flour mixture alternately with the applesauce. Fold in the walnuts and raisins. Pour batter into prepared pan.
- Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

- Cream butter and sugar till light.
- Add eggs, beating well after each addition.
- Sift dry ingredients together and add to creamed mixture alternately with applesauce.
- Stir in raisins and pecans.
- Turn batter into greased and lightly floured pan (13 x 9 x 2-inch).
- Bake at 350 F about 45 minutes to till done.
- Cool in pan.
- (an additional 1/3 cup raisins can be substituted for the 1/2 cup of pecans, if desired).

- Place raisins and hot water in a small bowl; set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt and spices; add to creamed mixture alternately with applesauce and water. Drain raisins; fold into batter with the walnuts. , Transfer to a greased 13x9-in. baking pan. Bake at 300° for 40 minutes or until a toothpick inserted in the center comes out clean. Grandma used to bring this cake to picnics and potlucks. It travels well, keeps well, and holds together if you're eating with your fingers. My mother makes it for my father's birthday every year.

- Dust raisins in cocoa and set aside.
- Mix in dry ingredients and applesauce.

- Preheat oven to 400°F.
- Place fish in single layer in baking dish.
- In nonstick skillet, melt margarine, then sauté apple, raisins, nuts, Splenda and cinnamon for 3 minutes or until apples are tender.

GRANDMA LEACH'S FRUITCAKE
My grandmother and mother made these cakes for years. They are moist but don't contain eggs. Applesauce is the secret ingredient. I sold these at bake sales for years and we had many customers who returned every year just to get one.

- Preheat the oven to 300 degrees F (150 degrees C). Grease a 9 inch tube pan and one 9x5 inch loaf pan.
- Sift the flour, sugar, cocoa, cornstarch, baking soda, salt, cinnamon and cloves into a large bowl. Stir in the applesauce and oil, then mix in the raisins, dates, mixed fruit and 2 cups of walnuts. Pour into the prepared pans. Pans should be about 3/4 full if using mini pans, or an assortment.

LADIES' MILE APPLESAUCE RAISIN CAKE DIAMOND
Steps:
- Preheat oven to 350°F. Grease and flour a 9- by 3-inch tube pan, knocking out excess flour.
- In a small saucepan heat rum and raisins over moderate heat just until hot. Remove pan from heat and cool mixture. Strain mixture through a sieve and reserve raisins.
- Into a bowl sift together flour, cinnamon, cloves, baking soda, nutmeg and salt. In a large bowl with an electric mixer beat butter with granulated and brown sugars until light and fluffy and add eggs, 1 at a time, beating well after each addition. Beat in applesauce and add flour mixture, beating just until batter is combined. Stir in reserved raisins and nuts and spread batter in pan.
- Bake cake 40 to 45 minutes, or until a tester comes out clean, and cool in pan on a rack 5 minutes. Turn cake out onto rack and cool completely. Dust cake with confectioners' sugar.
GRANDMA'S APPLESAUCE PIE
This is one of the recipes I remember most from my childhood. My grandmother always had this on hand for her grandkids who came to visit. It was invented especially for us kids because it had no "chunks" of apple in it. There was no surprise that the adults loved this pie, just as much as we did.

Steps:
- Prepare pastry for 2 crust pie shell, using your favorite recipe for pie shells.
- Roll out 2 balls of dough until they measure large enough to fit your pie pan.
- Line bottom of 8" pie pan with one of the rolled out pastry pieces.
- Set the other rolled-out dough aside for a bit.
- Bake the shell for 10 to 15 minutes at 375 degrees; set aside.
- In a mixing bowl, combine beaten eggs, applesauce, sugar and seasonings.
- Pour mixture into 8" prepared pie shell.
- Add top pastry to pie and seal edges.
- With tines of a fork, prick holes on top of pie shell to vent.
- Bake at 450 degrees for 10 minutes, then turn oven down to 350 degrees and continue baking 30 more minutes.
- Note: If you like a more custard-y pie, try adding 1/2 to 1 cup of milk to the above ingredients before pouring into the pieshell (use a 9" shell in this case).
GRANDMA FLORENCE'S APPLESAUCE CAKE
This was made by my grandmother every Holiday. She would make three or four of these at Thanksgiving and Christmas. Her mom, Grandma Florence, made these for her when she was growing up. It has been passed down now to me, the fourth generation. Enjoy.
