- 1. Trim the fat off the pork chops, rinse well and pat dry . Cut the pork chops in half or however you need so you can fit them in your pot.
- 2. In a large pot, mix spaghetti sauce, tomato sauce, garlic, parsley, basil and spices. If sauce is very thick add a water a few tablespoons at a time until it reaches a slightly thin consistency. Place pork chops into the sauce so they are covered. Bring to a simmer on medium-low heat then turn down to low heat. Cook 1 1/2 to 2 hours. Gently stir occasionally, making sure the pork chops stay covered.
- 3. Add the onions, peppers, mushrooms and canned tomatoes and cook another 1 1/2 to 2 hours, gently stirring. Pork will slowly cook and become very tender. This dish is done when it can be easily separated with a fork.
- 4. Using a fork and spoon (I use a large salad fork and wooden stirring spoon) separate the pork so it is in bite size and smaller pieces. Serve hot over pasta with a sprinkle of grated Parmesan on top.
- 5. If you want to do this in the crockpot, add 1 cup of water to the sauce and double the cook times. Cook on low heat.

- Combine peppers, tomatoes, onions, garlic, parsley in a bowl with your fingertips. Squeeze the juice of the lemon with the lemon half sitting upright. This will help prevent the seeds from falling into the bowl. The lemon juice will spill down over the sides of the lemon and the seeds will remain with the fruit. Squeeze the juice evenly over the salad. If the lemon is under-ripe, microwave it for 10 seconds before you cut into it. Next, sprinkle a tablespoon of vinegar over the salad -- just eyeball it. Drizzle the extra-virgin olive oil over the salad, add the salt, pepper and cumin. Toss again. Taste to adjust seasonings and serve.

There are variations of this dish throughout the Mediterranean. - Heat the oil in a large nonstick skillet or heavy casserole over medium heat and add the onion. Cook, stirring, until tender, about 5 minutes, and add the garlic and peppers. Cook, stirring often, for 5 minutes and add 1/2 teaspoon salt. Continue to cook for another 5 minutes, until the peppers are tender.
- Add the tomatoes, thyme, salt, and pepper, bring to a simmer, and simmer, stirring from time to time, until the tomatoes have cooked down somewhat, about 10 minutes. Cover, reduce the heat and simmer over low heat for another 15 to 20 minutes (or longer), stirring from time to time, until the mixture is thick and fragrant. Taste and adjust seasonings. - Prepare charcoal or gas grill for direct grilling over high heat, or preheat indoor electric grill. Oil the grill rack.
- Put bell peppers, onion rounds, and tomatoes in a bowl and coat them with oil.
- Grill peppers directly over high heat, turning to char and blister them on all sides, 5-7 minutes.
- Transfer to a paper bag, close the bag, and let cool for 10 minutes.
- Meanwhile, grill onion rounds, turning once, until grill marked and partly tender, 2-3 mins per side. Transfer to a cutting board.
- Grill tomatoes, turning often, until grill marked, 3-4 minutes. Dont overcook. Transfer to a cutting board.
- Peel peppers and cut open to remove seeds and stems. Chop peppers coarsely and mound on a platter. Coarsely chop onions; then core and chop the tomatoes and add them to the platter.
- Scatter basil leaves on top of the vegetables.
- To make vinaigrette, combine garlic and vinegar in a small bowl. Gradually whisk in olive oil. Pour dressing over vegetables and toss well.
- Season with salt and pepper and serve.

My sister and I had eaten something similar to this when eating out, but we could not find a recipe like we liked, and there may be one here on Zaar, but I am sure back when we did this we didn't know about this site. So we made this up ourselves.

- Cube Tomatoe and Dice Onion.
- Add spices, to taste, I normally add about 1 teaspoons of basil, salt and pepper.
- Pour Italian Dressing over all.
- Mix.
- Let set either in refrigerator for at least 2 hours or over night, if desire.
- You may also leave it at room temp for 2 hours.
- Cooking time is setting time.
- Note added: 6/24/06 I recently made this using fresh chives and think it was even better than with basil. I also think that about any spice of your liking would be good in this recipe.

- Bring a pot of 1 1/2 cups of lightly salted water to a boil, add pasta, and cook for about 10-12 minutes, or until pasta is al dente; drain.

- Peel the cucumbers, slit in half lengthwise and remove any large seeds and then thinly slice.
- Thinly slice the onion into half rounds.
- Dice your tomatoes (make sure that they are very ripe and full of flavor).
- Sliver the green bell pepper.
- Put the vegetables into a large serving dish/bowl. Sometimes I'll add extra cucumbers to the mixture, depending on their size.
- Add 2-3 Table. white vinegar, as desired.
- Add 2-3 Table. vegetable oil, as desired.
- Fill the bowl with water.
- Generously sprinkle with ground black pepper and especially salt. Taste to make sure that the water has a good flavor and that there is enough salt.
- Chill for a good 4 hours. Serve in small bowls or ramekins. The water that you serve with this salad is especially refreshing.
- Cooking time is the minimum chilling time.
