SURPRISINGLY NOT-TOO-BAD FOR YOU CHOCOLATE-MARSHMALLOW COOKIES

Surprisingly Not-Too-Bad for You Chocolate-Marshmallow Cookies image

These can be as healthy as you want them, but they are to die for! If you can, I urge you to invest in a stone baking sheet, they are fabulous for making cookies. Also, take the cookies out before you think they're done; they will crisp up after they're taken out.

DOUBLE CHOCOLATE MARSHMALLOW COOKIES

Double Chocolate Marshmallow Cookies image

Chocolaty cookies with mini marshmallows. Yummy. These cookies actually seem to "age" well, and taste even better after a couple days... if they stick around long enough! Note: Do not refrigerate the dough or it will become too hard to handle. You may have to let it sit out longer than half an hour depending on the room temperature, otherwise the dough will not cooperate and will be too soft (because of the melted chocolate).

While the chocolate was still good and they taste great, the boxes had obviously been handled pretty roughly as a majority of the cookies had been squashed against one another and the chocolate on the cookie's marshmallow tops was broken and peeling.
