A super moist banana bread which uses six bananas!

3 cups sugar
1 cup margarine, softened
1 teaspoon vanilla extract
4 eggs
3 ½ cups all-purpose flour
2 teaspoons baking soda
¼ teaspoon salt
1 cup buttermilk
6 very ripe bananas, mashed

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking pan.
  • In a large bowl, cream together the sugar and margarine until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the vanilla.
  • In a large bowl, sift together flour, baking soda and salt. Blend this mixture into the egg mixture, alternately with the buttermilk; stir just to combine. Fold in the mashed bananas; mixing just enough to evenly combine. Pour batter into prepared pan.
  • Bake in preheated oven until a toothpick inserted into center of the loaf comes our clean, about 60 minutes.

½ cup butter
1 ½ cups white sugar
4 eggs
3 bananas, sliced
1 cup sour cream
1 teaspoon baking soda
2 cups all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 10 inch Bundt pan with non-stick cooking spray.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Beat in the sliced bananas, sour cream and baking soda. Beat in the flour. Pour batter into prepared pan.
  • Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

1-1/2 cups sugar
1/2 cup shortening
2 eggs
1 teaspoon vanilla
1/2 cup buttermilk
3 mashed bananas
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
FROSTING:
1/2 cup butter, softened
2-1/2 cups powdered sugar
3 tablespoons milk
1 teaspoon vanilla
Dash of salt

Steps:

  • Cream sugar and shortening together; add eggs and vanilla. Mix in buttermilk and mashed bananas., In a separate bowl, combine flour, soda, baking powder and salt; add to banana mixture and mix until ingredients are combined. Spoon into a greased 13x9-in. baking pan or two 9-in. round cake pans., Bake at 350° for 25-30 minutes or until toothpick inserted into center comes out clean. Cool cake for 30 minutes before frosting. , For frosting, mix butter, powdered sugar and milk until smooth; add vanilla and salt. If frosting is too thick, add more milk 1 tsp. at a time until reaching desired consistency. Spread on warm banana cake.

2 extra-large eggs, at room temperature

Grated zest of 1 orange
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 cup coarsely chopped walnuts (optional)
Cream Cheese Frosting, recipe follows
Walnut halves, for decorating (optional)
6 ounces cream cheese, at room temperature
6 tablespoons (3/4 stick) unsalted butter, at room temperature
1 teaspoon pure vanilla extract
2 1/2 cups sifted confectioners' sugar (1/2 pound)

Steps:

  • Preheat the oven to 350 degrees. Grease and flour a 9 by 2-inch round cake pan.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix the bananas, granulated sugar, and brown sugar on low speed until combined. With the mixer still on low, add the oil, eggs, sour cream, vanilla, and orange zest. Mix until smooth.
  • In a separate bowl, sift together the flour, baking soda, and salt. With the mixer on low, add the dry ingredients and mix just until combined. Stir in the chopped walnuts, if using. Pour the batter into the prepared pan and bake for 45 to 50 minutes, until a toothpick inserted in the center comes out clean. Cool in the pan for 15 minutes, turn out onto a cooling rack, and cool completely.
  • Spread the frosting thickly on the top of the cake and decorate with walnut halves, if using.
  • Mix the cream cheese, butter, and vanilla in the bowl of an electric mixer fitted with the paddle attachment on low speed until just combined. Don't whip! Add the sugar and mix until smooth.

2 cups sugar
2 cups raisins
2 cups water
1 cup butter (cubed)
3-1/2 cups all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp each ground nutmeg and cloves
1 cup chopped pecans
1 cup heavy whipping cream
1 cup butter (cubed)
1 cup sugar
4 large egg yolks (lightly beaten)
1/4 cup brandy
1/4 cup brandy

Steps:

  • In a large saucepan, combine the sugar, raisins, water and butter. Bring to a boil. Reduce heat to medium; cook, uncovered, until sugar is dissolved, about 5 minutes. Remove from the heat; cool.
  • In a large bowl, combine the flour, baking soda, cinnamon, nutmeg and cloves. Add raisin mixture; beat until blended. Fold in pecans.
  • Pour into a greased and floured 10-in. fluted tube pan. Bake at 350° until cake springs back when lightly touched, 45-55 minutes. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
  • For sauce, in a large saucepan, bring cream to a boil; stir in butter and sugar until smooth. Reduce heat; stir a small amount of hot liquid into egg yolks. Return all to the pan, stirring constantly. Cook until sauce is slightly thickened and coats the back of a spoon (do not boil). Remove from the heat; stir in brandy. Serve warm with cake.

This homemade banana pudding is an unbeatable dessert filled with creamy, rich custard and soft layers of bananas and vanilla wafers. It's topped with a thick and luscious meringue that gets beautifully browned in the oven.

1/2 cup granulated sugar
2 tablespoons all-purpose flour
1/4 teaspoon salt
2 cups skim milk
3 large eggs, whites and eggs separated
1 teaspoon pure vanilla extract
1 (11 oz.) box vanilla wafers
4 medium bananas, sliced
6 tablespoons granulated sugar

Steps:

  • Preheat the oven to 425.
  • Make the custard: Combine sugar, flour and salt in a medium sauce pan over medium low heat.
  • In a small bowl, whisk the egg yolks and milk together. Add to the sauce pan and cook over medium-low until thickened into a custard consistency, stirring regularly, about 12-15 minutes. Turn off heat and stir in the vanilla.
  • Line a 2-quart baking dish with half of the vanilla wafers, then top with half of the sliced bananas and pour 1/2 the custard over top. Repeat with wafers, banana and remaining custard.
  • Make the meringue: Place the egg whites in a medium bowl and add the 6 tablespoons of sugar. Use a stand mixer or hand mixer and beat on medium until the mixture reaches a white, glossy meringue consistency and has stiff peaks, about 5-6 minutes.
  • Dollop the meringue on top of the banana pudding and smooth over the top.
  • Bake at 425 for 3-5 minutes, until delicately browned. Watch closely so it doesn't burn. Serve warm or let cool, refrigerate and serve cold.

2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, softened

2 teaspoons vanilla
1 cup mashed ripe banana
1/2 cup buttermilk
1/2 cup finely chopped dates
1/4 cup chopped nuts
confectioners' sugar

Steps:

  • Preheat oven to 350 degrees.
  • Grease well a 9 by 5 by 3 inch loaf pan.
  • Sift flour, baking powder, soda, and salt.
  • In large bowl with electrix mixer at high speed, beat butter, granulated sugar, eggs, and vanilla, occasionally scraping side of bowl with scraper, until light and fluffy- about 3 minutes.
  • In small bowl, combine banana and buttermilk.
  • At low speed, beat in flour mixture (in fourths) alternately with banana mixture in 3rds- about 1 minute.
  • Stir in dates and nuts.
  • Bake 1 hour and 10 or 15 minutes.
  • Cool on rack 15 minutes in pan, then turn out on rack until cool.
  • Dust with confectioner's sugar.
